These Classic Porcupine Meatballs are a super easy family favorite recipe. They're simple to make with ground beef, rice and Campbell's® Condensed Tomato Soup to make the sauce and are then baked in the oven and served over rice. This is the best quick meal for a busy weeknight!

1 lb. 80/20 ground beef
1 cup instant white rice
1 tsp. salt
1/4 tsp. black pepper
2 Tbsp. dried minced onions
1/2 10.7 oz. can of Campbell's® Condensed Tomato Soup
1 tsp. Worcestershire sauce
1 egg
3 1/2 10.75 oz. cans of Campbell's® Condensed Tomato Soup
1/2 can of water
1 tsp. onion powder
1 tsp. Worcestershire sauce
1/2 tsp. salt
1/4 tsp. black pepper

Steps:

  • Using your hands, mix all meatball ingredients until well combined.
  • Shape the meat into balls that are slightly larger than a golf ball.
  • Brown all sides of the meatballs in a pan over medium high heat, turning frequently. Do this in batches so as not to overload the pan.
  • When each meatball is browned, remove them from the pan and place it into a 9" x 13" baking pan.
  • In a separate bowl combine all sauce ingredients and whisk until they're fully incorporated.
  • Pour the sauce over the meatballs.
  • Bake at 400 degrees for 30 minutes.
  • Serve immediately over white rice.

You only need 10 minutes of prep for these easy old-fashioned porcupine meatballs!

1 lb. ground beef ((I used 93% lean))
½ cup uncooked long grain white rice
1 egg, lightly beaten
¼ cup grated or finely minced onion
2 tablespoons minced fresh parsley ((or 2 teaspoons dried parsley flakes))
¾ teaspoon kosher salt
⅛ teaspoon ground black pepper
1 (10.75 oz) can condensed tomato soup, not diluted
1 soup can of water

Steps:

  • Preheat oven to 350°F. Spray a 2-quart baking dish with nonstick cooking spray and set aside.
  • In a large bowl, combine ground beef, uncooked rice, egg, onion, parsley, salt, and pepper. Shape into 1-inch balls.
  • Place the meatballs in the prepared baking dish.
  • In a small bowl, whisk together tomato soup and water. Pour soup mixture over the meatballs.
  • Cover and bake for 30 minutes.
  • Remove cover and continue baking for 30 more minutes. At this point, the meatballs should be cooked through and the rice inside the meatballs should be tender. If the rice is still crunchy, cover loosely with foil and return to the oven for another 5-10 minutes (or until rice is done).

1 1/4 pounds lean ground beef ((could sub with half ground pork))
1/3 cup long grain rice
1 large egg ((beaten))
1/4 cup finely chopped onion (, or 1 Tablespoon minced onion )
2 teaspoons minced garlic (, or 1/2 teaspoon garlic powder )
1 teaspoon Kosher salt
1/2 teaspoon ground black pepper
2 Tablespoons Chopped fresh Italian Flat leaf parsley ((optional))
1-2 Tablespoons olive oil
10 ounce can tomato soup
1/2 Tablespoon Worcestershire sauce
1 cup water

Steps:

  • Combine the meat, rice, egg, onion, garlic, salt and black pepper in a bowl. Stir just until combined, do not over mix. Add a Tablespoon or two of water as needed to keep a wet mixture.
  • Use a medium cookie scoop or spoon to scoop the meat. Then form into 1 1/2" balls.
  • Heat olive oil in a large skillet over medium-heat. Lightly brown the meatballs, cooking about 2 minutes per side. Then pour in the tomato soup, Worcestershire sauce and water. Bring to a simmer and then cover with a lid. Reduce heat to medium-low and cook for 35-45 minutes, or until rice is tender.

½ teaspoon garlic powder
2 tablespoons parsley (fresh )
1 tablespoon Worcestershire sauce
1 egg
1 can (10 oz) condensed tomato soup (undiluted)
1 cup vegetable juice (such as V8)
1 cup tomato sauce
½ teaspoon garlic powder
½ teaspoon Italian seasoning
salt and pepper to taste
chopped parsley, for garnish

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, mix ground beef, rice, onion, garlic powder, parsley, worcestershire, egg, salt, and pepper until just combined.
  • Shape the mixture into approximately 20 balls. Place in a baking dish, approximately 2qt.
  • Combine all ingredients for the sauce and pour over meatballs.
  • Bake for uncovered 1 hour. Garnish with parsley, salt, and pepper. Serve over rice or mashed potatoes.

This is a twist on the classic porcupine meatballs, traditionally made with tomato soup. One night, my mother had Campbell's cheddar cheese soup on hand instead of tomato soup. She then served the meatballs over rice. The rest is history! This has been a favorite in my family for years, and is now a favorite in my husband's family.

1 lb lean ground beef
1 egg
1/2 cup white rice
1/4 cup seasoned bread crumbs
2 (10 3/4 ounce) cans Campbell's cheddar cheese soup
2 empty campbell's cheddar cheese soup cans milk (10 3/4 oz.)
garlic salt (to taste) (optional) or garlic powder (to taste) (optional)
granulated onion (to taste) (optional) or onion powder (to taste) (optional)
salt (to taste) (optional)
pepper (to taste) (optional)
cooked rice

Steps:

  • In a large pot, on medium-high heat, combine and heat through the soup and milk. You may add salt and pepper to taste, if you like.
  • Meanwhile, in a medium size bowl, combine ground beef, egg, rice, bread crumbs, garlic salt/garlic powder, granulated onion/onion powder, salt, and pepper (again, these seasonings are optional).
  • Form ground beef mixture into small to moderate sized meatballs (depending on how many meatballs you want to make), dropping meatballs into the pot of soup as you go.
  • Stir the meatballs and soup after all meatballs are added, keeping the heat on medium-high.
  • When soup starts to slightly boil, turn the heat down to low-medium, and cover the pot.
  • Stir every 15-20 minutes, so the meatballs don't burn.
  • Cook until meatballs are no longer pink, and the rice is soft. (about 45 minutes to an hour, depending on size of meatballs).
  • Serve over rice, with a side of fresh cooked vegetable of your choice.
  • **Sometimes, I add another can of cheese soup, and add only 2 and a half cans of milk, to make it cheesier. Either way, it's still delicious!**.

Most people make these in tomato soup. I had started making it one day before I realized I didn't have any tomato soup - so I tried it with Campbells Cream of Celery soup... it was wonderful! You can also use Cream of Mushroom soup. Makes it creamy and yummy. I won't go back to tomato sauce... I also stir in a can of green beans at the end of cooking...it's like meatballs AND green bean casserole. Yum.

1/2 cup rice
2/3 cup milk
1 tablespoon instant minced onion or 1 medium onion, chopped

3/4 cup water

Steps:

  • Combine ground beef, rice, milk, minced onion, salt and pepper in bowl. Mix lightly, but well. Drop rounded tablespoonfuls of mixture into 13 x 9 x 2 inch baking pan.
  • Combine tomato soup and water in bowl; mix well. Pour over meatballs. Cover baking pan tightly with aluminum foil.
