STEAK BITES
Today I'll show you how to make my gourmet Steak Bites, which are actually about as UN-gourmet as it gets.

- Trim off the large obvious piece of fat that runs along the side of the meat. Next, cut strips less than 1-inch wide. Rotate the meat and cut into small bite-sized pieces. If you see any more large chunks of fat, gristle or long silvery membrane, cut them off.Sprinkle generously with kosher salt and freshly ground pepper. Toss the meat around a bit to thoroughly coat with the seasonings. Next, turn on your ventilation fan overhead. Heat the skillet over medium high to high heat. As the pan heats, add about 2 tablespoons butter to the skillet. Allow the butter to melt, then brown, before you add the meat.Place some of the meat in the pan in a single layer. It should sizzle loudly when it hits the pan - if it doesn't, the pan isn't hot enough. Don't stir or disrupt the meat for 30-45 seconds. You want it to sizzle and brown on one side. Scoop as many steak bites as you can with your spatula and flip them over. Repeat until all the meat is turned. Cook for an additional 30 to 45 seconds-just long enough to sear the outside of the meat but NOT cook the inside.Remove the meat to a clean plate. Add a little more butter to the pan and repeat the cooking process with the next batch just as before. Lastly, when all the meat is nicely browned and removed to the plate, pour all that browned/blackened butter all over the meat. And enjoy!

- Add the stew meat and cook on high heat until meat is browned on all sides; about 3 to 5 minutes.
- Pour 2 cups water, soy sauce, and Worcestershire sauce into the skillet. Stir in garlic powder, salt and pepper. Bring to a boil and reduce heat. Cover and simmer for 1 1/2 to 2 hours.
- Meanwhile combine the gravy mix with 1 cup water. Mix thoroughly and stir into the meat mixture. Bring to a boil stirring frequently until slightly thickened.

SIRLOIN TIP ROAST

- Chop the sirloin into 1″ squared cubes, leaving on the fat where it is. Salt and pepper the sirloin and set aside in a bowl.
- Heat a large pan or dutch over medium-high heat with 2-3 tablespoons of olive oil. We also like to add a touch of butter, but that's optional.
- Peel and cut the onions in slices, and chop the carrots into small chunks. Just a normal carrot cut into medallions will do. Add the vegetables into hot oil.
- Add your meat and let sear until it's brown, and the onions have become a little lighter in color.
- Add wine and broth to deglaze the pan, and stir the mixture.
- Cover and reduce heat to low-medium heat, and let cook one-hour per pound of meat. Open the lid periodically and stir content.
- Serve!

- Preheat the oven to 325 F.
- Heat some vegetable oil in a Dutch oven or heavy-bottomed pot set over medium-high heat.
- Lightly season the roast with salt and ground black pepper.
- Place the roast in the Dutch oven with the fat-side facing down.
- Fry the roast until the bottom is browned, about 3 to 5 minutes. Then, carefully flip the roast to brown on the other side for an additional 3 minutes.
- Transfer the meat to a plate.
- Remove all but 2 tbsp of the fat in the pot.
- Add the onions and cook them, while stirring continuously, until they start to soften and brown, about 8 minutes.
- Add 2 cups of water, the onion soup mix, thyme, and bay leaves.
- Put the meat back in the pot along with all its juices.
- Stir the liquid until it is simmering.
- Place the Dutch oven in the oven and cook until the meat is very tender, but still sliceable, about 2 1/2 to 3 hours.
- Move the meat to the cutting board.
- Trim any excess fat from the braising liquid and discard the thyme sprigs and bay leaves.
- Serve the braised meat hot, sliced across the grain into 1/2-inch-thick slices, with the braising liquid spooned over.

- Sprinkle beef tips with salt and pepper. Coat with flour. Brown in heavy skillet over high heat in small amount of oil.
- Reduce heat and add bouillon. Add Worcestershire sauce. Cover and simmer until beef tips are tender, about 1 hour. If necessary, add add water or broth to maintain 2 C of broth at the end of cooking period.
- Stir 2 Tbsp flour into small amount of water and add to broth. Cook until thickened.
- Cook noodles according to package directions; drain. Serve hot noodles covered with beef and gravy.
