This is a surprisingly easy Central American dish to create. My wife, one of my toughest critics, loves this simple chicken and sauce combo.

2 tablespoons butter
2 tablespoons olive oil
4 onions, thinly sliced
3 tablespoons tomato paste
2 teaspoons Worcestershire sauce
1 dash hot pepper sauce
1/2 cup grape juice
1 teaspoon red wine vinegar
1 tablespoon Italian parsley
1/2 teaspoon dried mint
2 lbs chicken breast tenders

Steps:

  • In a big skillet, melt the butter and olive oil. Sauté the onion until soft and golden.
  • Blend the Worcestershire and hot sauces into the grape juice and vinegar. Add to the sautéed onions along with the tomato paste and herbs.
  • Simmer over very low heat until the flavors blend.
  • Grill or broil the chicken separately and mix with the sauce. Heat through and serve.

8 fresh tomatoes (, chopped)
1- 28 oz can crushed tomatoes
1/4 cup extra virgin olive oil (, olive oil, canola, or vegetable oil)
1 large yellow onion (, chopped)
1 Poblano pepper or bell pepper ((any color), chopped)
8 cloves garlic (, minced)
1/2 teaspoon red pepper flakes
1/4 teaspoon ground black pepper
Kosher salt (, to taste)
3 teaspoons dried oregano
2 cups hot water
1 tablespoon sugar
2 bay leaves
1 Chile Ancho
1 Chile Guajillo or Chile California
1 Chile Pasilla
3 Chile Arbol
1 packets sazon goya culantro y achiote
2 tablespoons knorr chicken flavor bouillon
1 store-bought rotisserie chicken (,Disassemble the chicken into large pieces or leftover turkey from Thanksgiving)
8 or more large hoagie (, submarine, bolillo rolls, or french rolls, as needed)
1 small cabbage (, shredded or 16 leaves remain lettuce (left whole))
1 bunch of Watercress or Cilantro
2 cucumbers (, unpeeled and sliced in thin slices)
8 radishes (, thinly sliced)
1 cup mayonnaise (, to taste)
1 large white or red onion (, cut in half, and thinly sliced)
1 cup yellow mustard (, to taste)

Steps:

  • Heat the olive oil over medium-high heat in a large saucepan. When hot, add the chile arbol, chile guajillo, Chile Pasilla, and chile ancho and saute, frequently stirring, for 1 to 2 minutes or until the oil begins to turn a bit orange from the chiles; remove them from the pot with a slotted spoon and set aside.
  • Add the garlic, fresh tomatoes, poblanos pepper, and onion, and cook over medium-low heat until the vegetables soften, occasionally stirring about 10 to 12 minutes. Return the chiles into the saucepan, add the crushed canned tomato, rinse the can with 2 cups of hot water, and add the water to the pan; season with chicken bouillon and sazon goya culantro y achiote, sugar, black pepper, and red pepper flakes to taste.
  • Bring to a boil and immediately reduce heat to low, stirring and constantly scraping the bottom of the pan.
  • Using an immersion blender or a standard blender, process the mixture in batches until smooth enough for your taste. (If using a standard blender, take care not to fill the jar more than half full per batch, leave the hole in the lid open, and cover with a clean dishtowel to allow the heat to escape), and pour it back into the saucepan.
  • Add the disassembled bone-in rotisserie chicken and bay leaves to the saucepan to help the sauce develop more flavor, and bring the sauce to a simmer and cook, occasionally stirring, until it has deepened in color and reduced slightly, about 30 to 45 minutes (if the sauce begins to scorch, lower the heat). The sauce is done when the sauce is thickened and no longer watery.
  • Taste and adjust the season with salt and pepper, if needed. Remove the bay leaves along with the chicken and set aside until the chicken is cool enough to handle. Shred into bite-size pieces using your hands or two forks, discarding the bones, and return the meat to the pot and stir to combine.

This Salvadoran chicken sandwich recipe called Pan con Pollo is made using stewed chicken, bread, and fresh sliced vegetables. The chicken is stewed on the bone in a tomato sauce that tenderizes it and gives it so much flavor! Check out how to make this Salvadoran speciality below!

1 4 lb whole chicken (jointed (bone in, skinless))
¾ tsp Salt
¼ cup yellow Mustard
2 tsp ground Cumin
½ tsp Black Pepper
3 tbsp Vegetable Oil
5 Roma tomatoes
½ white onion
2 dried Guajillo Chiles (soaked in water)
3 cloves Garlic
3 Cloves
1 tsp achiote
2 tbsp sesame seeds
⅓ cup almonds
1 tsp ground cumin
½ tsp oregano
1 tsp salt
1 cup water
2 bay leaves
¼ cup Mayonnaise
¼ tsp ground Cumin
⅛ tsp Black Pepper
1 tbsp yellow mustard
1 ½ tsp white vinegar
3 Tomatoes (sliced)
1 English Cucumber (sliced into rounds)
1 head Romaine lettuce
1 carrot (sliced into rounds)
4 Radishes (sliced into rounds)
1 bunch watercress leaves
8 bread buns (good ones with structure)

Steps:

