BEANS AND RICE DINNER



Beans and Rice Dinner image

On cold or rainy days, this comforting beans and rice dish really fills the tummy. Sometimes I switch up pinto beans for kidney beans or use white rice instead of brown. Add rolls and a green salad, and it's dinner! -Lorraine Caland, Shuniah, Ontario

Number Of Ingredients 13

1 tablespoon canola oil
2 celery ribs, chopped
1 medium green pepper, chopped
1 medium onion, chopped
1 can (28 ounces) diced tomatoes, undrained
1 can (16 ounces) kidney beans, rinsed and drained
2 cups cooked brown rice
2 teaspoons Worcestershire sauce
1-1/2 teaspoons chili powder
1/4 teaspoon pepper
1/4 cup shredded cheddar cheese
1/4 cup reduced-fat sour cream
2 green onions, chopped

Steps:

  • In a large nonstick skillet, heat oil over medium-high heat. Add celery, green pepper and onion; cook and stir until tender., Stir in tomatoes, beans, rice, Worcestershire sauce, chili powder and pepper; bring to a boil. Reduce heat; simmer, covered, until heated through, 7-9 minutes. Top with cheese, sour cream and green onions.

1 can(s) (10.5 oz.) campbell's bean with bacon soup
1 can(s) water
1/2 c uncooked rice

Steps:

  • 1. In a medium to large saucepan, heat Campbell's soup with one can of water to boiling.
  • 2. Stir in the uncooked rice.
  • 3. Reduce heat to low and cover. Cook about 20 minutes until rice is tender, stirring occasionally.
  • 4. Serve with a green vegetable and some buttered crescent rolls.
  • 5. May double recipe for more than two people.

28 ounces black beans
1 yellow onion, diced
3 garlic cloves
6 small tomatoes, peeled and diced (compari prefered)
1 (8 ounce) can hatch chiles
1 cup brown rice
2 cups water
1 teaspoon salt
1 tablespoon olive oil
cooking spray

Steps:

  • in a rice cooker, add the rice, water, olive oil, salt, and 1 clove of garlic, and turn the cooker on.
  • while the rice is cooking, slice the remaining cloved of garlic. sautee the onion in cooking spray with the garlic till the onions sweat and turn clear. add the tomatoes and hatch chilis to the skillet and stir together till combined. add the beans and stir. turn off the heat and cover.
  • to serve, scoop 1 cup of rice and top with the beans. enjoy.

  • Remove the fresh rice noodles from the package and cut them into 1 ½ inch wide strips. If they were refrigerated, let them come up to room temperature and loosen them in some hot water.
  • If you are using dried rice noodles, follow the directions on the package to cook them. You can also soak them in hot water until softened and re-hydrated––about 15 to 20 minutes. Drain thoroughly. There should be no visual moisture on the noodles.
  • In a small bowl, dissolve the brown sugar in the hot water. Mix in the fish sauce (if using) and soy sauces. Set aside.
  • Heat your wok until smoking, and spread 2 tablespoons canola oil around the perimeter of the wok.
