1 1/2 cups flour
3/4 cup sugar
1/2 teaspoon baking soda
3/4 cup butter, melted
1/4 teaspoon almond extract
2 cups plums, sliced thin
2 tablespoons sugar
1 tablespoon flour
1/4 cup raspberry preserves

Steps:

  • Combine flour, sugar, soda, butter and almond extract till combined well. Reserve 1 1/2 cups of this mixture. Press remaining mixture into a 9x9 pan. Bake 15 minutes.
  • Filling:
  • Combine the plums, sugar, and the flour. Stir in the raspberry preserves. Spread onto partially baked crust. Sprinkle on the remaining streusel topping. Bake another 25 minutes oor till lightly brown.

GERMAN PLUM CAKE (PFLAUMENKUCHEN)

This easy cake has a yeasted base, a light streusel topping and deliciously juicy plum filling.

175 g all purpose flour (plain flour, approx 1 1/4 cups)
30 g sugar (1 oz, approx 2tbsp plus 1 tsp)
3/4 tsp instant yeast
1/4 tsp salt
45 g unsalted butter (3 tbsp)
60 ml milk (1/4 cup (I used whole and recommend that but part/semi-skimmed also ok))
1 egg yolk
1/2 tsp vanilla extract
400 g plums (14oz, small and pos more tart eg damsons/Italian prune plums)
1/2 tbsp sugar ((optional, or increase if tart plums))
48 g all purpose flour (plain flour, 1/3 cup)
1/4 tsp cinnamon
22 g unsalted butter (1 1/2 tbsp)
33 g sugar (1/3 cup - I suggest 1/2 of this raw or demerara, rest regular)

Steps:

  • Lightly butter an 8x8 inch (20x20cm) baking dish or tin. Mix together the dry ingredients for the base - flour, sugar, yeast and salt - in a medium bowl.
  • Put the butter and milk into a small microwavable dish and warm in 15 second intervals to gently warm the milk and melt the butter. The butter should be just melting and the milk lukewarm. Add this mixture (left to cool first, if too warm), the egg yolk and the vanilla to the dry ingredients and mix all together.
  • Knead the dough gently for a minute or two - it should be soft but not wet so add a little more flour if too wet, or milk if it seems to crumble from being dry. Then, press the dough into the buttered baking dish. Press it right to the corners, flat across the bottom then slightly up at the edges.
  • Cut the plums in half, along the bit that looks like a seam, then remove the stone. Cut each plum half in half. Arrange the plum quarters over the base as tightly as you can, ideally in rows, cut side up. Leave the dish at warm room temperature to let the dough rise slightly for approximately 1 hour (don't worry if it doesn't obviously change much).
  • As the rest time is about done, preheat the oven to 350F/180C. Sprinkle the 1/2tbsp of sugar over the plums, if using.
  • Rub together the flour, cinnamon, butter and sugar for the streusel then sprinkle it evenly over the plums.
  • Bake the cake for approximately 30 -35 minutes, until the top is gently starting to brown and you can see the plums have softened underneath. Let the cake rest for around 10 minutes before cutting into slices. Works well as it is, both warm or at room temperature, as well as with cream.

What's not to love about a juicy plum filling surrounded by plenty of buttery streusel? In this simple recipe, you have to cook down the plums to be thick enough, but the process is relatively hands off, and the flavor of the slow-simmered fruit is well worth it. You can cut the cobbler easily into bars, as the name implies, but the filling stays a bit soft, so you may prefer to eat them with a fork. They're excellent with ice cream, but many like them best topped with a drizzle of cold heavy cream.

2 1/4 pounds/about 1 kilogram red, black or purple plums, pits removed and roughly chopped (about 6 cups)
1 1/2 cups/300 grams plus 1/3 cup/65 grams granulated sugar
1/4 cup/30 grams cornstarch
2 teaspoons vanilla extract
3 cups/240 grams old-fashioned oats
2 1/2 cups/320 grams all-purpose flour
3/4 cup/90 grams whole-wheat flour
1 1/2 cups/330 grams light brown sugar
1 teaspoon baking powder
1 teaspoon coarse kosher salt
1 teaspoon ground cinnamon
1 1/2 cups/340 grams unsalted butter (3 sticks), melted

Steps:

  • In a large pot, combine plums and 1 1/2 cups/300 grams granulated sugar. Heat over medium-low heat, stirring occasionally, until fruit releases juices and becomes very tender, 12 to 15 minutes. Meanwhile, place a small plate in the refrigerator to chill. You'll use this later to check the doneness of the jam.
  • Purée plum mixture in pot using an immersion blender (be careful of splashing), or remove from pot and purée in a blender or food processor until relatively smooth. Return purée to pot if you removed it, and cook over medium-low heat, stirring occasionally, until mixture thickens and reduces by about half, about 10 minutes. You should end up with about 3 1/2 cups/840 milliliters plum jam. (You can test the doneness by spooning a small amount of the jam onto the chilled plate, returning it to the refrigerator and letting it sit for 2 minutes. It should keep a clean line when you run your finger through it.)
  • In a small bowl, whisk remaining 1/3 cup/65 grams granulated sugar with cornstarch to combine. Whisk sugar-cornstarch mixture into jam and cook, stirring occasionally, until it simmers. Simmer for 1 minute, stirring well to prevent scorching. Stir in vanilla extract, and cool plum mixture to room temperature.
  • Heat oven to 350 degrees, and line a 9-by-13-inch pan with parchment paper with overhang on all sides. In a large bowl, combine oats, flour, whole wheat flour, brown sugar, baking powder, salt and cinnamon. Add melted butter and stir until the mixture forms streusel-like crumbs.
  • Press 2/3 of crumb mixture into an even layer at bottom of prepared pan. Spread cooled plum jam in an even layer over crust, then sprinkle remaining crumb mixture evenly over top of jam.
  • Bake until jam bubbles at edges and streusel is lightly browned, 45 to 55 minutes. Cool completely before slicing into 12 pieces.

Steps:

  • Preheat oven to 350°F. and butter and flour a 9-inch round or square baking pan at least 2 inches deep.
  • Make streusel:
  • In a food processor pulse together streusel ingredients until combined well and crumbly.
  • Make cake batter:
  • In a bowl with an electric mixer beat butter with sugar until light and fluffy and add eggs, 1 at a time, beating well after each addition, and vanilla. Sift in flour with baking powder and salt and beat until just combined.
  • Spread cake batter in pan, smoothing top, and arrange plum slices over it in slightly overlapping concentric circles. Sprinkle streusel over plum slices and bake cake in middle of oven 1 hour, or until a tester comes out clean. Coffeecake may be made 1 week ahead: Cool cake completely in pan on a rack and freeze, wrapped well in plastic wrap and foil. Reheat cake, unwrapped but not thawed, in a preheated 350°F. oven until heated through, 35 to 40 minutes. Cool cake slightly on a rack and sift confectioners' sugar over it. Serve coffeecake warm or at room temperature.
