1 (8 inch) tortillas
1/3 cup shredded havarti cheese
2 tablespoons toasted pecans
pear preserves

Steps:

  • Sprinkle one side of tortilla with Havarti cheese.
  • Top with pecans.
  • Fold tortilla over filling.
  • Coat a non-stick skillet with cooking spray and cook quesadilla over medium high heat for 2 minutes each side or until cheese melts.
  • Slice into wedges and serve with pear preserves.

1/3 cup shredded Havarti cheese per tortilla
2 T chopped toasted pecans
Pear (or other) preserves

Steps:

  • Sprinkle half of tortilla with cheese, top with 2 T pecans, fold over filling. Heat non-stick skillet w/cooking spray and heat tortilla over medium high heat for 2 minutes on each side or until cheese melts. Cut inti wedges and serve with preserves. Good with Cabernet

16 cups peeled sliced fresh pears (about 16 medium)
4 cups sugar
2 cups water
3 tablespoons lemon juice

Steps:

  • In a stockpot, combine pears, sugar, water and lemon juice; bring to a boil. Cook, uncovered, 1-1/2 to 2 hours or until mixture reaches a thick, spreadable consistency.
  • Remove from heat. Ladle hot mixture into seven hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight.
  • Place jars into canner, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool. Yield: 7 half-pints.
