KOLACHKE (GLAZED POLISH PASTRY)

Kolachke (Glazed Polish Pastry) image

Kolachkes-claimed by both Poles and Czechs-are round pastries topped with either poppy seeds, nuts, jam, or a mashed fruit mixture. Karen Maderich's heirloom recipe was a first-place winner of Martha Stewart Living Television's Cookie of the Week Contest.

Yield Makes about 4 dozen

Number Of Ingredients 7

1/4 cup sour cream, room temperature
1 (2 1/4 teaspoons) package active dry yeast
1 large egg, lightly beaten
1 cup (2 sticks) unsalted butter, cut into small pieces
2 cups all-purpose flour, plus more for dusting
1 cup fruit preserves
Easy Sugar Glaze

Steps:

  • Heat oven to 400 degrees. Combine sour cream and yeast in a small bowl. Set aside until slightly bubbly, about 10 minutes. Using a wooden spoon, stir in egg until smooth. Set aside.
  • Using two knives or a pastry cutter, cut butter into flour until it resembles coarse meal. Stir in sour-cream mixture until dough comes together.
  • On a lightly floured surface, roll out dough to 1/4 inch thick. Cut into 2 1/2-inch rounds. Transfer to ungreased cookie sheets, about 1 1/2 inches apart. Cover with a clean kitchen towel or plastic wrap. Let sit for 15 minutes.
  • Make a thumbprint in the center of each cookie. Fill each thumbprint with 1 teaspoon preserves. Bake until edges are golden, 12 to 15 minutes. Transfer pans to rack to cool. Let cookies cool on pans for 5 minutes. Remove cookies to rack. While cookies are still warm, drizzle with sugar glaze.

Categories     World Cuisine Recipes     European     Eastern European     Polish

Time 1h30m

Yield 40

Number Of Ingredients 9

12 egg yolks
1 egg
2 tablespoons white sugar
1 teaspoon salt
1 teaspoon vanilla extract
1 tablespoon whiskey
2 ½ cups all-purpose flour, divided
1 quart vegetable oil for frying
1 cup confectioners' sugar for dusting

Steps:

  • In a medium bowl, whisk egg yolks, egg, sugar, salt, vanilla, and whiskey. Stir in 2 cups of the flour. If dough is sticky, add the rest of the flour. Knead dough for 5 minutes; divide into three parts. Keep dough pieces covered with plastic wrap until ready to use.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C). Or, alternately, melt 2 pounds lard(see Editor's Note). Oil should be about 1 inch deep.
  • On a lightly floured surface, roll out one piece of the dough until it's paper-thin. Cut into parallelogram (long diamond) shapes, and use a sharp paring knife to cut a slot in the centers. Pull one point of the diamond through the slot; set aside and repeat with remaining pieces.
  • Fry 2 to 4 pieces at a time, depending on the size of your pan, about 5 to 10 seconds on each side. The cookies should not be browned. Remove from oil and drain on paper towels; dust with confectioners' sugar when cool. Store any remaining cookies in an airtight container.

MARTHA STEWART'S 8 FAVORITE CHRISTMAS COOKIE RECIPES

From marthastewart.com
Author Lynn Andriani
  • Sugar Cookies. These buttery cookies are best for making cutouts in all kinds of festive shapes. Make your dough, chill for at least an hour (or overnight), then you're ready to roll!
  • Gingerbread Snowflakes. It just isn't Christmas without gingerbread! Martha uses the spice-forward dough to make snowflakes of all different sizes—those pictured here are made with a large snowflake-shape cookie cutter, but she makes smaller iterations, as well.
  • Noel Nut Balls. When she makes these delicious pecan cookies, a Kostyra family favorite, Martha portions the dough into larger balls than her mother's recipe calls for.
  • Old-Fashioned Lemon Sugar Cookies. Martha loves lemon (it's one of her favorite flavors), and it's sure to be one of yours, too, once you bite into these crisp, citrusy cookies.
  • Chewy Chocolate-Gingerbread Cookies. Rich and robust, these decadent cookies are made with fresh ginger instead of the usual powdered spice. Semisweet chocolate and cocoa powder put a smile on chocolate lovers' faces, while dark-brown sugar and molasses provide that scrumptious chewy texture.
