  • In a bowl, combine all of the ingredients; mix well. Shape into six patties. Fry in a skillet until meat is browned and cooked through.

1 teaspoon Fennel Seeds
3 clove Garlic
2 tablespoon Sun-Dried Tomatoes
1 1/2 teaspoon Kosher Salt
1 tablespoon Dried Sage
1 teaspoon Ground Thyme
1 teaspoon Coarse Black Pepper
1/4 teaspoon Crushed Red Pepper Flakes
1/4 cup Water
2 pound Ground Pork
2 tablespoon Canola Oil

Steps:

  • Crush Fennel Seeds (1 teaspoon) with the bottom of a glass or chop with a knife to break apart the seeds.
  • Combine crushed fennel with the Garlic (3 clove), Sun-Dried Tomatoes (2 tablespoon), Kosher Salt (1 1/2 teaspoon), Dried Sage (1 tablespoon), Ground Thyme (1 teaspoon), Coarse Black Pepper (1 teaspoon), Crushed Red Pepper Flakes (1/4 teaspoon) and Water (1/4 cup).
  • Add Ground Pork (2 pound) to a large bowl and add seasonings. Mix until seasoning is evenly incorporated but do not overmix. I find it best to use my hands.
  • Portion mixture into 2.5 ounces each. Form into 3 1/2-inch patties either using your hands or pressing into a ring mold. Place on a flat plate or tray and separate layers with parchment.
  • Add 1 tbsp of Canola Oil (2 tablespoon) to your favorite medium-size skillet ( I used cast-iron) and heat over medium until hot. Add patties to the pan without overcrowding and cook for 4-5 minutes per side until browned and cooked through.
  • Remove from pan and serve immediately. Or keep warm in a low oven and repeat with remaining oil and uncooked patties.

2 teaspoons salt
1 teaspoon ground black pepper
¼ teaspoon dried marjoram
1 tablespoon brown sugar
⅛ teaspoon crushed red pepper flakes
1 pinch ground cloves
2 pounds ground pork

Steps:

  • In a small, bowl, combine the sage, salt, ground black pepper, marjoram, brown sugar, crushed red pepper and cloves. Mix well.
  • Place the pork in a large bowl and add the mixed spices to it. Mix well with your hands and form into patties.
  • Saute the patties in a large skillet over medium high heat for 5 minutes per side, or until internal pork temperature reaches 160 degrees F (73 degrees C).

Number Of Ingredients 10

1 pound ground pork
1 garlic clove, minced
1 tablespoon dried sage, crumbled
3/4 teaspoon dried thyme
1/2 teaspoon dried fennel, crushed
Pinch of ground nutmeg
1 1/2 teaspoons coarse salt
1/2 teaspoon freshly ground black pepper
1 large egg white
2 teaspoons vegetable oil

Steps:

  • Mix together the pork, garlic, sage, thyme, fennel, nutmeg, salt, and pepper in a medium bowl. Add the egg white and combine thoroughly. Cover and chill for at least 15 minutes.
  • To easily form the sausage patties, rinse your hands in cold water. Divide the mixture into eighths and shape each portion into a 2 1/2-inch disk. Patties can be made to this point and refrigerated or frozen until ready to use.
  • Heat a skillet over high heat, and then swirl in the oil. Fry the sausages on both sides until completely cooked through and golden brown, about 4 minutes per side. Drain and serve immediately with pancakes, waffles or eggs. Sausage patties can be fully cooled, wrapped, and frozen for microwave reheating.

Plan ahead the pork mixture must be refrigerated for 24-48 hours to blend the flavors together before making the patties. I usually get about 18-20 patties out of this, but the yield will vary depending on how large you make them --- you may adjust the amount of sugar but I recommend making the first batch using the stated amount, you might prefer it sweeter but for my family 1 tablespoon is just the perfect amount --- these are very good between biscuits :)
