1 1/2 pounds lean boneless pork, trimmed of fat
1 tablespoon cooking oil
1 can (15 oz) Progresso™ black beans, rinsed and drained
1 can (14.5 oz) Muir Glen™ organic diced tomatoes
1 can (10.75 oz) reduced-fat and reduced-sodium condensed cream of chicken soup
2 cans (4.5 oz) chopped green chile peppers
1 cup quick-cooking brown rice
1/4 cup water
2 to 3 tablespoons Muir Glen™ organic salsa
1/2 cup shredded reduced-fat cheddar cheese (2 ounces)

Steps:

  • Preheat oven to 350° F. Cut pork into 1/2-inch cubes. In a large skillet, brown pork, half at a time, in hot oil. Drain off fat. Return pork to skillet.
  • Stir in black beans, tomatoes, condensed soup, chile peppers, brown rice, water, and salsa. Bring mixture to boiling. Carefully pour mixture into a 2-quart rectangular baking dish. Bake, uncovered, for 30 minutes. Sprinkle with cheese; let stand for 10 minutes before serving.

This could also be made using chicken breast or beef. Adjust all ingredient amounts to taste, this complete recipe may be doubled. I also add in some recipe#186029 just to kick the flavor up even more! Use instant rice only for this recipe.

1 3/4 lbs boneless pork shoulder (cut into about 1-inch pieces)
salt and black pepper
4 tablespoons oil (can use less)
1 large onion, chopped
2 teaspoons dried chili pepper flakes (optional or to taste)
1 -2 tablespoon fresh garlic (or to taste)
1 (15 ounce) can black beans, rinsed and drained (or use pinto beans)
1 (10 ounce) can cream of mushroom soup, undiluted
2 (4 ounce) cans diced green chili peppers, drained
1 cup uncooked instant Minute Rice (use white or brown)
1/4 cup water (or use chicken or beef broth)
1/2 cup salsa (mild or spicy)
2 -4 teaspoons cumin (or use as much as desired)
salt and pepper
3/4 cup grated cheddar cheese
sour cream, for top

Steps:

  • Season the pork cubes with salt and black pepper.
  • Heat oil in a skillet; add in the pork and brown on all sides or until cooked through.
  • Add in the onions, garlic and dried chili flakes (if using) the last 3 minutes of cooking.
  • Transfer mixture to a greased 2 or 3-quart casserole dish.
  • Add in all remaining ingredients (except the sour cream) mix with wooden spoon to combine.
  • Bake in a 375 degree oven uncovered for 25-30 minutes or until the rice is tender.
  • Sprinkle with shredded cheese; return to oven for 4-5 minutes or until the cheese is bubbley.
  • Serve with sour cream on the side.

2 tablespoons extra-virgin olive oil
1 green bell pepper, diced
1 onion, diced
6 cloves garlic, chopped
2 teaspoons ground cumin
Kosher salt and freshly ground pepper
1 8-ounce can tomato sauce
1 cup converted (parboiled, not instant) white rice
1 15-ounce can black beans (not drained or rinsed)
8 thin boneless or bone-in pork chops (2 to 2 3/4 pounds)
1 tablespoon apple cider vinegar

Steps:

  • Preheat the broiler. Heat the olive oil in a medium pot over medium-high heat. Add the bell pepper, onion, garlic, cumin, salt and pepper and cook until slightly soft, about 3 minutes. Add the tomato sauce and 1/2 cup water and bring to a simmer.
  • Set aside about half of the tomato sauce mixture in a bowl. Add 3/4 cup more water and the rice to the pot and bring to a boil. Add the beans and their liquid, stir and reduce the heat to low. Cover and cook, undisturbed, until the rice is tender, about 15 minutes. Remove from the heat and let sit, covered, 5 more minutes.
  • Meanwhile, pierce the pork chops with a fork and rub with the vinegar, and salt and pepper to taste. Arrange on a foil-lined broiler pan. Pour the reserved tomato mixture over the pork chops and turn to coat. Broil, without turning, until golden brown, about 8 minutes.
  • Fluff the rice and beans with a fork. Season with salt and pepper. Divide the pork chops and rice and beans among plates and drizzle with the broiler-pan juices.

10 (8 inch) corn tortillas
3 cups cooked pulled pork
4 tablespoons canned black beans, rinsed
½ (8 ounce) package cream cheese, cut into cubes
2 tablespoons chopped fresh cilantro, or more to taste
1 ½ cups salsa, or more to taste
6 tablespoons leftover cooked rice
8 tablespoons shredded Mexican cheese blend

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Line the bottom of a casserole dish with 6 corn tortillas, so that the bottom and sides are covered.
  • Add 1/2 of the pulled pork, 1/2 of the black beans, 1/2 of the cream cheese, 1/2 of the cilantro, 1/2 cup of salsa, 1/3 of the cooked rice, and 3 tablespoons Mexican cheese blend. Cover with 4 corn tortillas. Repeat layering of the ingredients, finishing with the remaining Mexican cheese blend.
  • Bake in the preheated oven until cheese is melted and bubbly, about 25 minutes.

1 1/2 lbs boneless pork, cut 1/2 inch thick
2 tablespoons vegetable oil
1 1/2 teaspoons salt
1/2 teaspoon black pepper, freshly ground
2 teaspoons chili powder
1 cup chopped onion
1/2 cup diced celery
1 (20 ounce) can tomatoes
1/8 teaspoon Tabasco sauce
3 cups rice, half cooked and drained
1/4 lb grated cheddar cheese
1 cup carrot, diced
1 (15 ounce) can black beans

Steps:

  • Use whatever type of rice you prefer and cook it halfway according to whatever method you prefer while continuing with the rest of the prep work.
  • Trim fat from pork, cut in strips 1 inch wide and 2 inches long.
  • Brown pork in oil then add salt, pepper, chili powder, onions, and celery.
  • Cook 5 minutes stirring frequently.
  • Mix in tomatoes, Tobasco and optional items if desired.
  • Bring to a boil, cover and cook over low heat for 30 minutes.
  • Add the half cooked rice and mix lightly.
  • Taste and adjust seasonings as desired.
  • Turn into a greased 3-quart casserole.
  • Sprinkle cheese on top and bake in a preheated 350 degree F oven for 25 minutes.

CROCK POT PORK AND BLACK BEAN CASSEROLE

This is another of those "what have I got in the house recipes" It turned out to be quite tasty so I am posting it. Use any cut of pork that you wish it will be tender done in the crock Pot It is freezer friendly. This recipe can sit on "Keep Warm" for 1-2 hours after you have cooked it and then just turn up to high for 15 minutes

1 1/2 lbs boneless pork shoulder, cut into 1-inch cubes
1 (14 ounce) can Mexican-style tomatoes
1 (19 ounce) can black beans, rinsed
2 tablespoons dry garlic granules
2 jalapenos, seeded and chopped
1 medium onion, chopped
3 carrots, cleaned and chopped into 3/4-inch pieces
1 (12 ounce) can canned corn niblets
1 celery rib, chopped
1/2 cup tomato juice
1 teaspoon adobo seasoning (use more if you like spicey)
1 cup barbecue sauce (I used Bull's Eye Original)

Steps:

  • Place all the ingredient except the BBQ sauce in your crock pot, stir to mix it up a bit.
  • Turn on low and leave for 6 hours, add BBQ Sauce leave for 1 more hour.
  • You may speed up the cooking by starting it on High for 2 hours then to low for 2 more add BBQ sauce and cook for a further hour on low.
  • Serve with either noodles or rice.
