Pork Chops With Mustard Sauce & Capers image

PORK CHOPS WITH MUSTARD AND CAPER PAN SAUCE

PORK CHOPS WITH MUSTARD AND CAPER PAN SAUCE image

Categories     Sauce     Pork     Sauté

Yield 4 servings

Number Of Ingredients 8

4 center-cut pork loin chops, each about 7 oz. (220 g) and 3/4 inch (2 cm) thick
Kosher salt and freshly ground pepper, to taste
1 1/2 Tbs. olive oil
1/3 cup (2 1/2 oz./75 g) capers
1 1/4 cups (10 fl. oz./310 ml) dry white wine
1/3 cup (3 fl. oz./80 ml) heavy cream
1/4 tsp. white wine vinegar
2 Tbs. whole-grain mustard

Steps:

  • Remove the pork chops from the refrigerator and let stand for 30 minutes. Pat the chops dry with paper towels and season both sides generously with salt and pepper. Preheat the oven to 200°F (95°C) and place a platter in the oven to warm. Warm a large sauté pan or frying pan over high heat and add half of the oil. When the oil appears to shimmer, reduce the heat to medium-high, add 2 chops, and sear without moving them for 2 1⁄2 minutes. Turn and cook until the chops are golden and firm to the touch, but still have a little give, about 2 1⁄2 minutes more. If you like, insert an instant-read thermometer horizontally into a chop, away from the bone; it should register 140°F (60°C) for medium-rare. Transfer the chops to the warm platter and keep warm in the oven. Repeat with the remaining oil and the remaining chops. Pour any oil from the pan. Reduce the heat to medium and add the capers to the pan. Cook for 1 minute. Add the wine, bring to a simmer, and cook until reduced by about half, about 2 minutes. Stir in the cream, vinegar, and 1⁄4 tsp. salt and season with pepper. Simmer the sauce until lightly thickened, about 30 seconds. Remove from the heat and whisk in the mustard. Taste and adjust the seasoning. Pour some of the sauce over the chops on the platter. Serve immediately, passing the remaining sauce at the table. Serves 4.

Time 15m

Yield 4 serving(s)

Number Of Ingredients 13

four bone-in pork blade steak, 3/4-inch thick
kosher salt & freshly ground black pepper
1 tablespoon grapeseed oil, plus additional as necessary
3 sprigs thyme, plus additional thyme leaves for serving
2 tablespoons honey mustard (or 2 tablespoons dijon mustard plus 2 teaspoons honey)
1 cup low sodium chicken broth
1 tablespoon unsalted butter
2 tablespoons capers
1 -3 tablespoon fresh lemon juice
2 tablespoons olive oil
3 garlic cloves, smashed
8 ounces destemmed mustard greens, coarsely chopped
red pepper flakes, for serving (optional)

Steps:

  • Cut a round of parchment paper that fits inside of a large cast iron skillet.
  • Pat dry pork chops and generously season with salt and pepper. Preheat cast iron skillet over high heat. When smoking, add oil and swirl to coat. Add pork chops in an even layer. If necessary, cook in batches so as not to overcrowd pan. Place prepared parchment round on top of chops and top with additional skillet or two to encourage searing. Cook, flipping once, until golden on the edges, about 2-2 1/2 minutes per side. Replenish oil if necessary between batches.
  • Remove pork chops to a plate. Add thyme sprigs, honey mustard, and chicken broth. Cook until reduced by half. Add butter and capers and swirl to emulsify. Season with lemon juice, salt, and pepper and pour sauce over pork chops.
  • Add 2 tablespoons olive oil and garlic to skillet. Cook, stirring, until garlic is sizzling and begins to turn golden, about 1-2 minutes. Add mustard greens, toss to coat, and season with salt and pepper. Cook just until wilted, about 30 seconds. Remove from heat.
  • Serve pork chops with mustard greens, additional fresh thyme, and red pepper flakes, if desired.

PORK CHOPS WITH LEMON AND CAPERS.

Pork Chops with Lemon and Capers. image

This is another old recipe taken from my local newspaper which I have adapted over the years. Outside of chops cooked on the grill, it is my absolute favorite!

Provided by joan in CNY

Categories     Pork

Time 25m

Yield 2 serving(s)

Number Of Ingredients 9

2 center cut boneless pork chops
1/4 cup flour
salt & freshly ground black pepper
2 tablespoons olive oil
2 cloves garlic, minced
1/4 cup dry white wine (I use Chablis)
1/2 cup chicken broth
2 tablespoons drained capers, rinsed
1 tablespoon fresh lemon juice (not reconstituted)

Steps:

  • Warm 1Tbs. of the olive oil in a frying pan or saute pan.
  • In a bag or on a plate combine the flour, salt and pepper.
  • Coat the chops with the seasoned flour.
  • Add the pork to the pan and saute, turning once, until golden brown and nearly done.(Time will depend on thickness of the chops.) Add more oil if necessary.
  • Transfer to a deep plate or platter and keep warm.
  • Reduce heat to low, add the garlic and saute, stirring, for 30 to 60 seconds, being careful not to burn the garlic.
  • Raise the heat to high, add the wine and deglaze the pan by stirring to dislodge any browned bits on the pan bottom.
  • Boil until reduced by half, about 1 minute.
  • Add the chicken broth and again boil until reduced by half, about 5 minutes.
  • Stir in the capers, lemon juice, salt and pepper to taste.
  • Pour the sauce over the chops and serve immediately.
