3 tablespoons crushed black peppercorns
2 (8 ounce) beef top sirloin steaks
1 tablespoon lemon pepper
1 teaspoon salt
5 tablespoons butter
2 cloves garlic, minced
½ cup red wine
3 tablespoons brandy
¼ cup chopped green onions
1 shallot, chopped
½ cup heavy cream
1 teaspoon white sugar

Steps:

  • Press crushed peppercorns into both sides of each steak. Sprinkle with lemon pepper and salt.
  • Melt butter in a large skillet over medium-high heat. Stir in garlic and wine, and cook for 1 minute. Arrange steaks in pan, and cook until desired doneness, about 5 minutes per side. Reduce heat to low.
  • Pour brandy onto steaks, and carefully light with a match. Let the flames burn off. Sprinkle green onion and shallot around the steaks, and circle the steaks with cream. Cook, stirring sauce, until hot. Transfer steaks to plates. Stir sugar into sauce, and then spoon over meat.

Number Of Ingredients 8

4 New York strip steaks, each about 1 1/2 inches thick
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 pounds wild mushrooms, trimmed, brushed clean with a towel and stemmed, caps left whole
Leaves from 2 sprigs fresh thyme
2 cloves garlic, chopped
1/4 cup brandy
1/2 cup heavy cream

Steps:

  • Heat 2 tablespoons oil in a large saute pan over medium-high heat until smoking. Sprinkle the steaks all over with salt and pepper. Put the steaks in the pan and cook, turning to brown all sides completely, until medium-rare, 8 to 10 minutes depending on how thick the steaks are. Remove the steaks to a platter with tongs and cover loosely with a tent of aluminum foil to keep the meat warm while you make the sauce.
  • Put the saute pan back over medium-high heat and add 1/4 cup olive oil. When the oil is smoking, add the mushrooms and cook, stirring, about 10 minutes, until golden brown. Then add the thyme and garlic, and season well with salt and pepper. Toss a few more times to cook the garlic, then dump the mushrooms out onto a platter. Take the pan off the heat, add the brandy, and cook until almost evaporated. Add the cream and cook that down 2 to 3 minutes until reduced by about one-half and thickened. Return the mushrooms to the pan with whatever juices have collected on the platter and simmer the whole thing another 2 minutes until thickened again. Season with salt and pepper.
  • Slice the steak thin against the grain. Taste the sauce for salt and pepper and serve.

1 pound baby red-skinned potatoes, halved
Kosher salt
1 1/4 pounds skirt steak
Freshly ground pepper
1 tablespoon extra-virgin olive oil
3 bell peppers (any color), thinly sliced
1/2 onion, thinly sliced
2 cloves garlic, thinly sliced
3 tablespoons tomato paste
3 tablespoons chopped fresh parsley
Juice of 1/2 lemon, plus wedges for serving

Steps:

  • Put the potatoes in a pot and cover with cold water by about 1 inch; add salt. Bring to a simmer and cook until fork-tender, about 8 minutes, then drain.
  • Meanwhile, cut the steak crosswise into 8 pieces and season with salt and pepper. Heat a large skillet over medium-high heat and add the olive oil. When hot, add the steak (in batches, if necessary) and cook until medium rare, 1 to 5 minutes per side, depending on the thickness. Transfer to a plate and tent loosely with aluminum foil.
  • Reduce the heat under the skillet to medium and add the bell peppers, onion, garlic, a splash of water and 1/4 teaspoon salt; cook, stirring often, until the vegetables are slightly soft, about 5 minutes. Add the tomato paste and cook, stirring, 1 minute. Increase the heat to medium high, add 3/4 cup water and simmer until the vegetables are tender, about 4 more minutes. Stir in the potatoes, parsley and lemon juice. Divide the steak among plates and serve with the vegetables and lemon wedges.

1 tablespoon whole black peppercorn, crushed
1/2 teaspoon salt
4 (5 ounce) beef tenderloin steaks, 1 1/4 inch thick (about , filet mignon)
1 tablespoon margarine or 1 tablespoon butter
1 tablespoon olive oil
1/4 cup dry white wine
2 tablespoons brandy
1/2 cup heavy cream or 1/2 cup whipping cream
1 tablespoon chopped fresh chives, plus whole chives for garnish

Steps:

  • In cup, mix peppercorns and salt.
  • Rub mixture all over steaks.
  • In nonstick 12" skillet, melt margarine with oil over medium high heat.
  • Add steaks and cook 14 to 16 minutes for medium-rare or until desired doneness, turning steaks over once.
  • Transfer steaks to 4 dinner plates;keep warm.
  • Add wine and brandy to skillet.
  • Heat to boiling, stirring until browned bits are loosened from bottom of skillet.
  • Add cream and boil about 1 minute or until sauce thickens.
  • Stir in chopped chives.
  • Pour over steaks.
  • Garnish with chives.
  • **You can use any tenderloin steaks--I've used this recipe with venison tenderloins and it was just as good**.

