HONEY RICOTTA DIP WITH PISTACHIO AND APRICOT
Steps:
- In a large mixing bowl, beat together the cream cheese, ricotta, 2 tablespoons honey, and salt until smooth. Taste and add additional salt or honey as desired. Gently stir in the apricots.
- Transfer to a serving dish and smooth the top. Sprinkle with pistachios and drizzle with remaining 1 tablespoon honey. Serve immediately or refrigerate until ready to serve.

Steps:
- Put room temperature cream cheese in a bowl. Mix with spoon until creamy.
- Add the pineapple and mix very well.
- Once the pineapple has been mixed in add little by little the pistachio pudding dry mix to the cream cheese and pineapple mixture. Making sure to mix every time you add a little.
- I recommend you make a little taste test every time you add some pudding mix some people like less pudding mix and some like more.
- Refrigerate .
- Eat with ritz crackers.Yummy ! Enjoy.

The spread may be made 2 days in advance and kept covered and chilled. Garnish the spread with the chive blades and serve it with the toasts.
