CONTEST-WINNING PINEAPPLE HAM LOAF
My cousin served this tender ham loaf at a family get-together, and I eagerly asked for the recipe. Since then, I've often taken it to church functions and served it when friends come to dinner. It's always well received.

- In a bowl, combine eggs, milk, Worcestershire sauce, bread crumbs, 1 teaspoon mustard, salt and pepper. Add ham and pork; mix well. Shape into eight oval patties; set aside. , Drain pineapple, reserving 1/2 cup juice. Place a pineapple slice between each ham patty. (Refrigerate remaining pineapple and juice for another use.) Carefully place in an ungreased 9x5-in. loaf pan. Pat patties around pineapple to form a loaf. , Combine brown sugar, remaining mustard and reserved juice; pour a small amount over loaf. Bake, uncovered, at 350° for 1-1/4 hours or until lightly browned and a thermometer reads 160°, basting occasionally with remaining juice mixture.

PINEAPPLE HAM LOAF
I "inherited" this recipe from the family that owned the building where I rented my first apartment. It's one of my favorites and very easy to prepare. It's great for company because you can mix the loaf in advance, then simply pour on the sauce before putting it in the oven...it's the sauce that makes it so good!

- In a large bowl, beat the eggs; add milk, crackers and pepper. Add the ham and pork; mix well. Shape into a 9x4-in. loaf and place in a shallow baking dish. In a small bowl, combine sauce ingredients; pour over loaf. Bake at 350° until thermometer registers 170°, about 1-1/2 hours, basting frequently.

I was looking for something for dinner and this caught my eye and so we had to try it. This is tender and very yummy. Make and excellent dish for a church brunch or pot luck. I got this recipe from The Best of Country Cooking 2002 Taste of Home.

- In a large bowl, combine the first five ingredients. Crumble ham and pork over mixture and mix well. Set aside. , In a small bowl, combine the brown sugar, vinegar and mustard; pour into an ungreased 9x5-in. loaf pan. Arrange three pineapple slices in pan (refrigerate remaining pineapple for another use). Pat meat mixture into pan., Cover and bake at 325° for 1-1/2 hours. Uncover; bake 30 minutes longer or until a thermometer reads 160°. Let stand for 15 minutes. Invert onto a serving platter.

Steps:
- Mix all ingredients together except for the pineapple.
- Roll into a loaf and divide into nine patties.
- In a shallow, oven proof dish, form a long roll placing the pineapple in between each patty starting and finishing with meat.
- Bake for 30 minutes in a slow oven 325 degrees.
- Take from oven and pour some of the mixture of brown sugar, pineapple syrup, lemon juice, and mustard over the loaf and bake again for one hour, basting every 20 minutes with the glaze.
