Lamb Meatballs over Spinach and Orzo image

My husband and I purchase a couple of lambs every year from the 4H at the county fair and I am always looking for ways to use ground lamb.This is a recipe I found in the news paper many years ago when ever we serve it it gets raved reviews the creamy orzo and spinach are great together..

1 lb ground lamb
salt and pepper
2 garlic cloves
1 grated lemon, rind of
1/2 teaspoon dried rosemary
2 cups cooked orzo pasta
1/2 cup chicken broth
4 cups Baby Spinach
1/2 cup half-and-half cream

Steps:

  • In a bowl combine lamb,1/2 tsp salt, 1/2 tsp pepper,garlic,grated lemon peel and rosemary. Shape mixture into 1 inch balls saute until cooked browned all over. Remove from skillet set a side pour off excess fat.
  • Add orzo, chicken broth and spinach cook over medium heat 3 minutes or until spinachis limp. Add half n half and salt and pepper to taste, return meatballs to pan and heat through.

1 large egg
1 lb ground lamb
2 cloves garlic, minced
1/4 cup finely chopped onion
1/2 cup dried breadcrumbs
1/4 cup milk
2 teaspoons chopped fresh dill or 1/2 teaspoon dried dill weed
1/2 teaspoon salt, to taste
pepper
1 3/4 cups chicken stock or 1 3/4 cups chicken broth (low-sodium, if using canned)
2 tablespoons lemon juice
1/2 teaspoon grated lemon, zest of
1 cup orzo pasta

Steps:

  • In a mixing bowl, beat the egg.
  • Add in the ground lamb, garlic, onion, bread crumbs, milk, dill, salt and pepper; mix well to combine.
  • Cover and refrigerate for 1 hour.
  • Shape lamb mixture into 1-inch balls; place balls on a large baking sheet with a rim.
  • Bake in a 400° oven for about 10 minutes or until browned.
  • Take out of oven and set aside.
  • Bring to chicken stock, lemon juice, and lemon zest to a boil in a saucepan over high heat.
  • Add in the orzo; stir to combine.
  • Boil for 1 minute.
  • Transfer orzo mixture into a 2 1/2 quart baking dish that has been sprayed lightly with non-stick cooking spray; spread mixture out evenly.
  • Place meatballs on top.
  • Decrease oven temp to 350° and bake, covered, for 40-50 minutes or until liquid is absorbed.
  • Let rest for 5 minutes before serving.

1 1/2 cups Garlic Parmesan Pretzel Crisps®
1 tablespoon black peppercorns
1 teaspoon garlic salt
1 tablespoon dried rosemary
1 lb ground lamb
1 egg, slightly beaten
16 ounces orzo pasta
1 (14 ounce) can diced tomatoes, drained
1 medium onion, diced
2 sliced garlic cloves
1 tablespoon crushed red pepper flakes
32 ounces chicken broth
1 1/2 cups half-and-half
2 cups chopped fresh spinach

Steps:

  • Place the first 4 ingredients in a Magic Bullet and pulse to make fine breadcrumbs.
  • In a bowl combine breadcrumbs and ground lamb mix well add egg mix well and shape into balls or sausages.
  • Brown meatballs in a large skillet until cook thru remove and drain on paper towels.
  • Remove all but about 2 tbl grease from pan.
  • Add diced onion, garlic, crushed red pepper and tomatoes cook until onion is soft.
  • add orzo and toss for a few minutes.
  • Return lamb meatballs to skillet.
  • Add chicken broth.
  • Simmer until orzo is cooked add half and half and spinach cover and cook until spinach is tender.
