8 cups unsweetened finely shredded coconut
3 cups confectioners' sugar
1/2 cup coconut milk
1/3 cup light corn syrup
1/2 cup chopped pistachios
2 teaspoons matcha (green tea powder)
1/2 teaspoon almond extract
1/4 teaspoon ground cardamom
Confectioners' sugar

Steps:

  • In a large bowl, combine the coconut, confectioners' sugar, coconut milk and corn syrup. Press half of the mixture into a greased 9-in. square pan., Add the pistachios, matcha, extract and cardamom to the remaining coconut mixture and press in an even layer over the top. Cover and refrigerate for 2 hours or until firm. Cut into 1-in. squares. Dip bottoms in confectioners' sugar.

2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
⅔ cup shortening
2 cups packed brown sugar
1 teaspoon vanilla extract
3 eggs
1 ½ cups semisweet chocolate chips
¾ cup chopped walnuts
½ cup shredded coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In large bowl, cream the shortening, brown sugar, eggs and vanilla extract. Slowly blend in flour, baking powder, and salt. Mix until well blended. Fold in chocolate chips, walnuts and coconut. Spread the mixture evenly in pan.
  • Bake 20 to 25 minutes. Let cool before cutting into bars.

2-1/2 cups sweetened shredded coconut, lightly toasted
1/3 cup butter, melted
2 cups cold 2% milk
2 packages (3.4 ounces each) instant pistachio pudding mix
1 cup whipped topping
2 tablespoons chopped pistachios, optional

Steps:

  • In a small bowl, combine coconut and butter. Press onto the bottom and up the sides of a greased 9-in. pie plate. Refrigerate for at least 30 minutes or until firm., In a small bowl, whisk milk and pudding mixes for 2 minutes. Let stand for 2 minutes or until soft-set. Spread 1-1/2 cups over crust. , Fold whipped topping into remaining pudding; spread over pie. Sprinkle with pistachios if desired. Cover and refrigerate for at least 2 hours.

½ cup all-purpose flour
¼ cup white sugar
1 tablespoon cornstarch
¼ teaspoon baking powder
1 pinch salt, or more to taste
1 ½ teaspoons coconut oil
3 tablespoons milk
1 tablespoon sour cream
½ teaspoon vanilla extract
¼ cup crushed pistachios
¼ cup shredded unsweetened coconut
1 teaspoon white sugar
¼ teaspoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet.
  • Mix flour, 1/4 cup sugar, cornstarch, baking powder, and salt together in a bowl. Rub coconut oil into flour mixture using your hands until mixture is crumbly. Add milk, sour cream, and vanilla extract and mix just until dough is combined; fold in pistachios and coconut.

⅓ cup shortening
3 tablespoons butter, softened
½ cup white sugar
½ cup brown sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon almond extract
2 cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
½ cup chopped pistachios, or more to taste
½ cup coconut flakes, or more to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Combine shortening, butter, white sugar, brown sugar, egg, vanilla extract, and almond extract in a large bowl; beat with an electric mixer until smooth.
  • Sift flour, baking soda, and salt together in a bowl. Beat slowly into the shortening mixture until thoroughly combined. Mix pistachios and coconut flakes into the dough using a large spoon or your hands until evenly distributed.
