Cheese-Stuffed Peppers: Chile Rellenos image

Number Of Ingredients 8

16 (8-inch) Anaheim peppers, stems and seeds removed
4 tablespoons grapeseed oil (2 tablespoons to brush on peppers and 2 to saute)
1 cup grated Monterey Jack cheese (from about a 6-ounce piece before grating)
1 cup crumbled goat cheese (about 4 to 6 ounces)
1 tablespoon minced fresh thyme leaves (stripped from about 4 or 5 sprigs)
1 teaspoon minced fresh rosemary leaves (stripped from 1 or 2 large sprigs)
3 large fresh sage leaves, minced
1 cup blue cornmeal

Steps:

  • Preheat oven to 450 degrees F. Brush peppers with 2 tablespoons of the oil (reserving the balance of the oil) and roast until blackened, about 10 minutes. Remove and cover roasting pan with foil or use tongs to transfer peppers to a plastic bag. Let "sweat" for 15 minutes. This will help you remove the skin from the pepper.
  • In a small bowl, mix jack cheese, goat cheese, thyme, rosemary, and sage, and mash together.
  • Peel charred skin from peppers and stuff each pepper with about 2 tablespoons of the cheese/herb mixture. Heat the remaining 2 tablespoons of the oil over medium heat in a large skillet. Spread blue cornmeal on a piece of waxed paper and roll stuffed peppers to coat with cornmeal. Sear coated peppers on all sides, leaving undisturbed for the first 2 minutes to allow the cornmeal to integrate into the surface of the peppers and to allow the caramelization process to begin to prevent crusting off of the cornmeal.
  • Transfer to a platter and let rest for 5 minutes before serving.

1/3 cup boiling water
2 tablespoons uncooked bulgur
1/3 cup frozen (thawed) whole kernel corn
1/3 cup shredded reduced-fat mozzarella cheese
1/2 teaspoon chopped fresh jalapeño pepper
1 teaspoon chopped fresh or 1/4 teaspoon marjoram leaves
1/4 teaspoon garlic powder
2 cans (4 ounces each) roasted whole chile peppers or 4 fresh Anaheim chilies, roasted and peeled*
1/4 cup reduced-sodium salsa
1/4 cup plain fat-free yogurt

Steps:

  • Heat oven to 350°. Spray square baking dish, 8x8x2 inches, with cooking spray.
  • In medium bowl, pour water over bulgur. Let stand, stirring occasionally, 10 minutes or until water is absorbed. Stir in corn, 1/4 cup of the cheese, the jalapeño pepper, marjoram and garlic powder.
  • Slice chilies along one side; remove ribs and seeds. Drain well. Stuff about 1/4 cup filling into each chile. Place seam side down in baking dish. Top with salsa and remaining cheese.
  • Bake, uncovered, 25 to 30 minutes or until hot. Just before serving, spoon yogurt over chilies.

4 bell peppers, any colour, tops removed and deseeded
2 tablespoons olive oil
1 red onion, finely chopped
1 teaspoon ground cumin
1 red chili peppers, deseeded and finely chopped or 1 teaspoon cayenne pepper
2 zucchini, diced
6 ounces sweetcorn
1 avocado, diced
2 ounces cheddar cheese, grated
2 tablespoons cilantro, chopped
salt and pepper

Steps:

  • Heat oven to 375°F Bring a large pan of water to the boil, then cook the peppers for 5 minutes Remove and drain, cut side down, on some kitchen paper.
  • Heat 1 tbsp of the oil in a frying pan and cook the onion for 3 mins until tender. Add the cumin and chili or cayenne pepper and cook for a further 2-3 minutes
  • Add the zucchini, then cook for 4 mins until tender.
  • Remove from the heat, then stir in the sweetcorn, avocado, cheese, cilantro and seasoning.
  • Spoon the filling into the peppers, then stand them in a baking dish. Drizzle with remaining oil, then bake for 30-35 mins until the peppers are very soft.
  • Leave to stand for about 5 mins, then serve warm with soured cream, a chili bean salad and corn chips.

