Shrimp and Broccoli (Fast & Easy Dinner!) image

This ultra flavorful shrimp and broccoli comes together in minutes for a fast and easy healthy dinner! Serve with rice or over noodles.

1 pound large shrimp, deveined (peeled or unpeeled)
1 1/2 pounds (3 large heads) broccoli
1 small white onion
2 tablespoons rice vinegar
4 tablespoons soy sauce
1/2 tablespoon chili garlic sauce (optional)
2 tablespoons sesame oil (regular, not toasted)
1/4 teaspoon kosher salt
Sesame seeds, for garnish
Thinly sliced green onion, for garnish (optional)
To serve: rice or noodles (see notes above)

Steps:

  • If frozen, thaw the shrimp according to the package instructions or the notes above.
  • Chop the broccoli into small bite-sized pieces. Cut the onion into wide slices.
  • In a measuring cup, stir together the rice vinegar, soy sauce, and chili garlic sauce.
  • In large skillet or wok, heat the sesame oil over medium-high heat. Add the broccoli, onion and kosher salt and cook 5 to 6 minutes until fork tender, stirring occasionally. Add the shrimp and cook 3 to 4 minutes, stirring frequently.
  • When the shrimp is just about opaque, add the sauce mixture and cook 1 minute. Remove from the heat. Serve with sesame seeds.

These garlic grilled shrimp are dressed in an herby, garlicky marinade. Then grilled with perfectly charred marks in under 10 minutes. It's an easy yet delicious summer recipe. Watch the video above!

1 pound large shrimp
1/4 cup olive oil
1/4 cup fresh cilantro (finely chopped)
1/4 cup fresh parsley (finely chopped)
4 cloves garlic (minced)
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
pinch cayenne pepper (adjust to spice preference)

Steps:

  • Add the olive oil, lemon juice, herbs, garlic, and spices to a small mixing bowl and whisk together.
  • Place the shrimp in a bowl and pour 3/4 of the marinade on top of the shrimp. Mix together gently until the shrimp are well coated.
  • Cover the bowl and marinate the shrimp for 30 minutes to an hour.
  • Thread the shrimp on the skewers and make sure to get all the good garlic and herbs from the bowl and spread on to the shrimp.
  • Heat a grill or grill pan on medium high heat.
  • Once the grill is hot, place the shrimp skewers on the grill and cook the shrimp for 2-3 minutes each side, or until they turn pink and opaque.
  • Remove the shrimp to a plate and spoon the remaining marinade on top before serving.

8 ounces spaghetti
Coarse salt
2 tablespoons peanut butter
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon light-brown sugar
32 large frozen shrimp, (1 1/2 pounds), peeled, deveined, thawed
Garlic-Chili Oil
1 1/2 pounds (1 to 2 heads) broccoli, cut into florets, stems peeled and sliced 1/2 inch thick

Steps:

  • Make peanut noodles: Cook spaghetti in a large pot of boiling salted water until al dente, according to package instructions; drain and rinse with cool water.
  • In a large bowl, whisk together peanut butter, soy sauce, vinegar, and brown sugar until smooth. Add spaghetti, season with salt, and toss to combine; set aside.
  • Make shrimp skewers and broccoli: Heat broiler, with rack set 4 inches from heat. Thread shrimp onto 8 skewers (4 shrimp each); transfer to a broiler pan or broilerproof baking sheet. (If using bamboo or wooden skewers, cover exposed parts with aluminum foil to prevent scorching.) Dividing evenly, spoon 2 tablespoons garlic-chile oil onto shrimp; set aside.
  • Place broccoli, 1 tablespoon Garlic-Chili Oil, and 3/4 cup water in a large skillet. Simmer, covered, over medium heat, until tender, 5 to 7 minutes.
  • Meanwhile, broil shrimp until opaque throughout, 3 to 4 minutes. Serve with noodles and broccoli; drizzle all with remaining garlic-chile oil.

Place flat side of knife blade on top of garlic, with sharp blade facing away from you; press down firmly, pulling knife toward you. Repeat until a paste forms. Combine in a small bowl with vegetable oil Makes 5 Tablespoons.

2 cups fresh broccoli florets
1 tablespoon water
2 tablespoons peanut oil
4 large cloves garlic, minced
1 cup low-sodium chicken broth
1 tablespoon soy sauce
1 tablespoon oyster sauce
2 teaspoons grated fresh ginger root
1 pound uncooked medium shrimp, peeled and deveined
¼ cup canned water chestnuts, drained
2 tablespoons cornstarch

Steps:

  • Combine broccoli and water in a glass bowl; steam in microwave oven until slightly tender, 2 to 3 minutes.
  • Heat peanut oil in a large skillet or wok over medium-high heat. Cook garlic in hot oil until fragrant, about 1 minute. Reduce heat to low; add chicken broth, soy sauce, oyster sauce, and ginger root to the garlic. Bring the mixture to a boil and add the shrimp; cook and stir until the shrimp turn pink, 3 to 4 minutes. Toss steamed broccoli and water chestnuts with the shrimp mixture to coat with the sauce. Stir cornstarch into the mixture 1 tablespoon at a time until the sauce thickens, about 5 minutes.
