c. pine nuts (pignoli)
1 lb. penne pasta
3 large cloves garlic
1 1/4 lb. red Swiss chard (or a mix of white-yellow- and red-stemmed chards)
1 c. chicken broth
1/2 tsp. salt
1/2 c. oil-marinated sun-dried tomatoes
1 tbsp. balsamic vinegar

Steps:

  • Bring a large pot of lightly salted water to a rapid boil.
  • Heat 1 tsp oil in a large nonstick skillet over medium-high heat. Add pine nuts; sauté 2 to 3 minutes until toasted. Remove to a small bowl.
  • Stir penne into boiling water. Boil, stirring occasionally, 7 to 9 minutes until firm-tender.
  • Meanwhile heat remaining 2 tsp oil in same skillet over medium-high heat. Add garlic; sauté 1 minute or until fragrant. Add chard stems, broth and salt. Cover and cook 1 to 2 minutes until crisp-tender. Add chard leaves, cover and, stirring once, cook 4 to 5 minutes until wilted.
  • Drain pasta and return to pot; toss with chard, pine nuts, tomatoes and vinegar. Pour into serving bowl. Sprinkle servings with cheese. Serve with shredded Parmesan cheese.

1/2 cup sun-dried tomato packed in oil, drained, cut in narrow strips
1 tablespoon balsamic vinegar
shredded parmesan cheese

Steps:

  • Bring large pot of lightly salted water to a rapid boil.

1 pound Swiss chard, stems cut from the leaves and the stems and leaves chopped separately
1/8 teaspoon dried hot red pepper flakes, or to taste
3 large garlic cloves sliced thin
2 tablespoons olive oil
1/2 cup water
1 cup drained canned tomatoes, chopped
1/2 pound penne or other tubular pasta
1/4 cup freshly grated Parmesan plus additional as an accompaniment

Steps:

  • Rinse and drain separately the Swiss chard stems and leaves. In a large heavy skillet cook the red pepper flakes and the garlic in the oil over moderate heat, stirring, until the garlic is pale golden, add the stems and 1/4 cup of the water, and cook the mixture, covered, for 5 minutes, or until the stems are just tender. Add the leaves with the remaining 1/4 cup water and salt and pepper to taste and cook the mixture, covered, for 5 minutes. Stir in the tomatoes and cook the mixture, covered, for 3 minutes, or until the leaves are tender.
  • While the chard is cooking, in a kettle of salted boiling water boil the penne until it is al dente and drain it in a colander. In a large bowl toss the penne with the chard mixture and 1/4 cup of the Parmesan and serve it with the additional Parmesan.

I like this recipe - both with currants & golden raisins. Finding this in the New York Times helped me decide to go for the Misticanza di Bietole da Costa chard mix to get red, white, green & yellow chard all at once. Advance preparation: You can make this several hours before serving. Reheat gently on top of the stove if you want to serve it hot. The blanched greens will keep in a covered bowl in the refrigerator for 3 or 4 days.

2 lbs swiss chard (stemmed and washed in several changes of water, stems diced and set aside)
2 tablespoons olive oil
2 garlic cloves, minced (to taste)
3 tablespoons pine nuts
3 tablespoons currants or 3 tablespoons golden raisins
1/2 teaspoon kosher salt
1/2 teaspoon black pepper, freshly ground

Steps:

  • Place the raisins or currants in a bowl and pour on hot water to cover. Soak 10 minutes and drain.
  • Fill a bowl with ice water. Bring a large pot of generously salted water to a boil and add the chard. Cook for 1 to 2 minutes, until just tender. Transfer to the bowl of ice water and let sit for a few minutes. Drain and squeeze out as much water as you can. Chop coarsely.
  • Heat the oil over medium heat in a large, heavy nonstick skillet. Add the chard stems and cook 3 to 5 minutes, until tender. Add the pine nuts and cook, stirring, until they begin to color, 2 to 3 minutes. Add the garlic and cook, stirring, about 1 minute or just until the garlic begins to smell fragrant. Add the chopped greens and raisins or currants and toss together until they are well coated with oil and heated through, 2 to 3 minutes.
  • Season to taste with salt and pepper, and serve, or allow to cool and serve at room temperature.

1 tablespoon olive oil
3/4 pound mild Italian sausage, casings removed
1 pound Swiss chard, tough stems removed, leaves cut into thin strips
2 garlic cloves, minced
Salt and pepper
1 pound gemelli, or other short pasta
3/4 cup raisins, plumped in boiling water and drained
1/4 cup freshly grated Parmesan cheese, plus more for serving

Steps:

  • In a large skillet, toast pine nuts over medium-high heat, shaking the pan to toast evenly, 3 to 4 minutes. Remove from skillet.
  • In the same skillet, heat oil over medium-high heat. Add sausage, and cook, breaking it up with a fork, until browned, about 5 minutes. Add chard, garlic, and pepper; cook, tossing, until chard wilts, 2 to 3 minutes. Cover to keep warm.
  • In a large pot of boiling salted water, cook pasta until al dente, according to package instructions, about 12 minutes. Drain pasta, reserving 1 cup cooking water. Return pasta to pot.
  • Add sausage mixture to pasta with 1/2 cup reserved cooking water, raisins, toasted pine nuts, and Parmesan; toss to combine. Add more cooking water if pasta seems dry. Serve with more Parmesan.

  • Tear chard leaves from stems, then coarsely chop stems and leaves separately.

1/2 pound Swiss chard
3 tablespoons extra-virgin olive oil
1 medium onion, sliced
2 cloves garlic, sliced
2 ounces of prosciutto, slivered
6 ripe plum tomatoes, sliced
Salt and freshly ground black pepper
1 pound penne
Freshly grated Parmesan cheese

Steps:

  • Rinse the Swiss chard and chop it fine.
  • Heat the oil in a large skillet. Add the onion and saute until tender. Stir in the garlic and prosciutto. Saute briefly, then add the tomatoes. Cook until they soften. Add the Swiss chard and continue cooking over medium heat, stirring, until the Swiss chard is nearly tender. Season to taste with salt and pepper.
  • While the swiss chard is cooking, bring a large pot of salted water to a boil for the penne. Cook the penne until al dente, about seven minutes. Drain.
  • Transfer the penne to a warm bowl, add the Swiss-chard mixture and toss to combine the ingredients. Serve with grated Parmesan cheese.

  • While Swiss chard mixture is cooking, cook pasta in boiling water until al dente and drain in a colander. Add pasta to Swiss chard mixture with red pepper flakes, cream, and nutmeg and cook, stirring, 1 minute. Remove skillet from heat and stir in Parmesan and salt and pepper to taste.
