BRAZILIAN PICADILLO
My aunt introduced me to this delicious dish. In the past few years I've made changes and come up with what my family feels is the best Brazilian dish around! A great chili alternative and it freezes well.

- In a large stock pot, heat 1 tablespoon of olive oil over medium heat. Saute garlic, onion and green pepper until onions are transparent. Transfer onion mixture to a bowl and set aside. In the same pot, heat the remaining olive oil and brown the ground beef.
- In a separate saucepan, combine the olives, capers, vinegar, salt, pepper, cinnamon, cloves, bay leaves and hot sauce. Let simmer over medium heat for 10 minutes.
- Place the olive mixture and the onion mixture into the pot with the ground beef. Add the half drained tomatoes and cook for 1 hour over medium heat; stirring occasionally.

CLASSIC CUBAN-STYLE PICADILLO
Here is a classic Cuban recipe for ground beef that is typically eaten over white rice. It can also be used as a filling for tacos or empanadas. It's delicious with fried ripe plantains.

- Heat olive oil in a skillet over medium heat; cook and stir garlic, onion, and green bell pepper in the hot oil until softened, 5 to 7 minutes.
- Crumble ground beef into the skillet; cook and stir until browned completely, 7 to 10 minutes.
- Stir olives, raisins, capers, tomato sauce, sazon seasoning, cumin, sugar, and salt through the ground beef mixture.
- Cover the skillet, reduce heat to low, and cook until the mixture is heated through, 5 to 10 minutes.

PASTELóN
Pastelón is a layered Puerto Rican casserole of plantains, cheese and picadillo, a tomato-based ground beef mixture seasoned with onions, peppers, herbs and spices. The dish is often referred to as Puerto Rican lasagna, and to say there is only one real recipe for pastelón would be like saying there's only one true lasagna. Variations abound! Some cooks boil the plantains and make a mash with taro; others fry them until they're sweet and crisp. Nearly any mild, meltable cheese may be used, though there is debate over whether or not to add raisins. This recipe is adapted from from Natalia Vallejo, chef and owner of Cocina al Fondo in Santurce, Puerto Rico. She doesn't serve pastelón at her restaurant, but she grew up eating it. Her version includes fried plantains, mozzarella, fresh tomatoes and raisins, because she says "Puerto Ricans like that sweet-and-salty mix."

- Prepare the plantains: Line a sheet pan with paper towels; set aside. Cut off the ends of each plantain. With the tip of a knife, score plantains lengthwise and peel off the skin. Using a serrated knife or chef's knife, cut each plantain in half lengthwise, and then halve again lengthwise so you end up with 24 long slices. (If some of the slices break or are unevenly shaped, that's OK! Carry on.)
- In a large cast-iron or heavy skillet, heat 1 cup oil over medium-high to between 350 and 375 degrees. Working with 4 to 6 slices at a time, depending on what fits, fry plantains until deep golden brown, turning halfway through, about 6 minutes total. Transfer fried plantains to the prepared sheet pan and cook remaining plantains; set aside. (Let oil cool, then strain and reserve for another use.)
- Prepare the sofrito: Put onion, bell pepper, ají dulce chiles (if using), garlic, cilantro and culantro (if using), in a food processor; blend until it becomes a rough, wet purée. (You should have about 1 cup sofrito).
- Prepare the picadillo: In a large, heavy skillet, heat 2 tablespoons oil over medium until it shimmers. Add the sofrito and cook, stirring often, until purée thickens and starts to brown, about 5 minutes. Add the beef and stir in the salt, pepper, cumin, paprika and oregano. Cook, stirring occasionally, until beef is evenly cooked and no longer pink, about 8 minutes. Turn off heat. Push meat mixture to one side, and carefully tilt skillet so that the fat from the meat collects at the bottom of the tilted pan; spoon off and discard as much of this excess fat as you can.
- Return the skillet to medium heat. Add the chopped tomatoes, wine and tomato paste and cook, stirring occasionally, until tomatoes fall apart and the liquid starts to reduce, about 10 minutes. Turn off heat and stir in olives and raisins, if using. Season to taste with salt and pepper. (Picadillo can be made up to 2 days in advance. Rewarm it in a pan on the stove before proceeding with recipe.)
- Prepare the pastelón: Heat the oven to 350 degrees. Grease a 9-by-13-inch glass baking dish with butter. Whisk the eggs with a pinch of salt and set aside.
- Lay half the fried plantain slices along the bottom of the baking dish crosswise, piecing any broken pieces together to form an even layer. (If there are small gaps in the plantain layer, this is OK.) Top with half the picadillo (about 2 cups), smoothing it into an even layer, then sprinkle half the cheese on top in an even layer. Repeat with another layer of plantains then the remaining picadillo. Pour the whisked eggs evenly over the picadillo layer and spread it so it settles down into the pastelón. Sprinkle the remaining cheese on top.
- Bake the pastelón until the egg is cooked, the cheese is melted and the layers are set, 20 to 30 minutes. Cut into squares and serve hot.

- Heat 1-2 tablespoons of oil or butter in a medium sized frying pan over medium temperature, add the diced onions and cook until soft and translucent – about 5 minutes.
- Add the crumbled chorizo and continue cooking until the chorizo is fully cooked. You can taste, once the chorizo is cooked, and adjust some of the basic spices if need. The flavor of chorizo tends to vary from one brand or store made chorizo to another, so if you prefer more achiote (annatto), paprika, chili powder, cumin, garlic, or other spices, you can add more until it has the flavor you prefer. Drain any excess grease according to your preference (it will depend on the chorizo, some have very little) – you can also use some of the excess grease to cook the diced plantains.
- You can transfer the chorizo to a separate plate and cook the plantains in the same pan or use a separate pan. Heat the remaining 1-2 tablespoons of butter or oil (or use the excess chorizo grease instead). Add the diced plantains and cook over medium heat, stirring to prevent them from sticking to each other and the pan, until they are golden. Add the cooked chorizo back to the pan with the plantains and mix well.
- The eggs can be added directly to the pan with plantain and chorizo hash, reduce the heat, cover the pan, and cook on low until the egg whites are cooked and the yolks are at your preferred level of doneness. You can also put the pan (if it’s oven proof) into the oven (pre-heated at 350-375F) for about 10 minutes. Another quicker option is to fry the eggs separately and then add them to the pan or to each individual plate.

- Cook the plantains. Leaving the peels on, slice each plantain in half, horizontally, and place them in a pot with just enough water to cover them. Bring to a boil, reduce the heat to a simmer and cover the pot. Cook until the plantains are tender (you can check with a fork -- the fork should slide in and out easily when they're done), usually about 15 minutes, depending on their ripeness. Remove them from the water and once they're cool enough to touch, peel them. Place them in a bowl, cover with plastic wrap and refrigerate overnight.
- Cook the steak. Coat the bottom of a large sauté pan with olive oil and sprinkle both sides of the steak with salt and pepper. (A cast iron skillet is best.) Place the pan over high heat and once it's very hot, add the meat. You should hear a sizzling sound -- if you don't, the pan isn't hot enough yet. Wait until it is. Sear both sides of the meat to brown it, then turn the heat to medium-low to finish the cooking, about 15 minutes for medium. Once the meat is cool enough to touch, shred it with your hands, and then chop it finely. Set aside. You can do this the night before you're serving if desired, keeping it covered in the refrigerator. Either way, do not wash the pan! If it's the night before, just cover the pan with foil.
