- In a large bowl, combine the oats, brown sugar, butter, 1/2 cup peanut butter, corn syrup and vanilla. Press into a greased 13x9-in. baking pan. Bake at 375° for 12-14 minutes or until mixture is bubbly around the edges., In a microwave-safe bowl, melt butterscotch and chocolate chips; stir until smooth. Stir in peanuts and remaining peanut butter; spread over the oat mixture. Cool for 10 minutes; chill until set.

- In a large microwave-safe bowl, combine peanut butter and honey. Heat, uncovered, until warmed, 20-30 seconds. Stir until smooth; add remaining ingredients and stir until combined. Transfer to a lightly greased 13x9-inch pan; gently press mixture into pan. Cover and refrigerate until set, 1 hour or overnight. Cut into bars.

Steps:
- Lightly grease an 8-inch square dish.
- In a large bowl mix together the first six ingredients.
- In another bowl mix together the peanut butter, brown sugar and corn syrup; microwave on HIGH for 2 minutes, add in vanilla and mix well to combine.
- Add in the dry mixture and stir with a wooden spoon to coat well.
- Transfer to prepared baking dish, and using clean oiled hands press down the mixture in the pan.
- Let stand room temperature for 1 hour before slicing (if you can wait that long LOL!).
- Cut into bars.

CHEWY CHOCOLATE PEANUT BUTTER BARS
Steps:
- Preheat the oven to 350 degrees F. Grease a 9-inch square pan with cooking spray and line with parchment so that wings come up the sides by 1 inch.
- In a large pot, combine the sugar, corn syrup, vanilla and salt over medium heat and cook until the sugar is melted. Stir in the peanut butter, then the cereal. Pour into the prepared pan and pack it down firmly and evenly with a spatula. Scatter the chocolate chips and butterscotch chips all over the top.
- Bake until the chips are melty, about 3 minutes. Use an offset spatula to spread the melted chips in an even layer all over the top. Sprinkle with flaky salt and sprinkles if using and allow to set at room temperature or in the fridge. Slice into 25 squares.
OATMEAL PEANUT BUTTER ENERGY BARS

- Spray a 9 by 13-inch baking dish with cooking spray and set aside.
- In a small saucepan over medium heat, combine honey, peanut butter, maple syrup, canola oil, brown sugar, cinnamon. Stir and cook until mixture just begins to bubble, about 3 to 5 minutes. Remove from heat and stir in vanilla extract.
- In a large bowl, combine oats, rice cereal, wheat germ, peanuts, apricots, figs and salt.
- Pour peanut butter mixture over oatmeal mixture and stir gently with a spatula until well combined. Transfer to baking dish, cover with parchment paper and press firmly into dish. Allow to cool completely (will cool faster in the refrigerator). Cut into squares or bars.

- In a large bowl, mix together the first five ingredients, plus the wheat germ if desired, and set aside.
- In a medium microwaveable bowl, combine the peanut butter, brown sugar and corn syrup; microwave on high for two minutes. Add vanilla and stir until blended.
- Pour the peanut butter mixture over the dry ingredients and stir until coated.

- Add dates and peanut butter to a food processor. This is the food processor that I use. Blend until you get a somewhat cohesive, sticky and crumbly mixture, like chunks of wet sand/dough. This will take about a minute. Scrape down the sides of the processor as needed.
- Add in peanuts, vanilla and salt (if using). Blend until the peanuts are fully-incorporated and you get a soft, crumbly mixture, with a few small bits and pieces of peanuts still visible. It’s ready when you can pinch the mixture between your fingers and it holds together when you release it.
- Pour this mixture into the prepared baking pan. Using a rubber spatula, press down and smooth into a tightly-packed, even layer.
