This bolognese pasta dish uses ground pork, but you can swap it out for beef, turkey, or lamb.

3 slices bacon, finely chopped
1 small onion, finely chopped
1 medium carrot, finely chopped
1 celery stalk, finely chopped
2 pounds ground pork
1/4 cup tomato paste
1 cup dry white wine
1 1/4 cups whole milk
1 can (28 ounces) tomato sauce
2 cups low-sodium chicken broth
1 bay leaf
5 sprigs fresh thyme
Coarse salt and ground pepper
Cooked penne rigate, for serving
Grated Parmesan, for serving

Steps:

  • In a large Dutch oven or heavy pot, cook bacon over medium heat until fat is released, 5 minutes. Add onion, carrot, and celery; cook until soft, 6 minutes. Raise heat to medium-high; add pork and cook, breaking up meat with a wooden spoon, until browned, 7 minutes. Add tomato paste; cook until pork is coated, 4 minutes.
  • Add wine; cook until reduced by three-fourths. Add 1 cup milk; cook until reduced by half. Add tomato sauce, broth, bay leaf, thyme, 2 1/2 teaspoons salt, and 1/2 teaspoon pepper. Simmer, stirring occasionally, 1 hour. Stir in 1/4 cup milk. Serve sauce over pasta, topped with cheese.

Easy Pork Bolognese image

Easy pork bolognese, a lighter alternative to traditional bolognese. Serve with spaghetti and grated Parmesan for a tasty family meal, everyone will love.

1 tbsp Olive Oil
1 Onion (chopped)
2 Garlic Cloves (chopped)
1 Carrot (chopped)
1 Celery Stick (chopped)
500g Pork Mince
3 Streaky Bacon Rashers (chopped)
400 ml Passata
1 tbsp Tomato Puree
200 ml Milk
1 Chicken Stock Pot (or stock cube)
1 Bay Leaf
1 tsp Thyme (leaves chopped)
300 g Spaghetti
4 tbsp Parmesan (grated)

Steps:

  • Heat the oil in the pan and gently fry the onion, garlic, carrot and celery for 5 minutes until soft. Meanwhile, cook the spaghetti according to packet instructions in a pan of boiling water.
  • Turn up the heat and add the pork mince and bacon. Fry for 2-3 minutes until the pork has changed colour.
  • Add in the passata, tomato puree, milk, stock pot or cube (remember you don't need to dilute it in water as there is enough liquid from the passata and milk), herbs and season with black pepper.
  • Simmer for 15-20 minutes before serving with the spaghetti and grated Parmesan.

We take some of the basics of traditional bolognese and then add a few twists to bump up the flavor even further. Layers and layers of flavor mingle together to create a depth and richness that will make your taste buds sing!

4 ounces pancetta or bacon (, diced)
5 tablespoons butter
1 medium yellow onion (, very finely chopped)
1 large carrot (, very finely chopped)
1 large celery rib (, very finely chopped)
2 large cloves garlic (, minced)
1/2 pound ground beef
1/2 pound ground veal
1/2 pound ground bulk pork sausage or plain ground pork ((sausage will give even more flavor))
1/2 teaspoon salt
2 cups whole milk
1 cup beef or veal consommé or broth
1 cup dry white wine
1/2 cup dry red wine
1 28 ounce can or jar Italian imported tomato puree or Italian imported stewed tomatoes crushed by hand
2 tablespoons ground dried porcini mushrooms
1 1/2 teaspoons salt
3/4 teaspoon freshly ground black pepper
1/8 teaspoon freshly ground nutmeg
1/2 teaspoon ground fennel seed
1 teaspoon sugar
1 bay leaf
2 tablespoons chopped fresh sage ((or 1 1/2 teaspoons dried))
1 tablespoon chopped fresh rosemary ((or 1 teaspoon dried))
2 tablespoons chopped fresh parsley

Steps:

  • Fry the bacon in a large Dutch oven over medium-high heat until done (don't drain the bacon grease). Add the butter and the onion, carrot, celery and garlic and cook until softened, 5-7 minutes.
  • Add the ground beef, veal, sausage and salt and cook until no pink remains. Add the milk, bring to a boil, reduce the heat to low, cover and simmer for 1 hour.
  • Add the consomme, white and red wine, tomatoes and all remaining ingredients except for the parsley. Bring to a boil, reduce the heat to low, cover and simmer for 2 hours, stirring occasionally. Uncover and continue simmering on very low for another 2 hours. If the bolognese is too runny, uncover and simmer another 30 minutes or until sufficiently thickened. Stir in the parsley and simmer for another minute.
  • Serve over pasta (fresh is best) with some freshly grated aged Italian cheese.
  • Note: This sauce freezes well and can be used in any pasta dish, including lasagna.

1 teaspoon grape seed oil
1 pound ground pork
1/4 cup red wine (Chianti)
2 tablespoons minced garlic
1 medium onion, small diced
2 large ripe tomatoes, chopped (keep juices)
1 large bell pepper, cored, small diced
1 tablespoon chopped fresh basil
1 sprig fresh thyme
1/4 cup heavy cream
Salt and freshly ground black pepper

2 pounds cooked pappardelle, for serving

Steps:

  • In a large skillet over medium-high heat, add the grapeseed oil until warmed. Then add the ground pork, cooking until browned, 7 to 8 minutes. Remove the meat from the skillet.
  • In a second skillet over medium-high heat, add the wine, garlic and onions, stirring throughout the cooking until translucent, about 10 minutes. Add the cooked pork, tomatoes and peppers, and then stir in the basil and thyme. Bring the mixture to a slow roll, reduce the heat to low and simmer, covered, for 15 minutes. Add the cream and finish for 5 minutes. Finish with salt and pepper to desired taste. Toss the bolognese with cooked pappardelle and serve. (Shelf Life: 5 days.)

EASY SPAGHETTI BOLOGNESE



Easy spaghetti Bolognese image

Mix pork and beef mince in this easy spaghetti bolognese that also has a splash of red wine and plenty of garlic for a filling, flavourful family supper

3 tbsp olive oil
300g beef mince
200g pork mince
2 large shallots , finely chopped
2-3 garlic cloves , crushed
500g passata
1 tbsp tomato purée
100ml red wine
1 tsp dried oregano
400g spaghetti
50g parmesan , finely grated
a few basil leaves

Steps:

  • Put 1 tbsp of the oil in a large saucepan over a medium-high heat, add the beef and fry until well browned. Tip out into a dish and repeat with 1 tbsp oil and the pork. Tip the pork into the dish with the beef and put the pan back on the heat with the remaining oil. Turn the heat down and cook the shallots for 8-10 mins or until very soft, then add the garlic. Tip the meat back into the pan and add the passata, purée, wine and oregano. Stir everything together, cover and simmer over a low heat, stirring occasionally, for 45 mins.
  • Cook the spaghetti following pack instructions, then stir half the parmesan into the Bolognese. Put a spoonful of the pasta water into the sauce to loosen it if it looks too thick, then drain the spaghetti. For a better flavour, tip the pasta onto the sauce, toss everything together to coat, and season well (or serve with the sauce on top). Add the remaining parmesan and a few basil leaves.
