POLYNESIAN SAUSAGE SUPPER
This is a super quick, inexpensive, yummy dish. I found this recipe in Quick Cooking a few years back and make it frequently. I'm not a huge fan of sausage but I can gobble this up easily.

Steps:
- In a skillet, cook the sausage, onion and green pepper until the sausage is lightly browned; drain.
- Add tomatoes, broth brown sugar, garlic powder, and pepper.
- Drain pineapple, reserving juice.
- Stir pineapple into sausage mixture.
- Bring to a boil; cook uncovered for 5 minutes.
- Combine cornstarch and reserved pineapple juice until smooth; gradually add to sausage mixture.
- Bring to a boil; cook and stir for 2 minutes or until thickened.
- Serve over rice.
CROCKPOT POLYNESIAN SAUSAGE SUPPER

- Place onion, green peppers, tomatoes, drained pineapple chunks (reserve juice), tomatoes, bouillon cube, brown sugar, garlic powder, ginger and pepper. Top with water chestnuts then sliced sausage. Cook low for about 6 - 8 hours. (Note my crockpot only needs about 6 hours.)
- Approximately 30 minutes prior to doneness, combine reserved pineapple juice and cornstarch; add to the crockpot and stir to combine. Replace the lid on the crockpot and turn the heat up to high for about the remaining 30 minutes of cooking time. Serve over rice.
- Note: As an alternative method to thicken, drain juices from crockpot into a saucepan. Combine reserved pineapple juice and cornstarch. Add cornstarch mixture to the pan of juices and boil for about 2 minutes. (If tasting, refrain from redipping spoon. Enzymes in salvia break down the starch and will make watery.) Return the sauce to the crockpot and stir to glaze.

HAWAIIAN-STYLE SAUSAGE AND RICE
I used to work where we had a lot of potluck lunches. I just brought the ingredients, already prepared, a rice cooker, and an electric frying pan. I would start the rice about 20 minutes before lunch and cook the rest in the frying pan while everyone else was uncovering and setting out their dishes. My copy of the recipe is getting so tattered I felt I better archive it. I would sorely miss it if lost.

- Bring rice and 2 cups water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.
- Place sausages into a skillet with 1/2 cup water over medium heat, cover, and cook until heated through, about 5 minutes. Thinly slice sausages. Combine sausages with onion, green pepper, and celery in a large skillet over medium heat; cook and stir until vegetables start to soften, about 5 minutes.
- Stir tomatoes, beef broth, pineapple, garlic powder, black pepper, and brown sugar into sausage mixture. Cook and stir until brown sugar has dissolved and mixture comes to a simmer. Whisk reserved pineapple juice with cornstarch in a small bowl until smooth. Stir cornstarch mixture into sausage mixture and cook until sauce thickens and turns clear, about 2 minutes. Serve sausage mixture over cooked rice.

Here's a meal on a skewer with a unique twist. The pineapple, cantaloupe and peppers complement the sausage perfectly. I frequently fire up the grill for these simple kabobs in summer. That way, I'm free to work longer in my garden.

- In a large bowl, combine the first five ingredients. Set aside half of the marinade for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag; add sausage. Seal bag and turn to coat. Refrigerate for 3 hours., Drain and discard the marinade from sausage. On metal or soaked wooded skewers, alternately thread the sausage, pineapple, cantaloupe and green peppers. Grill, uncovered, over medium heat for 10 minutes or until sausage is browned, turning and basting frequently with reserved marinade.

HAWAIIAN SAUSAGE SKILLET
I made this up one day when I couldn't find a recipe anywhere with these ingredients. So I kind of threw it together on a whim. Sugar can be adjusted for sweetness, and if the sauce gets a bit thicker than desired I suggest adding a little chicken broth as it's thickening. Serve immediately over rice.
