PEPPER-CRUSTED STEAK WITH STRAWBERRY ZINFANDEL SAUCE AND ORANGE-MUSTARD AIOLI



Pepper-crusted Steak with Strawberry Zinfandel Sauce and Orange-Mustard Aioli image

1/4 cup stone ground mustard
1/4 cup prepared mayonnaise
Juice of 1 orange
Kosher salt and freshly ground black pepper

2 1/2 cups red Zinfandel wine
1/4 pint strawberries, cleaned and halved
1/2 cup orange-flavored liqueur
1/4 cup beef stock
1 tablespoon honey
2 (4 to 6-ounce) strip steaks
3 tablespoons freshly cracked black peppercorns
3 tablespoons olive oil, divided
1 head frisee lettuce, torn into bite-size pieces
1/2 red onion, thinly sliced
6 grape tomatoes, halved
1 Granny Smith apple, cored, and julienned
2 radishes, thinly sliced
Juice of 1/2 a lemon

Steps:

  • Preheat the oven to 350 degrees F.
  • Blend the mustard, mayonnaise, 1/4 of orange juice, and salt, and pepper, to taste in a food processor or blender.
  • In a saucepan, combine the wine with the strawberries, orange-flavored liqueur, beef stock, and honey. Bring it to a simmer over medium heat, and cook until its reduced by half. Pour the mixture into a blender and puree until smooth.
  • Coat the steaks in black peppercorns and season liberally with salt. Heat 1 tablespoon olive oil in an oven-proof saute pan over medium-high heat and sear the steaks for 2 minutes on each side, then transfer the pan to the oven, and cook for 8 minutes or until desired degree of doneness.
  • While the steak is cooking, mix together the frisee, red onion, tomatoes, apples, and radishes in a bowl. Whisk together the remaining orange juice, lemon juice, and 2 tablespoons extra-virgin olive oil in a small bowl. Season the dressing with salt, and pepper, to taste. Add the dressing to the salad and toss to coat. Serve the steaks over a bed of the salad and top with the zinfandel sauce and a bit of the aioli.

Grilled Pepper Crusted T-Bone Steaks with Worcestershire-Chive Butter and Grilled Leeks with Herbed Vinaigrette image

1 tablespoon olive oil
1/4 cup finely chopped shallots
1 teaspoon finely chopped garlic
2 stick unsalted butter, at room temperature
1/4 cup Worcestershire sauce
2 tablespoons dry mustard
3 tablespoons finely chopped chives
Salt and freshly ground pepper
2 cups coarsely ground black peppercorns
3 tablespoons ancho chile powder
8 T-bone steaks, each 10 to 12 ounces
Olive oil
Salt
1 tablespoon Dijon mustard
1/4 cup white wine vinegar
1 tablespoon finely chopped shallots
1/3 cup minced assorted fresh herbs, (chives, parsley, tarragon, chervil)
1/2 cup extra virgin olive oil
Salt and freshly ground pepper
12 medium leeks, tough outer leaves discarded, trimmed, split lengthwise

Steps:

  • For the butter: Preheat grill or side burner. Heat oil in a medium skillet add shallots and garlic and cook until soft, let cool slightly. Place butter in a small bowl and add shallot mixture, Worcestershire, mustard and chives and mix until combined. Season with salt and pepper to taste. Scrape mixture into the center of a piece of waxed paper and roll into a log. Refrigerate until firm.
  • For the steaks: Preheat grill. Mix the peppercorns and ancho chile powder in a medium baking dish. Brush steaks with olive oil and season with salt. Dredge one side of the steaks in the pepper mixture and grill, pepper side down, until golden brown, about 5 to 6 minutes, turn over and continue grilling 6 to 7 minutes for medium-rare doneness. Remove from the grill and top with a slice of the butter.
  • For the vinaigrette: Whisk together the mustard, vinegar, shallots and herbs. Slowly whisk in the olive oil until emulsified. Season with salt and pepper to taste.
  • For the leeks: Preheat grill. Brush leeks with olive oil and season with salt and pepper to taste. Grill for 4 to 5 minutes on each side, until just cooked through. Remove to a platter and drizzle with the vinaigrette.

4 strips york steaks

1 teaspoons olive oil
1 units shallots
0.5 cups red wine
0.5 cups chicken broth
0.25 cups worcestershire sauce
1 teaspoons thyme
2 tablespoons unsalted butter

Steps:

  • Pat steaks dry with paper towels and season with salt. Rub one side of each steak with pepper. Heat oil in large skillet over med-high heat until just smoking. Place steaks, with peppered side down, in skillet and cook until well browned on both sides, 3-5 minutes per side. Transfer to plate and cover loosely with a foil tent.
  • Add shallot to empty skillet and cook until softened, about 1 minute. Add wine, broth, Worcestershire sauce and thyme. Simmer, scraping up browned bits with a wooden spoon, until reduced by half, about 5 minutes. Add any steak juices from plate, whisk in butter, and season with salt.
  • Pour sauce into a small pitcher or gravy boat and pass with steaks.
