PERFECT POTATOES AU GRATIN
Ree Drummond's potatoes au gratin are truly perfect in every way. The comforting side dish is made with plenty of butter, cream, and cheese, and flavorings.

Steps:
- Preheat oven to 400 degrees.
- Smear softened butter all over the bottom of a baking dish.
- Slice potatoes, then cut slices into fourths.
- In a separate bowl, whisk together cream, milk, flour, minced garlic, salt, and plenty of freshly ground black pepper.
- Place 1/3 of the potatoes in the bottom of the baking dish. Pour 1/3 of the cream mixture over the potatoes.
- Repeat this two more times, ending with the cream mixture. Cover with foil and bake for 30 minutes. Remove foil and bake for 20 minutes, or until potatoes are golden brown and really bubbling. Add grated cheese to the top of the potatoes and bake for 3 to 5 more minutes, until cheese is melted and bubbly.
- Allow to stand for a few minutes before serving by the spoonful. Delicious!
ROASTED PARMESAN POTATOES

- Preheat the oven to 450 degrees F.
- To a large bowl, add the melted butter, olive oil, garlic powder, onion powder, smoked paprika, salt, some black pepper and 3 tablespoons of the Parmesan, then mix together. Add the potato slices and toss to coat.
- Coat 2 large baking sheets with cooking spray. Spread the potato slices in one layer on the prepared baking sheets. Sprinkle the potatoes with the remaining 1 tablespoon Parmesan and bake until the potatoes are tender, crisp and golden, 15 to 20 minutes. Transfer them to a serving dish and sprinkle with the parsley.
PIONEER WOMAN'S CRASH POTATOES
With out a doubt one of the biggest hits with my family and friends. Found it on the website of the pioneer woman courtesy of pinterest. Steps:
- 1. Bring a pot of salted water to a boil. Add in as many potatoes as you wish to make and cook them until they are fork-tender.
- 2. On a sheet pan, generously drizzle olive oil. Place tender potatoes on the cookie sheet leaving plenty of room between each potato.
- 3. With a potato masher, gently press down each potato until it slightly mashes, rotate the potato masher 90 degrees and mash again. Brush the tops of each crushed potato generously with more olive oil.
- 4. Sprinkle potatoes with kosher salt, fresh ground black pepper and fresh chopped rosemary (or chives or thyme or whatever herb you have available.)
- 5. Bake in a 450 degree oven for 20-25 minutes until golden brown.
POTATO DUMPLINGS

- Melt 3 tablespoons of the butter in a large skillet over medium heat. Add the thyme, garlic and onion. Cook, stirring, until the onions are golden, about 10 minutes.
- Meanwhile, bring a large pot of salted water to a gentle boil.
- Add the potatoes, cheese and sour cream to a small bowl and mix, then set aside.
- Working one at a time, lay out a wonton wrapper and use your finger to dampen the edge of the wrapper with water. Place 1 tablespoon of the potato mix in the center of the wrapper. Fold into a triangle, sealing the edges and pushing out as much air as possible. Set aside and repeat with the remaining wrappers and filling.
- Drop the dumplings into the salted water and cook until they rise to the surface, 2 to 3 minutes. Remove with a slotted spoon and add to the skillet with the onions. Cook until the dumplings are golden, 2 to 3 minutes. Deglaze with the white wine, allowing it to boil and reduce, about 1 minute. Remove from the heat and stir in the parsley and remaining 5 tablespoons butter. Continue to stir until the butter is melted and you have a glossy sauce. Serve immediately garnished with more parsley.
PIONEER WOMAN'S FLUFFY NEW POTATOES
Probably can't tell I am an Über Fan of Ree Drummond AKA The Pioneer woman. This is a great recipe and very easy too! Make sure the potatoes are baked really well the first time or they will be hard to scoop out.

- Preheat over to 400 degrees Fahrenheit.
- Rinse and dry the potatoes; place potatoes on a baking sheet.
- Drizzle the olive oil over the potatoes and massage to coat. And don't get too attached- you know how this will end.
- Bake for 35 to 40 minutes, or until the potatoes are tender.
- Set aside for 15 minutes.
- Place the sour cream, cream cheese, Monterey Jack cheese, chives, pressed garlic, salt and pepper in a mixing bowl.
- Cut each potato in half lengthwise.
- With a spoon or melon baller, scoop out inside of the potatoes, leaving a very thin rim of potato inside the skin.
- Add the potato pulp to the mixing bowl with the other ingredients.
- Using a potato masher or fork, gently mash the ingredients together until fluffy and smooth.
- Taste and adjust the seasoning; be sure to salt it adequately.
- Spoon the mixture back into the potato shells.
- At this point, you can flash freeze the potatoes if you want:
- Stick the pan in the freezer, uncovered, and allow them to harden on the outside for about 20 minutes or so then simply throw them into a couple of large Ziploc bags, seal tightly, and freeze until you need them.
- When you're ready, bake the potatoes in a 375 degree Fahrenheit oven until thoroughly warmed through.
- The potatoes will soften, "melt", and fill the potato shells as they bake. Yummmmmm.

MY RENDITION OF PIONEER WOMAN'S MASHED POTATOES
I love Ree Drummond (The Pioneer Woman). Here is my spin on her recipe. All measurements and times are approximate.

Steps:
- Place chopped potatoes in a pot of boiling water. Leave the skins on or off according to your preference. I like texture so I left the skins on.
- Let potatoes boil until soft or about 15 mintues.
- Drain and place back in pot. Turn heat on low and let the potatoes steam for a minute or two. You want them to release a little steam so they do not get watered down or grainy.
- 4 Mash potatoes a bit, then add butter. Once butter is particularly incorporated add 4 oz of cream cheese.
- Next add sour cream and incorporate. If the mixture needs to be thinned add some half and half to the mixture.
- Add salt and pepper to taste.
