Hot Sausage Cast-Iron Skillet Pan Pizza image

Make your favorite pizza at home in your cast-iron skillet. Spicy sausage, chili flakes and honey give sausage pizza a whole new look. While the pizza is in the oven, throw together a salad -- simple mixed greens with balsamic or an acidic, bright fennel salad with olive and arugula.

Number Of Ingredients 35

1 cup diced canned tomatoes
2 tablespoons sundried tomato paste
1 large clove garlic, crushed
1 scant teaspoon (1/3 palm full) oregano
A pinch of sugar and salt
A few leaves of torn basil, plus a few torn to serve
1 pound ball dough from market or your favorite pizza parlor or EZ Pizza Dough, recipe follows
EVOO, for drizzling, and about 1/4 cup in a cup for brushing
1/2 pound hot Italian sausage
1 tablespoon cornmeal
1/2 tablespoon AP flour
Salt and pepper
Crushed red pepper flakes
About 2 cups shredded mozzarella cheese
About 1/4 cup grated Pecorino cheese
2 tablespoons water
About 1 tablespoon acacia honey
1 scant teaspoon Calabrian chili paste or chili flakes
Basil leaves
Fennel and Olive Salad, for serving, optional, recipe follows
1 cup warm water
1 package active dry yeast (look for pouches marked "For Pizza")
2 tablespoons EVOO, plus some for bowl to rest dough
1 tablespoon acacia honey
2 teaspoons kosher salt
3 cups AP flour
1 small bulb fennel, reserve a handful of fronds
1/2 small to medium red onion
1/2 lemon
1/2 orange
Salt and pepper
1/2 cup oil-cured black olives
2 to 3 tablespoons capers
4 to 5 cups arugula or baby kale
EVOO

Steps:

  • Preheat oven to 525 to 550 degrees F, as high as it goes, with rack at center. Preheat cast-iron skillet, 10 to 12 inches, over medium-high heat. Preheat a second smaller cast-iron or other skillet over medium-high heat for the sausage.
  • Gather your ingredients.
  • In a food processor, whizz up sauce: tomatoes, paste, garlic, oregano, sugar, salt and a few leaves of basil.
  • Stretch dough into an even round that will cover large skillet.
  • Drizzle a little EVOO in smaller skillet. Cut sausage from casing, add to pan and lightly brown and crumble. Turn pan off.
  • Sprinkle a little cornmeal and flour in larger skillet and press dough into and up sides as much as possible. The pan is hot -- reminder. Brush the dough with EVOO and season with a little salt and pepper or red pepper flakes. Top the dough with the sauce and sausage, scatter the cheeses over the sausage and place in oven.
  • To the sausage skillet, add a little water, honey and chili paste and stir to combine (reheat your pan if it's not warm enough to heat the honey).
  • Bake the pizza 15 minutes to deep golden brown and bubbly. Drizzle or brush the pizza with the chili honey mixture and top with torn basil.
  • To a mixer with dough hook attached, add warm water and yeast and let the yeast bloom and foam, 5 minutes.
  • Add EVOO, honey and salt and turn on mixer. Add the flour gradually to form dough. Transfer to a bowl drizzled with a little EVOO and cover; let stand 1 hour.
  • Cut dough in half; wrap half the dough and freeze for later use.
  • Using a mandoline or very sharp knife, thinly slice the fennel and the red onion and place in a bowl. Add juice of orange and lemon and season with salt and pepper. Pit olives and coarsely chop; add to bowl. Add capers and arugula or kale. When ready to serve, add EVOO, 2 slow turns of the bowl, toss and serve.

1/2 cup tomato puree
1 tablespoon olive oil
1 tablespoon dried oregano
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 tablespoon olive oil
3 ounces crimini mushrooms, sliced
Kosher salt and freshly ground black pepper
1 store-bought pizza crust
1 cup grated mozzarella
3 marinated artichoke hearts, drained and quartered
2 tablespoons grated fontina cheese
8 grape tomatoes, halved
2 tablespoons mozzarella pearls
1 ounce sliced pepperoni
1/4 cup black kalamata olives, pitted and halved lengthways
1 tablespoon grated fresh Parmesan, for garnishing
2 tablespoons small basil leaves, torn, for garnishing

Steps:

