Sausage phyllo cups are a simple and easy 4 ingredient appetizer that you can prepare in just 10 minutes. Simple doesn't mean they're not amazing. A great finger food for game days, parties or brunch.

30 mini phyllo cups
½ lb breakfast sausage
1 ½ cups cheddar jack cheese (grated)
½ cup ranch dressing (bottled)
½ teaspoon Red pepper flakes

Steps:

  • Preheat oven to 350º.
  • Cook sausage in a small skillet over medium heat, breaking into small pieces. Remove to paper towel lined plate and let cool.
  • Combine cheese and ranch dressing in a medium bowl and add sausage and red pepper flakes. Place phyllo cups on a rimmed baking sheet and fill with sausage mixture.
  • Bake for 15 minutes, until cheese has melted. Serve warm.

8 ounces spicy breakfast sausage
1/2 cup Ranch dressing
1 1/2 cups shredded Mexican or Cheddar Jack cheese
30 mini Phyllo cups

Steps:

  • Cook and crumble the breakfast sausage. Let cool.
  • Preheat oven to 350 degrees.
  • Stir together the sausage, Ranch dressing and cheese in a medium bowl. Fill the phyllo cups.
  • Place filled phyllo cups on a baking sheet. Bake for 12 to 15 minutes.

1 pound hot sausage
16 ounces cream cheese, softened
1 bunch green onions, finely chopped
2 packages miniature phyllo cups

Steps:

  • Brown the sausage in a skillet, stirring until crumbly; drain well. Combine with the cream cheese and green onions in a bowl and mix well. Spoon into the phyllo cups and arrange on a baking sheet. Bake at 350 degrees F for 10 to 15 minutes or until heated through. Serve warm. An elegant alternative to sausage balls. You may prepare the cups in advance and store in the refrigerator until time to heat and serve.

Years ago someone at work served these at a holiday function and the appetizer is requested to make a presence each season. These go fast so be sure to make plenty! One could also serve with hot sauce, salsa, sour cream, etc.

45 -52 miniature phyllo cups (3-4 boxes, 15 cups to a box)
1 lb sausage, browned and drained
1 cup prepared ranch dressing
1 1/4 cups monterey jack cheese
1 1/4 cups cheddar cheese (sharp and or or mild)
3 ounces chopped black olives (optional)

Steps:

  • Mix all ingredients together and spoon into Phyllo cups.
  • Bake in preheated 350 degree oven for 10-15 minutes.
  • Serve promptly as cups tend to lose crispness as they sit.

3/4 pound bulk Italian sausage
1 small onion, chopped
1 celery rib, chopped
1/2 cup chopped fresh mushrooms
2 garlic cloves, minced
1/4 cup chopped walnuts
1/4 cup dried cranberries or raisins
1/2 teaspoon sugar
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
20 sheets phyllo dough (14x9 inches)
1/2 cup butter, melted
1-1/3 cups fresh baby spinach
1/4 cup julienned roasted sweet red peppers
1 egg, lightly beaten

Steps:

  • Preheat oven to 400°. In a large skillet, cook sausage, onion, celery, mushrooms and garlic over medium heat 6-8 minutes or until sausage is no longer pink, breaking up sausage into crumbles; drain. Stir in walnuts, cranberries, sugar, pepper and cayenne. Remove from pan; cool completely., Place one sheet of phyllo dough on a work surface; brush lightly with butter. Layer with four additional phyllo sheets, brushing each layer. (Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out.), Arrange 1/3 cup spinach, a fourth of the sausage mixture and 1 tablespoon roasted peppers in a narrow row across bottom of phyllo within 1 in. of edges. Fold bottom edge of phyllo over filling, then roll up. Brush end of phyllo dough with butter and press to seal. Repeat three times. Place rolls on a 15x10x1-in. baking pan, seam side down., Cut rolls diagonally into 1-in. pieces (do not separate). Brush tops with remaining butter; brush again with beaten egg. Bake 10-12 minutes or until golden brown.
