My husband and I look forward to this flavorful sauce when our tomatoes become so abundant and we need to use them up...or even just when they're ripe and at their peak. -Kay Kaepp, Coldwater, MI

Number Of Ingredients 12

3 Italian sausage links (4 ounces each)
1 tablespoon olive oil
3 medium onions, chopped
1 small green pepper, chopped
3 cups chopped seeded peeled tomatoes (about 8 medium)
1 jalapeno pepper, seeded and chopped
1 tablespoon brown sugar
1 tablespoon Italian seasoning
1-1/4 teaspoons salt
1/4 teaspoon pepper
Hot cooked pasta
Parmesan cheese

Steps:

  • Remove casings from sausage; cut sausage into 1-in. pieces. In a large skillet, brown sausage over medium heat. Drain and set aside. Heat oil in the same skillet; add onions and green pepper. Cook and stir until tender., Add the tomatoes, jalapeno, brown sugar, Italian seasoning, salt and pepper. Return sausage to the pan. Cook, stirring occasionally, for 12-15 minutes or until meat is no longer pink and sauce is thickened. , Serve sauce with pasta; top with cheese.

This is a quick recipe for tomato sauce. I have just given the outline for the sauce, but you can add any kind of vegetables to it. I especially like it with mushrooms and peppers.

2 teaspoons olive oil
½ small onion, chopped
2 green onions, chopped
2 teaspoons crushed garlic
1 (28 ounce) can peeled and diced tomatoes
4 teaspoons dried basil
4 teaspoons dried oregano
1 teaspoon white sugar

Steps:

  • In a large saucepan heat oil over medium heat. Saute onion, green onion and garlic. When onions are clear, stir in tomatoes, basil, oregano and sugar. Bring to a boil, reduce heat to low, and simmer for 20 minutes.

Light and delicious spaghetti made in the microwave!

Yield 6 servings

Number Of Ingredients 11

2 lemons
12 oz (350 g) uncooked thin spaghetti noodles
2 cans (14.5 oz each) reduced-sodium chicken broth (about 3½ cups/875 mL)
1 cup (250 mL) grape tomatoes
3 garlic cloves, peeled
1 oz (30 g) fresh Parmesan cheese
1/2 cup (125 mL) fresh parsley
3 tbsp (45 mL) olive oil
1/2 tsp (2 mL) ground black pepper
2 cups (500 mL) diced cooked chicken breasts
1 cup (250 mL) small broccoli florets

Steps:

  • Zest lemons using Microplane® Zester to measure 1 tbsp (15 mL); set aside. Juice lemons using Juicer to measure ¼ cup (50 mL). Break noodles in half. Combine noodles, broth and lemon juice in Deep Covered Baker. Microwave, covered, on HIGH 11-13 minutes or until most of liquid is absorbed stirring once halfway through cooking using Chef's Tongs. Cut tomatoes in half lengthwise using Color Coated Tomato Knife. Grate Parmesan using Microplane® Adjustable Fine Grater. Process garlic, Parmesan, parsley, zest, oil and pepper in Manual Food Processor until parsley is finely chopped. Carefully remove baker from microwave using Microwave Grips. Add Parmesan mixture to baker; mix well using Chef's Tongs. Stir in tomatoes, chicken and broccoli. Microwave, covered, on HIGH 2-3 minutes or until broccoli is crisp-tender.

4 pints cherry tomatoes, halved
Good olive oil
2 tablespoons minced garlic (6 cloves)
18 large basil leaves, julienned, plus extra for serving
1/2 teaspoon crushed red pepper flakes
Kosher salt
1/2 teaspoon freshly ground black pepper
1 pound dried angel hair pasta
1 1/2 cups freshly grated Parmesan cheese, plus extra for serving

Steps:

  • Combine the cherry tomatoes, 1/2 cup olive oil, garlic, basil leaves, red pepper flakes, 1 teaspoon salt, and the pepper in a large bowl. Cover with plastic wrap, and set aside at room temperature for about 4 hours.
  • Just before you're ready to serve, bring a large pot of water with a splash of olive oil and 2 tablespoons salt to a boil and add the pasta. Cook al dente according to the directions on the package (be careful - it only takes 2 to 3 minutes!). Drain the pasta well and add to the bowl with the cherry tomatoes. Add the cheese and some extra fresh basil leaves and toss well. Serve in big bowls with extra cheese on each serving.

Add the tomatoes and let them cook, stirring occasionally, until the whole cherry tomatoes begin to burst, about 5 minutes.
  • When the pasta is cooked and drained, add it back into the pot you cooked it in. Add the sauce to the pan and mix it into the pasta. If the sauce seems a little dry, add a splash of the reserved pasta water.