2 cups fat-free half-and-half
4 large eggs
½ teaspoon salt

1 cup shredded Monterey Jack cheese
½ cup frozen corn, thawed
4 slices cooked bacon, crumbled
1 (4 ounce) can diced green chile peppers, drained
1 tablespoon chopped fresh parsley, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place pastry shell in a 9-inch pie pan or quiche pan. Prick the bottom and sides with a fork.
  • Bake in the preheated oven for 8 minutes. Remove and set aside. Leave the oven on.
  • Whisk half-and-half, eggs, salt, and pepper together in a medium bowl until light and fluffy.
  • Sprinkle cheese, corn, chile peppers, and crumbled bacon into the pie shell. Carefully pour egg mixture over top.

Chiles Rellenos (Stuffed Peppers) image

This is a great traditional Mexican dish. It takes a little bit of time, but it is worth every minute! Provecho! Serve with a side of Spanish Rice.

4 fresh poblano chile peppers
½ pound lean ground beef
1 onion, chopped
1 clove garlic, chopped
salt and pepper to taste
3 eggs, separated
1 cup shredded mozzarella cheese
2 roma (plum) tomatoes, chopped
½ cup all-purpose flour
1 cup corn oil

Steps:

  • Place whole peppers over an open flame (gas burner) or under the broiler. Roast, turning frequently until evenly black and blistered. Remove from heat, place in a plastic bag, and let them sweat for a while. This will allow the skins to peel of easily.
  • While the peppers are sweating, place the ground beef in a skillet over medium-high heat. Cook, stirring to crumble, until evenly browned. When beef is fully cooked, add the onion, garlic and tomato, and cook for a few more minutes. Season to taste with salt and pepper.
  • Remove the peppers from the bag, and peel off the burnt skin. You may wish to wear protective gloves. Run peppers under cool running water to rinse away any burnt pieces. Make a small vertical slit in the side of the peppers, and remove the seeds and veins. Stuff each pepper halfway with the ground beef mixture, then fill the rest of the way with shredded cheese. Close the slits, and secure with toothpicks.
  • Whip egg whites in a large glass or metal bowl until thick and fluffy. Add the egg yolks, and whip for a minute to blend in.
  • Meanwhile, heat 1/4 inch of oil in a large heavy skillet over medium-high heat. Coat the stuffed peppers with a light dusting of flour, then dip them in the egg so they are fully covered. Carefully place in the hot oil, and fry on both sides until golden. Drain on paper towels, then serve on a large platter.

2 large peppers , halved, deseeded but stalks left on
1 tsp ground cumin
1 tsp ground coriander
400g can chopped tomato
1 red onion , halved and sliced
1 garlic clove , finely grated
1 red chilli , deseeded and finely chopped
1 small aubergine , cut into small cubes
220g can kidney bean (don't drain them)
small bunch coriander , chopped
1 large egg
25g low-fat feta cheese , finely grated
50g low-fat fromage frais
2 handfuls rocket
lime wedges, for squeezing over

Steps:

  • Heat oven to 190C/170C fan/gas 5. Place the pepper halves in a shallow baking dish, skin-side up, and roast for 15-20 mins.
  • Meanwhile, tip the spices into a pan and warm briefly to release their flavour. Tip in the tomatoes and stir in the onion, garlic, chilli, aubergine and kidney beans with their juice. Cover the pan and cook for 20 mins, stirring occasionally. Try not to add any extra liquid; the mixture should be quite dry. Stir in the coriander.
  • Meanwhile, beat the egg with the feta and fromage frais. Turn the peppers over and pile the aubergine mixture into each one, packing it down as much as you can. Top with the feta mixture and return to the oven for 10 mins more until the topping has lightly set. Don't worry if some of it flows off, as it will just set in the dish. Serve the peppers on the rocket with lime wedges for squeezing over.