2 -4 trimmed strip steaks, 1 inch thick or 2 -4 filet mignon steaks, 1 1/2 inch
1 teaspoon salt
1 -2 tablespoon coarsely crushed peppercorn
1/4 cup unsalted butter, no substitutions
2 tablespoons lemon juice
1 teaspoon Worcestershire sauce
2 -4 ounces hot brandy per steak

Steps:

  • Steaks should have been out of refrigeration for at least 30 minutes.
  • Sprinkle bottom of a large heavy weight skillet with the salt and preheat using high heat.
  • Press the steaks into the crushed peppercorns and work it into both sides of the meat with the palm of your hand.
  • When skillet is well heated, add the steaks and quickly brown each side, uncovered.
  • Reduce heat to medium, turning steaks once and cooking to the desired degree of rareness (6-7 minutes per side for a medium to rare 1 1/2 inch thick filet).
  • In a separate pan combine and heat the butter, lemon juice and worcestershire.
  • Place cooked steaks on serving platter, pour heated butter mixture over steaks and flambe.
  • To flambe: Use 1 ounce of hot (not boiling but hot) brandy per steak.
  • Pour brandy over steak, light a match, and let the liquor burn out on its own.
  • Serve immediately.

2 tablespoons chopped dried mushrooms (cepes, porcini, (or morels)
1/4 cup hot water
2 trimmed thick skirt steaks (about 7 oz. each, 1 inch thick)
1 tablespoon vegetable oil
2 tablespoons minced shallots
3 fresh medium mushrooms, thinly sliced (1/2 cup)
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
1/4 cup dry red wine
2 tablespoons heavy cream

Steps:

  • Soak dried mushrooms in hot water 15 minutes. Drain mushrooms, reserving liquid. Rinse mushrooms thoroughly. Strain soaking liquid through coffee filter or paper towel.
  • Meanwhile, let steaks warm at room temperature 10-15 minutes.
  • Heat oil in heavy skillet over medium heat. Add steaks and saute, turning once, about 8 minutes for medium-rare. Remove to serving platter and cover loosely.
  • Pour off all but thin layer of fat from skillet. Heat over medium heat. Add shallots and cook, stirring constantly, just until wilted, about 30 seconds. Stir in both dried and fresh mushrooms and sprinkle with salt and pepper. Cook, stirring constantly, until lightly browned, about 3 minutes. Pour in wine and mushroom-soaking liquid. Boil until liquid is reduced by half. Stir in cream and any meat juices on plates. Taste and adjust seasonings. Spoon sauce over steaks and serve hot.

This is an absolute favorite of mine. I love Fillet Mignon with this sauce, but it is expensive. This is an inexpensive version and to even stretch the cost out even more, I serve this over toasted baguettes. Add a side of sauteed spinach or kale and my Recipe #406524. A very inexpensive, but yet flavorful meal.

2 lbs skirt steaks
rough ground black peppercorns
kosher salt
olive oil (to grill, either inside or out, or you can even a use frying pan)
1 loaf Italian bread, thin sliced
olive oil
2 teaspoons minced shallots
2 cups sliced cremini mushrooms (you can also use a white or button mushroom)
1 1/2 cups heavy cream
1/2 cup beef broth
1/3 cup brandy
2 scallions, fine chopped
1 tablespoon butter

Steps:

  • Steak -- Rub a little olive oil on the steak and season well on both sides with the peppercorns and salt. Now, I prefer using my indoor grill pan, to get some nice grill marks, but you could use an outdoor grill, or even a large saute pan, but you may have to cut the steaks in 2 pieces to get them to fit in a pan. You can even broil it, but I don't like the outcome as well. Cook to medium rare, for me (but cook it how you like it), and remember it will continue to cook after removing from the heat. About 5-7 minutes on the first side not quite as long on the second side (it depends on the thickness of your steak). Remove and cover with foil to let it rest.
  • Sauce -- In a small pot, melt the butter and saute the shallot and mushrooms until lightly tender. Add in the brandy (you can ignite it if you want or you do not have to). If you ignite it, please remember to remove from the heat before doing so. If you ignite it, please let it burn off a few seconds, and then add in the broth and simmer about 4 minutes until most of the liquid is absorbed. This is the perfect time as the steak is resting.
  • Bread -- Just brush or drizzle olive oil over the slices of bread and lightly toast on each side.
  • Finish the Sauce -- After most of the liquid has reduced, add in the cream and bring to medium heat. Don't boil! Just heat up the cream.
  • Steak -- Slice AGAINST the grain to ensure a tender steak.
  • Serve -- Just plate a couple of toasted baguettes on each plate and top with sliced steak. Top that with the creamy mushroom brandy sauce and chopped scallions as a garnish. ENJOY!
