- Spread some of the pizza sauce on half of each tortilla. Sprinkle Monterey Jack cheese atop pizza sauce on each tortilla. Top with pepperoni and olives. Fold tortillas in half; press down edges gently.
- In a large skillet or griddle cook tortillas, 2 or 3 at a time, over medium heat about 4 minutes or until cheese melts, turning once.
- Cut each tortilla into three triangles. If desired, serve with marinara sauce or ranch dressing for dunking. Makes 9 appetizer servings.

- In a small saucepan, cook spaghetti sauce over medium-low heat for 3-4 minutes or until heated through. , Meanwhile, spread butter over one side of each tortilla. Sprinkle unbuttered sides of two tortillas with mozzarella cheese; top with salami and pepperoni. Sprinkle with Parmesan cheese and oregano. Top with remaining tortillas, buttered side up. , Cook on a griddle over medium heat for 2-3 minutes on each side or until cheese is melted. Cut into wedges; serve with warmed spaghetti sauce.,

EASY PIZZA QUESADILLAS
When pizza and quesadilla combine to make pizzadilla, delicious things happen. Fry up this quick dish in the morning for a kid-friendly lunch that requires no reheating (and just happens to be nut-, soy-, shellfish- and egg-free). Or make a few extras and serve with veggie sticks for a fast and fun family dinner.

- Heat a large non-stick frying pan over medium heat. Arrange pepperoni and cook until crispy on both sides, flipping halfway, about 30 seconds per side. Carefully wipe the pan clean. (If short on time, skip this step and simply add the un-crisped pepperoni with the cheese in the next step.) ##Working quickly, lay both tortillas on a work surface and divide 2 tbsp pizza sauce over both, spreading with the bottom of a spoon. If using, sprinkle oregano over 1 tortilla. Top with a 1/2 cup of cheese, then layer with the pepperoni and remaining cheese. Top with the remaining tortilla, sauce side down. ##Place the pizza quesadilla on the frying pan, still at medium heat, and cook until browned, about 2 minutes. Carefully flip and cook another 2-3 minutes, pressing slightly. It's done when the cheese is melted and the tortilla is lightly browned on both sides. ##Transfer to a cutting board and let cool for 2 minutes before cutting into 4-6 triangles. Let cool a couple of minutes more and place in a sealed lunch container with another small container filled with the remaining pizza sauce, for dipping. If using, garnish with basil leaves before sealing the container. ##Time-Saving Tip: For an even easier morning, assemble the pizzadilla the evening before, but don't cook it. Store it in the fridge overnight and skip straight to step three in the morning.

Steps:
- Spray large skillet with nonstick spray and preheat to medium heat.
- Place tortillas on a plate and put 3 tablespoons pizza sauce on half of each one.
- Then top with 1 - 1 1/2 tablespoons cheese and 5 - 7 pepperoni slices.
- Fold plain side of tortilla over filled side to make a semi-circle and place in preheated skillet. (Only 2 tortillas will fit in skillet at the same time.).
- Cook until golden brown, flip and cook until golden brown on second side.
- For added effect or as an appetizer, cut cooked quesadilla in half while cooling.

- Heat a skillet over medium heat and fry the pepperoni until crisp - transfer to a paper towel to drain.
- Brush each tortilla with a thin layer of pizza sauce.
- Sprinkle cheese on top of the sauce on the bottom tortilla. Top with pepperoni. Sprinkle another layer of cheese and place the other tortilla on top, sauce side down.
- Preheat a greased skillet over medium heat.
- Gently place quesadilla in the pan and cook for 3 to 5 minutes on each side, until cheese is melted and tortillas are crispy.
- Slice into quarters and serve with a bowl of warm pizza sauce.
