PLANTAIN FRITTATA RECIPE BY TASTY
A sweet spin on the classic frittata with delicious ripe plantains and smoky sausage.

Steps:
- Preheat the oven to 400-degrees. Line a baking sheet with parchment paper.
- Toss plantain slices with 2 tablespoons olive oil and 1 teaspoon kosher salt in a large bowl and add to the prepared sheet in a single layer. Bake for 20 to 30 minutes until golden brown but soft on the inside. Set aside to cool.
- In a large bowl whisk together the eggs and milk until evenly combined. Season with salt and pepper and set aside.
- Meanwhile, heat 1 tablespoon of olive oil in a 10-inch (25 cm) cast iron skillet over medium heat. Add sausage and cook until evenly browned, about 5 minutes. Remove from the pan and set aside.
- Add peppers and onions to skillet and cook until softened, about 5 minutes.
- Add garlic and tomatoes; cook until garlic is fragrant, about 1 to 2 minutes.
- Reduce heat to low and add egg mixture and cook for 1 to 2 minutes or until the edges start to set.
- Remove from heat and top with cooked plantain slices.
- Transfer to the oven and cook for about 15 to 20 minutes, just until the eggs are barely set.
- Let cool for 10 to 15 minutes then garnish with cilantro and avocado slices.

- Place plantains in a food processor; cover and process until smooth. Add the flour, onion, salt and pepper; cover and process until blended (batter will be moist). , In an electric skillet or deep-fat fryer, heat 1/4 in. of oil to 375°. Drop tablespoonfuls of batter, a few at a time, into hot oil. Cook until golden brown, 1 minute on each side. Drain on paper towels.

- Peel plantains then cut into 1/4 inch slices. Place oil in a pan up to 2-3 inches and heat up to 325 degrees Fahrenheit. Gently place the plantain slices into the oil one at a time then fry on one side for about 2 minutes. Flip to the other side and cook for another 2 minutes Remove and place on paper towel to absorb excess oil.
- Place the two tablespoons of oil in a skillet and heat up on medium heat. Add the onions and garlic and saute until fragrant. Add the chopped tomato and cook for about 2 minutes. Add the sausage and stir for about 2 minutes. Add the bell peppers and salt, black pepper then stir for about 2 minutes. Turn off the heat.
- In a large bowl, crack in all the eggs. Add the bouillon powder and whisk to combine. Add the sausage-bell pepper mixture into the eggs then mix. Preheat oven to 350 degrees Fahrenheit.
- Rub a pie place with about a teaspoon of oil. Pour the egg mixture into the pie plate. Arrange the fried plantains on top of the egg mixture. Note that some of the plantains may shrink - that is totally okay.