  • Preheat the oven to 450 degrees F.
  • For the pizza sauce: Add the tomato puree, olive oil, dried oregano, salt, pepper and 1 tablespoon water to a bowl and mix together.
  • For the pizza: Heat the olive oil in a large cast-iron skillet over high heat. Season the mushrooms with salt and pepper. Saute on high, tossing and moving them so they cook quickly, until the mushrooms have released their water and have started to brown, 3 to 5 minutes. Remove them to a plate and wipe the skillet carefully with a paper towel.
  • To assemble the pizza: Place the pizza crust in the skillet. Spread the pizza sauce over the crust leaving a 1/2-inch border around the edge. Sprinkle with the mozzarella. Imagine the pizza divided into four quadrants representing the seasons.
  • For spring: Arrange the artichoke hearts over one quadrant and sprinkle with the fontina.
  • For summer: Arrange the tomatoes on a second quadrant cut-side up, placing the mozzarella pearls around them.
  • For fall: Arrange the sauteed mushrooms on a third quadrant.
  • For winter: Arrange the pepperoni and olives on the last quadrant.
  • Transfer the skillet to the oven and bake until the pizza is hot and the cheese is melted, about 10 minutes. Garnish with the Parmesan and basil.

1/2 cup (2 ounces) sliced mini pepperoni

  • In a large skillet, cook sausage over medium heat 5-7 minutes or until no longer pink, breaking into crumbles; drain. Return to skillet with next 4 ingredients. Bring to a boil; cover and remove from heat. Let stand 5 minutes. , Fluff with a fork; stir in cheese. Top with pepperoni and, if desired, additional Parmesan cheese and basil.

A pizza pasta casserole in a skillet. Kind of like a homemade Hamburger Helper. Quick, easy and a kid pleaser! I use turkey pepperoni to cut way down on the grease that regular pepperoni can release.

1 lb lean ground beef
1/2 cup onion, chopped
1/2 cup green pepper, chopped
1 (15 ounce) jar pizza sauce
1 (11 ounce) can cheddar cheese soup (Campbells)
1 cup water
1/2 cup turkey pepperoni, diced
2 cups mafalda pasta (mini lasagna noodles)
2 ounces mozzarella cheese or 2 ounces cheddar cheese

Steps:

  • In a large skillet, brown ground beef, onion and bell pepper, drain.
  • Stir in pizza sauce and soup, blend well.
  • Stir in water and pepperoni. Bring to a boil; stir in uncooked noodles.
  • Cover and cook over medium heat for 10 to 15 minutes or until pasta is tender, stirring frequently.
  • Remove from heat; sprinkle with cheese. Cover, let stand for 5 minutes.
  • Makes 5 (1 cup) servings.

1 package (6-1/2 ounces) pizza crust mix
1 can (8 ounces) tomato sauce
1 teaspoon oregano
1/2 cup pepperoni slices
1/4 cup chopped onion
1/4 cup chopped green pepper
1/4 cup sliced ripe olives
2 cups shredded mozzarella cheese

Steps:

  • Grease a 12-in. electric or stove-top skillet. Prepare pizza crust according to package directions. , Line bottom and 1/2 in. up the sides of the skillet with dough. Combine tomato sauce, Italian seasoning and oregano; spread over dough. 1 pound sweet or hot Italian sausage, sliced into thin rounds (about 8 links)
2 tablespoons unsalted butter, softened
1 pound fresh pizza dough, at room temperature
10 ounces whole milk low-moisture mozzarella, thinly sliced
1 cup your favorite marinara sauce or 1 1/2 cups crushed and strained San Marzano tomatoes
3 cloves garlic, minced
1 tablespoon dried oregano
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F. Heat a skillet over medium-high heat with 2 tablespoons olive oil. Cook the sausage rounds until they turn brown on each side, 8 to 10 minutes.
  • Grease the inside of a 12-inch cast-iron skillet with the butter. Place the pizza dough in the center and spread evenly towards the bottom edge and 1 1/2 inches up the sides.
  • The order of topping layers is very important to achieving a crisp bottom pizza crust. Begin with the sausage. Evenly lay the sausage on the dough, followed by the mozzarella and marinara. Sprinkle the garlic and oregano on top. Finish with the Parmesan and drizzle with the remaining 2 tablespoons olive oil.
  • Place the skillet pizza on the bottom rack of the oven and cook until the edge of the crust is golden brown and crusty, 30 to 35 minutes. Remove and let rest for 5 minutes before serving.
