CHEWY ALMOND BUTTER COOKIES

This a recipe for those who cannot eat peanut butter like myself, but want a cookie that is similar.

Number Of Ingredients 10

1 cup shortening
1 cup creamy almond butter
1 cup packed brown sugar
1 cup white sugar
2 tablespoons hot water
1 teaspoon baking soda
½ teaspoon salt
2 eggs
1 teaspoon vanilla extract
2 ½ cups all-purpose flour

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat shortening, almond butter, brown sugar, and white sugar in a bowl until smooth. Combine hot water, baking soda, and salt together in another bowl; stir into almond butter mixture until creamy. Add eggs and vanilla extract; beat until blended. Gradually stir in flour until dough is just blended.
  • Roll the dough into walnut-sized balls and place 2 inches apart onto ungreased baking sheets. Press and flatten balls with a fork to create a crosshatch pattern.
  • Bake in preheated oven until golden brown, 8 to 12 minutes.

½ cup butter, softened
½ cup white sugar
1 egg
1 ¼ cups all-purpose flour
½ cup ground almonds
2 teaspoons amaretto liqueur

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In large bowl, cream together the butter and sugar. Beat in the egg, amaretto, and almonds. Gradually mix in the flour until well blended. Drop by teaspoonfuls 2 inches apart on ungreased cookie sheets.
  • Bake 5 to 8 minutes in the preheated oven, or until cookies are lightly colored.

1 cup crushed reduced-fat vanilla wafers (about 30 wafers)
1 cup confectioners' sugar, divided
1/2 cup chopped almonds
2 tablespoons baking cocoa
2 tablespoons apple juice
2 tablespoons corn syrup
1/4 teaspoon almond extract

Steps:

  • In a large bowl, combine the wafer crumbs, 1/2 cup confectioners' sugar, almonds and cocoa. Combine the apple juice, corn syrup and extract; stir into crumb mixture until blended. , Shape into 1-in. balls; roll in remaining confectioners' sugar. Store in an airtight container.

2 teaspoons granulated sugar

Steps:

  • Preheat oven to 350 degrees F.
  • In medium bowl combine flour, chopped almonds, allspice, cinnamon and salt; set aside.
  • In large bowl cream butter and powdered sugar using electric mixer. Add almond extract.
  • Stir in flour mixture; mix until just combined.
  • Shape level tablespoons of cookie dough to form balls.
  • Place on baking sheet, spacing 1 inch apart.
  • Gently press 1 almond into center of each ball.
  • Sprinkle granulated sugar over cookies.
  • Bake 16 to 18 minutes.
  • Remove from oven; cool cookies 3 minutes on baking sheet.
  • Transfer cookies to cooling rack; cool completely.

Stir with a spoon until dough comes together and resembles cookie dough. It should be slightly tacky but not stick to your hands, and it shouldn’t be crumbly. If too dry, add a bit more maple syrup or melted coconut oil.
  • Taste and adjust flavor as needed, adding more maple syrup for sweetness, vanilla to taste, or salt to balance / enhance the flavors.
  • Using a 1-inch cookie scoop, scoop out dough and roll into balls. We recommend placing the dough in the palm of one hand and using gentle pressure with the middle three fingers of your other hand to roll into a ball. If they’re too crumbly, they likely just need a bit more maple syrup or melted coconut oil to help moisten. They don’t roll quite as easily as date bites (which are stickier) but do hold together well once rolled.
