- In a 1 1/2-quart heavy saucepan cook pine nuts in oil over moderate heat, stirring occasionally, until golden, about 2 minutes.
- With a slotted spoon, transfer pine nuts to a bowl.
- Add rice to oil in pan and cook over moderately low heat, stirring, 1 minute.
- Add water and bring to a boil.
- Cover rice and cook over very low heat until water is absorbed and rice is tender, about 18 minutes.
- Remove pan from heat and let rice stand undisturbed for 5 minutes.
- Meanwhile, finely chop basil.
- Fluff rice with a fork and stir in basil, pine nuts, and salt and pepper to taste.

- Bring broth to simmer in small saucepan. Reduce heat to low and keep warm. Meanwhile, heat oil in another heavy small saucepan over medium heat. Add onion and sauté until translucent, about 6 minutes. Add rice and stir 1 minute. Add broth and bring to boil. Reduce heat to low. Cover and cook until broth is absorbed and rice is tender, about 20 minutes. Stir basil and toasted pine nuts into rice. Season with salt and pepper and serve hot.

- Place pine nuts in skillet and cook, stirring often, until lightly browned. Remove from heat.
- Heat half the butter in saucepan and add onion and garlic. Cook, stirring, until onion is wilted. Add rice and stir. Add pine nuts and water and bring to boil. Cover closely and let simmer exactly 17 minutes.
- Uncover, fluff the rice with fork and stir in remaining butter.
