Cauliflower and whole garlic cloves roasted with Parmesan and bread crumbs make this a healthier than most comfort food.

1 medium head cauliflower, cut into bite-sized florets
5 cloves garlic, peeled and smashed
2 tablespoons olive oil, or more to taste
¼ teaspoon salt
¼ teaspoon ground black pepper
1 (16 ounce) package penne pasta
1 cup grated Parmesan cheese
¼ cup seasoned bread crumbs
1 teaspoon ground cayenne pepper
2 tablespoons salted butter
¼ cup lemon juice

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Toss cauliflower with garlic cloves, olive oil, salt, and pepper in a large bowl. Spread out in an even layer on a baking sheet.
  • Roast in the preheated oven, tossing at least twice, until cauliflower is tender, about 30 minutes.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
  • Mix Parmesan cheese, bread crumbs, and cayenne pepper together in a bowl; set aside.
  • Drain pasta, reserving 1/2 cup cooking water. Transfer pasta to a serving bowl and add cauliflower and butter. Stir in cooking water, a little at a time, until desired creaminess is reached. Add lemon juice and bread crumb mixture, toss, and serve.

2 1/2 cups chicken stock
Generous pinch saffron threads
Kosher salt
1 head cauliflower, cored
1 tablespoon EVOO
1 pound bulk Italian sweet sausage
3 to 4 cloves garlic, finely chopped
1 yellow onion, finely chopped
1/2 cup dry white wine
1 bay leaf
1 thin cinnamon stick (2 to 3 inches long)
One 28-to-32 ounce can whole San Marzano tomatoes (look for the DOP label)
Freshly ground pepper
1 pound penne rigate
1 cup heavy cream
8 ounces mild provolone, caciocavallo or young Asiago cheese, shredded
1/2 cup grated Parmigiano-Reggiano
1/2 cup grated pecorino
Chopped fresh flat-leaf parsley, for serving

Steps:

  • Preheat the oven to 400 degrees F. Heat the stock with the saffron in a small saucepan over medium heat.
  • Meanwhile, bring 1 1/2 cups water to a boil in a pot and season with salt. Add the cauliflower, cover and steam until tender, about 12 minutes. Drain and break into florets.
  • Heat the EVOO in a Dutch oven over medium-high heat. Add the sausage and crumble it into very small pieces with a potato masher or wooden spoon. Add the garlic and onions and cook for 5 minutes. Deglaze with the wine, stirring and scraping up any browned bits from the bottom of the pot with a wooden spoon. Add the bay leaf, cinnamon stick, tomatoes and saffron stock and stir to break up the tomatoes. Simmer until thickened, about 30 minutes. Discard the bay leaf and cinnamon stick and season with salt and pepper.
  • Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook to just shy of al dente, about 7 minutes. Reserve a ladle of the starchy cooking liquid and drain the pasta.
  • Return the pasta to the pot. Add the heavy cream, cauliflower, sausage sauce and
  • a little of the reserved cooking liquid and stir to combine. Transfer the mixture to a casserole dish and top with the cheeses and parsley. Bake until the top is browned, 35 to 40 minutes. Divide among plates.
  • Cook's Note: The unbaked casserole can be covered and refrigerated for a make-ahead meal. Bake as directed before serving.

1 medium head cauliflower, cut into bite-sized florets
2 tablespoons olive oil
2 cloves garlic, minced
¼ cup butter
¼ cup all-purpose flour
1 (16 ounce) package penne pasta
4 cups hot skim milk
1 cup grated Romano cheese
½ teaspoon ground nutmeg
½ teaspoon salt
2 medium tomatoes, seeded and diced
freshly cracked black pepper to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Toss cauliflower with olive oil. Transfer to a baking sheet.
  • Roast in the preheated oven for 15 minutes. Sprinkle garlic over cauliflower and toss to combine. Continue to cook until cauliflower is tender and beginning to brown, about 5 minutes longer. Remove from the oven.
  • While the cauliflower is roasting, melt butter in a skillet over medium-low heat, and bring a large pot of lightly salted water to a boil.
  • Add flour to the melted butter and stir until smooth. Increase heat to medium and cook, stirring often, until mixture turns a light, golden color, about 5 minutes.
  • At the same time, cook penne in the boiling water, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and reserve about 1/4 cup pasta water.
  • Add hot milk, 1 cup at a time, to the butter mixture, whisking continuously until very smooth. Bring to a boil. Cook, stirring constantly, for 10 minutes. Stir in Romano cheese and remove from the heat. Season with nutmeg and salt and set aside until ready to use.
  • Combine penne, roasted cauliflower, bechamel sauce, and tomatoes in a large bowl. If the sauce is too thick, stir in a little of the reserved pasta water. Serve immediately with black pepper.

