Number Of Ingredients 5

3 cups (1/2-inch cubes) peeled fresh pineapple (1)
1/2 cup Malibu (coconut) rum
1/2 cup well-stirred canned cream of coconut
Special Equipment
8 (1/3-cup) ice pop molds and 8 wooden sticks

Steps:

  • Blend all ingredients in a blender until smooth, then force through a fine sieve into a large glass measuring cup. Pour liquid into molds and add sticks. Freeze at least 24 hours.

1 (570 g) can pineapple in syrup (should yield 10 slices)
1 1/4 cups coconut cream (can use coconut milk)
3 -4 tablespoons sugar (to taste)
1 1/2 cups ice cubes

Steps:

  • Drain the pineapple slices and set the syrup aside.
  • Set aside 2 of the pineapple slices and freeze the remaining 8 slices until firm.
  • Blend together the frozen pineapple slices, pineapple syrup, sugar and coconut cream until smooth.
  • Add the ice and continue blending till you reach the desired consistency.
  • Pour into serving glasses and garnish each glass with toasted coconut and pineapple slices.
  • Serve chilled.

1 cup skim milk
1 teaspoon coconut extract
1 teaspoon rum flavoring
artificial sweetener (optional)

Steps:

  • put the pineapple in the blender.
  • pour milk over pineapple until it is just shy of covered over and add the extracts, adjusting to taste. Add sweetener if desired.
  • Blend until smooth, stirring occasionally if the top isnt blending.
  • Serve immediately.

This is so refreshing! If you love coconut, you'll love this! I usually freeze the rest of the pineapple. I measure out the tablespoons, then put them on a waxed papered cookie sheet and flash freeze them; when they're frozen, I put then in a plastic freezer bag, so that when I want one(Or more lol) the pineapple is easy to get to. This calls for Torani Sugar Free Coconut Syrup. I don't know if you can find this, it may be the same thing but be a different brand. It's worth looking for. They have some at Sam's club, I buy mine in a restaurant supply store.They make syrups flavors in just about anything you want. Some are sugar free, some are not. Note:I have no idea how much sweetener is in the little packets, so for the computer's sake so I'll take a stab and say 1/4 tsp.

5 -8 ice cubes or 1 cup crushed ice

Steps:

  • Place all ingredients in a blender.
  • Blend on high speed for about 30 seconds, until mixture is smooth and completely blended).
  • Pour and enjoy!
