- In a small bowl, combine the first five ingredients; set aside. In a large skillet, saute the chicken, garlic and ginger in oil for 5 minutes. Add peanut butter mixture. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until chicken juices run clear, stirring frequently., Serve with rice; sprinkle with green onions if desired.

- Combine the salsa, peanut butter, coconut milk, lime juice, soy sauce, sugar, and ginger in the crock of a slow cooker; mix well. Place the chicken in the sauce, spoon mixture over chicken to coat.
- Place the lid on the cooker and set to LOW. Cook until chicken is very tender and sauce has thickened, 8 to 9 hours. A meat thermometer, inserted into the thickest part of a thigh should read at least 160 degrees F (70 degrees C). Garnish with peanuts and cilantro before serving.

- Preheat oven to 400 degrees F. Spray a 9x13 inch pan with nonstick spray. Arrange chicken in a single layer.
- Combine dressing, salsa, basil, peanut butter, and sesame oil in a bowl. Pour over chicken and make sure all pieces are well covered with sauce.
- Bake uncovered for 35-40 minutes or until sauce is bubbly and chicken is not pink in the centre.
- Sprinkle with green onion.
- Serve with rice.
