BAKED PINEAPPLE CASSEROLE
Baked pineapple casserole is a simple and easy Paula Deen recipe that can be a side dish or a dessert. It's a sweet, creamy, and delicious recipe with eggs, but no cheese and no flour. Great for Thanksgiving, Christmas, Easter, or any special occasion.

Steps:
- Preheat oven to 350ºF. Brush a 9x9 or 8x10 baking dish with melted butter.
- Combine remaining butter with the rest of the ingredients and mix well.
- Pour pineapple mixture into the prepared baking dish.
- Bake for 60 to 70 minutes at 350ºF until golden on top and a knife inserted in the center comes out clean.
- Serve warm.

- In a large bowl, beat margarine and sugar substitute until creamy. Beat in eggs, egg whites, and vanilla. Stir in flour, pineapple, and reserved juice; mix well. Add bread cubes and toss until evenly coated. Pour into baking dish.
- Bake, uncovered, for 35-40 minutes, or until golden and knife inserted in center comes out clean.

- 1. Lightly grease a 9 x13 x 2 baking dish. Place pineapple in dish. Combine Splenda with flour and sprinkle over pineapple.
- 2. Sprinkle with cheese. Combine crushed Ritz crackers and melted butter. Sprinkle over the cheese.
- 3. Bake at 350 degrees until hot and bubbly and cheese is melted.