  • Add the whole chicken into a large bowl. Sprinkle the chicken with 3/4 tsp salt, 1/4 cup mustard, 2 tsp cumin, and 1/2 tsp black pepper. Stir around with your hands to fully coat the chicken, then set aside momentarily.
  • Add 3 tbsp vegetable oil to the bottom of a dutch oven pan and allow it to heat up. Add the chicken into the pot and fry in the oil for about 3-5 minutes on each side, until they are browned on each side.
  • To make the sauce, blend 5 roma tomatoes, 1/2 a yellow onion, 2 guajillo chilies, 3 garlic cloves, 3 cloves, 1 tsp achiote, 2 tbsp sesame seeds, 1/3 cup almonds, 1 tsp cumin, 1/2 tsp oregano, 1 tsp salt and 1 cup water. Blend until the sauce is completely smooth.
  • When the chicken has fried, add the sauce you made in the blender and 2 bay leaves. Add a lid and put the pot over medium heat. Let it cook for an hour.
  • After an hour, turn off the heat. Use tongs to remove the chicken meat from the bones. Discard the bones but keep the chicken in the saue.
  • Once the bones have been removed, leave the chicken covered on the stove (turned off) while you prepare the sauce.
  • Add all of the dressing ingredients into a bowl and use a whisk to combine.
  • Prepare the sandwiches by cutting a slit in the top of the bun and opening the bun from the middle. Spread the dressing around inside the bread.
  • Use a piece of lettuce to line the inside of the bun. Then add the chicken & sauce into the lettuce. Place the veggies (tomatoes, cucumbers, radishes, watercress leaves, etc) inside the bun.
  • Repeat until the sandwiches are assembled and enjoy!

from Chef John over at foodwishes.blogspot.com, purportedly a rendition of his favorite Salvadorian dish from Aunt Mary's restaurant in San Fran. DH just keeps getting better and better at making this, but I got curious enough about the nutrition facts to keep it here on zaar. Beware: even with cream in the title, this is no soup for sissies. Those chile oils swirling atop your stewpot are lovely, but deceptively spicy. Skim them if you like, but it'll still be muy picante!

1 big chicken (4 lbs ideal)
1 onion, chopped
2 red bell peppers, chopped or julienned
2 jalapenos, sliced
2 roma tomatoes, sliced
2 garlic cloves, minced
1 teaspoon oregano
1 bay leaf
cayenne pepper
2 cups chicken broth
2 cups water
1 cup sour cream or 1 cup Mexican crema
salt
fresh ground black pepper
1/2 cup chopped fresh cilantro

Steps:

  • Place whole chicken in the bottom of a large stewpot. Pour in chicken broth and water.
  • Add the sour cream, chopped onion, peppers, jalapenos, tomatoes, garlic, and your spices. Don't worry about the sour cream curdling--it will smooth out in the last cooking step.
  • Cover and simmer on low for 1 hour.
  • Lift the lid, turn the chicken over, and recover. Simmer for another 30 minutes.
  • Remove chicken from simmering stock (crema). Allow to cool.
  • In the meantime, turn up the heat under the crema to high. When it's boiling you may skim off the fat/ super spicy oils.
  • Cut the cooled chicken into serving pieces. Make sure to pull little bits from the bones as well. Put chicken pieces back into the pot with the hot crema.
  • Stir in a large handful of chopped cilantro.
  • Serve this beautifully simple soup with Spanish rice and a side of beans.

I love salsa verde, so this is one of the ways that I like to prepare chicken. This dish serves up great with Spanish rice, and a green salad.

4 chicken breast fillets
1 cup flour
4 tablespoons butter
2 2/3 cups salsa verde (mild green salsa)
1 cup chicken broth
3 garlic cloves (minced fine)
3 tablespoons cilantro (minced fine)
1 fresh jalapeno (seeded and minced)
1/2 teaspoon ground cumin
1 cup sour cream
3 -5 green onions (green part chopped)

Steps:

  • Sprinkle the chicken with salt and black pepper to taste.
  • Dredge both sides of chicken through the flour, shaking off excess.
  • Melt the butter over med heat in a large heavy bottomed pot.
  • Add the chicken and cook over med-high heat turning once, until both sides are well browned, but chicken is not quite cooked through (about 6-7 minutes per side).
  • Remove chicken from the pot and keep warm.
  • Pour the chicken broth into the pot and scrape up any browned bits from the bottom of the pot.
  • Place the green salsa, garlic, jalapeño, cilantro, and cumin into the pot; bring to a boil.
  • Just as the sauce begins to boil, reduce the heat to obtain a slow simmer. Add the chicken breasts back into the sauce and spoon sauce over each piece of chicken.
  • Continue to cook until chicken is cooked through and tender (about 15 minutes).
  • Taste the sauce and add more salt and pepper if desired.
  • Place chicken on a serving platter and spoon sauce over each piece.
  • Top each piece of chicken with a heaping tablespoon of sour cream and sprinkle some chopped green onion over the sour cream.

Chicken smothered with onions, or pollo encebollado, is a popular homestyle dish throughout Central America. It's an incredibly easy dish to make and full of flavor. This is found on most Central American restaurant menus.

2 1/2-3 lbs chicken, cut into serving pieces
salt and pepper, to taste
3 tablespoons oil
3 onions, sliced thinly
1 cup water or 1 cup stock
1/2 cup white wine
1 bay leaf
salt and pepper, as needed

Steps:

  • Season the chicken pieces with salt and pepper. Heat the oil in a large sauté pan or pot over medium-high flame.
  • Working in batches, brown the chicken pieces in the hot oil and remove to a plate.
  • Pour off all but 2-3 tablespoons of oil and add the onions to the same pan. Reduce heat to medium-low and sauté until cooked down and just beginning to brown, 10-15 minutes.
  • Increase heat to medium-high and return the chicken pieces to the pot. Add the water or stock, wine, bay leaf, salt and pepper and bring to a boil. Reduce heat to low and simmer, covered, for 25-35 minutes, or until the chicken is cooked through and tender.
  • Adjust seasoning and serve with rice.
