Homemade pineapple ice pops are a welcome after-school snack on a warm day.

Number Of Ingredients 3

3 cups fresh pineapple chunks, (or one 14.5-ounce can chunks packed in juice, drained)
1/3 cup milk
1/4 cup sugar

Steps:

  • In a food processor, combine pineapple chunks, milk, and sugar; pulse until almost smooth, with some chunks of pineapple remaining.
  • Pour half the mixture into a medium bowl (or a glass measuring cup for easy pouring). Pulse remaining mixture until completely smooth; add to mixture in bowl.
  • Divide evenly among eight 3-ounce molds or paper cups, and insert wooden sticks. Freeze until solid, at least 4 hours or up to 2 weeks (cover with plastic wrap).

This easy no-fuss frozen dessert recipe for ghostly white coconut pops is the perfect treat to cool off on Halloween!

1 can (13.66 oz) coconut milk (not cream of coconut)
1 cup half-and-half
1/2 cup sugar
1/2 teaspoon coconut extract
2/3 cup flaked sweetened coconut
10 frozen ice-pop molds or paper cups (3-oz size)
10 craft sticks (flat wooden sticks with round ends)

Steps:

  • In 2-quart saucepan, mix coconut milk, half-and-half and sugar. Heat over medium heat 2 minutes, stirring constantly, until sugar is dissolved. Remove from heat; stir in coconut extract and coconut. Cool completely, about 30 minutes.
  • Pour coconut mixture evenly into molds or cups. Cover with foil; place in freezer about 25 minutes or until partially frozen. Insert craft stick through foil into each pop. Freeze 8 hours or until firm. To serve, remove pops from molds or peel off paper cups.

1 quart buttermilk
1 can (20 ounces) crushed pineapple, drained
1-1/2 cups sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
18 to 20 paper cups (3 ounces each) and Popsicle sticks or 18 to 20 Popsicle molds

Steps:

  • In a bowl, combine the buttermilk, pineapple, sugar, vanilla and salt; mix well. Pour about 1/3 cup into each cup or mold; insert sticks into cups or top molds with holders. Freeze until solid.

1 can (8 ounces) unsweetened crushed pineapple
1 can (6 ounces) unsweetened pineapple juice
1 teaspoon coconut extract
1 package (3.4 ounces) instant vanilla pudding mix
14 freezer pop molds or14 paper cups (3 ounces each) and wooden pop sticks

Steps:

  • In a blender, combine milk, pineapple, pineapple juice and extract; cover and process until smooth. Pour into a bowl; whisk in pudding mix for 2 minutes. , Pour 1/4 cup into each mold or paper cups. Top molds with holders. If using cups, top with foil and insert sticks through foil. Freeze until firm.

This is a recipe I came up with while I was pregnant. I couldn't find a cooked custard-based ice cream with pineapple and coconut as the main ingredients as I couldn't eat uncooked eggs. This thick and creamy ice cream is a family favorite. I can't seem to make it fast enough!

4 large egg yolks
½ cup white sugar
1 cup half-and-half
1 cup heavy whipping cream
1 cup crushed pineapple in juice, drained and juice reserved
2 tablespoons cream of coconut (such as Coco Real®)
½ cup sweetened flaked coconut

Steps:

  • Whisk egg yolks and sugar in a medium bowl until thick and light yellow. Set aside.
  • Heat half-and-half in a small saucepan until small bubbles start appearing around the edges. Remove from heat. Slowly drizzle into the eggs and sugar, whisking until incorporated. Return to the saucepan.
  • Heat custard over medium-low heat, stirring constantly, until it coats the back of a spoon or reaches 165 degrees F (74 degrees C). Do not boil.
  • Remove from heat and refrigerate for at least 4 hours, or until temperature reaches 65 degrees F (18 degrees C).
  • Gently whisk in heavy whipping cream, 2 tablespoons reserved canned pineapple juice, and cream of coconut. Transfer to an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Add crushed pineapple and flaked coconut near the end of the churning or it will all settle to the bottom. Transfer to an airtight container and freeze until firm, about 4 hours.