10 ounces penne pasta
1 medium head cauliflower, separated and cut into bite-sized pieces
6 scallions, cut into 1-inch pieces
8 large plum tomatoes, seeded and cut into bite-sized pieces
Extra virgin olive oil
3 slices thick-cut bacon, cut into 1/2-inch pieces
2 tablespoons onion, finely chopped
4 to 5 cloves garlic, finely chopped (2 to 3 teaspoons)
2/3 cup panko crumbs or fresh bread crumbs
1/4 cup flat leaf parsley, chopped
Salt and freshly ground black pepper
Romano or Parmesan cheese for grating

Steps:

  • Preheat the oven to 400°F and put a pot of salted water on to boil for the penne. Spray 2 baking sheets with nonstick spray and arrange the cauliflower on one and the scallions and tomatoes on the other. Drizzle the veggies with a little bit of olive oil, then season lightly with salt and pepper. Place the cauliflower in the oven first and roast for ten minutes. Remove and turn the pieces for even browning. Return to the oven along with the tomato-scallion tray and roast until the cauliflower is tender when pierced with a knife and the tomatoes and scallions begin to brown, about 8 to 12 minutes. Remove from the oven and set aside. While the vegetables roast, add the pasta to the boiling water and make the garlic-bacon crumbs. Cook the bacon in a large pan until crisp. Transfer to a paper towel-lined plate. Drain the excess fat from the pan, but don't wipe it out. Add about 2 tablespoons of olive oil and heat over medium heat. Add the onion and cook until soft, about 1 minute. Add the garlic and continue cooking until soft and fragrant, about 1-1/2 minutes (do not allow it to brown). Add the crumbs and cooked bacon and continue cooking for another minute, until the crumbs are very lightly toasted. Remove from the heat and add the parsley. Drain the pasta and return it to the pan. Add the roasted vegetables, drizzle with a little olive oil and and toss to combine. Add the garlic-bacon crumbs and toss again. Season to taste with salt and freshly ground black pepper. Divide the pasta between 4 plates, grate some cheese on top and serve.

Pan-Roasted Cauliflower With Garlic, Parsley and Rosemary image

Nearly any vegetable tastes good browned in olive oil and showered with garlic, parsley and rosemary, but cauliflower is an especially good candidate for this technique. The inherent sweetness of cauliflower begs for a hit of lemon and hot pepper too. Serve hot or at room temperature.

2 medium cauliflower heads (about 2 pounds)
3 tablespoons extra-virgin olive oil
Salt and black pepper
1/2 teaspoon crushed red pepper, or to taste
1 teaspoon grated or finely minced garlic
1/2 teaspoon freshly chopped rosemary
1/2 cup roughly chopped parsley
1/2 teaspoon grated lemon zest
1/4 cup roasted salted almonds (homemade or store bought), roughly chopped
1 red fresno chile, thinly sliced, for garnish (optional)
Lemon wedges, for serving

Steps:

  • Cut each cauliflower in quarters and remove the core. Cut quarters into 1/2-inch-thick slices. Chop down wider slices so all are approximately the same jagged size.
  • Heat olive oil in a heavy wide skillet over medium-high heat. When oil is hot, add cauliflower and toss to coat using a metal spatula or flat wooden spoon. Season generously with salt and pepper.
  • Keeping heat brisk, repeatedly turn the cauliflower, letting the slices brown as they cook. Adjust heat as necessary to keep them sizzling nicely but not scorching. Continue to stir and flip the cauliflower until it is tender when pierced with a fork, 10 to 12 minutes.
  • Add crushed red pepper, garlic, rosemary, parsley and lemon zest. Stir well to coat and cook 1 minute more. Check seasoning, then transfer to a serving platter. Sprinkle with almonds and fresno chile, if using, and serve with lemon wedges.
