FRIED OKRA



Fried Okra image

The okra is dredged in this light cornstarch batter and fried until puffy, golden and brown, and delicious. This is the perfect batter for fried okra!

2 pounds fresh okra
¾ cup cornstarch
1 teaspoon baking powder
¼ cup all-purpose flour
Kosher salt and freshly cracked black pepper (to taste)
½ cup water
1 egg (slightly beaten)
peanut oil (for frying)

Steps:

  • In a medium bowl, stir the cornstarch, baking powder, and flour with a whisk; season with salt and pepper. Next, whisk in the egg and water until smooth. Place the cornstarch mixture inside the refrigerator for 15 to 20 minutes.
  • In the meantime, rinse the okra and pat dry with paper towels. Slice the stems off; discard (You may also cut them into bite-size pieces if you wish). After at least 15 minutes, remove the batter from the refrigerator.
  • Heat peanut oil in a frying pan (enough for them to float - approximately ½-inch deep) until the end of a wooden spoon produces bubbles or the oil is 350 degrees F.
  • Working in small batches, dip okra into the batter. Allow excess to drip off into the bowl. Carefully place individual pieces of okra into the hot oil (do not overcrowd the pan). Cook the okra in the hot oil, until crispy and light golden brown, about 1 to 2 minutes.
  • Remove the fried okra from the oil with a spider or slotted spoon and allow them to drain on a couple of paper towels. While still hot, season the okra with additional salt if desired.

MEDITERRANEAN-STYLE OKRA RECIPE

Okra and tomatoes prepared Mediterranean-style with onions, garlic, hot peppers, warm spices and a splash of lime juice. This quick-cooked vegan okra stew is the perfect combination of savory, tangy, and just a little bit spicy. You can use 1 or 2 jalapenos, depending on how spicy you like your food. And if you need it a little more tangy, add more lime juice!

Extra virgin olive oil
1 small onion (chopped (1 cup chopped onion))
4 garlic cloves (minced)
2 small green chiles such as jalapeno (chopped)
1 lb frozen or fresh cut okra (sliced into rounds (or small whole okra, trimmed) )
Salt and pepper
1 tsp ground allspice
½ tsp coriander
½ tsp paprika
1 ½ cup crushed tomatoes
½ cup water
1 tomato (sliced into rounds)
Juice of ½ lime (more to your liking)

Steps:

  • Heat the olive oil in a large skillet (or pan with a lid) over medium-high until shimmering but not smoking. Lower the heat to medium and add the onions, garlic and chopped jalapeno peppers. Cook for 4 to 5 minutes stirring regularly (do not let the garlic burn, if needed adjust heat).
  • Add the okra and sautee for 5 to 7 minutes over medium-high heat.
  • Season with kosher salt, black pepper and spices. Toss to coat.
  • Add the crushed tomatoes and water. Stir to combine. Add the tomato slices on top. Bring to a boil, then turn the heat to low and cover most of the way (leave a little opening at the top). Let the okra simmer on low heat for 20 to 25 minutes or until the okra has softened. Uncover and add juice of ½ lime (more to your liking).
  • Remove from heat and serve over rice or with warm pita bread.

PEANUT BUTTER OKRA

This is an adaptation to an Egyptian dish native to Alexandria. The original recipe calls for dried okra and no peanut butter. Our cook when I was growing up didn't have dried okra one day and thought that adding some roasted peanuts, (that she crushed and re crushed till they were as smooth as peanut butter, (we didn't have peanut butter in Egypt in the 1960s)) would give the flavor of dried okra to the fresh okra, which they did. It tasted even better with the processed peanuts that we never went back to the dried okra. And of course with peanut butter it is much easier.

2 tablespoon(s) peanut butter
1 teaspoon(s) garlic, minced
1 tablespoon(s) ground coriander
1 can(s) tomato sauce (8 oz)
1/4 teaspoon(s) cayenne pepper (or to your liking)
2 cup(s) chicken broth (or bouillon and water
1 bag(s) frozen okra

Steps:

  • In a saucepan over medium low heat, add the peanut butter and heat till melted. then add the garlic, coriander and cayenne pepper and stir. The peanut butter will harden a bit to a paste consistency,
  • Add the tomato sauce bit by bit and stir it into the paste till you have no lumps. Add the broth (or water and bouillon) and bring to the boil
  • Add the okra and bring it back to boiling then lower the heat and cover. Let it simmer, stirring from time to time till the okra is very tender. (45 to 60 minutes)
  • Using an immersion blender process the okra till you have a thick creamy sauce. Serve with pita bread or your favorite bread.

SESAME CRUSTED CATFISH WITH GEECHEE PEANUT SAUCE AND SAUTEED OKRA



Sesame Crusted Catfish with Geechee Peanut Sauce and Sauteed Okra image

1 cup whole sesame seeds
2 cups cornmeal
Salt and pepper
4 catfish fillets, skinless
Peanut oil, for sauteeing
1 cup sliced okra
Geechee Peanut Sauce, recipe follows
1 tablespoon bacon fat
1/4 cup small-diced green pepper
1/4 cup small-diced red pepper
1/2 cup small-diced celery
1 cup small-diced onion
1/2 teaspoon salt
1/8 teaspoon white pepper
2 tablespoons red wine
1/2 cup chicken stock
1 tablespoon brown roux, recipe follows
2 tablespoons peanut butter
1 1/2 cups tomato puree
2 tablespoons butter
1 tablespoon flour

Steps:

  • Grind 1/2 cup sesame seeds in spice grinder into a rough powder. Leave the other 1/2 cup whole. Combine the sesame powder, sesame seeds, cornmeal, and salt and pepper and place in a shallow bowl.
  • Dredge catfish fillets in sesame-cornmeal mix and saute in hot peanut oil until golden brown. Remove catfish, keep warm. Empty skillet of oil and crusty cornmeal. Add new oil to hot pan and saute the fresh sliced okra until it becomes slightly brown, about 8 minutes.
  • Place the geechee sauce on the plate and put catfish fillets on top of that. Add another ladle of geechee sauce and put Sauteed okra on top.
  • Sweat the peppers, celery, and onion in bacon fat until the onions are translucent. Season with salt and pepper. Add red wine and reduce by 1/3. Add tomato and stock. Whisk in roux and peanut butter. Check seasoning. Let simmer for 30 minutes.
  • Melt the butter in a saute pan. When the butter is melted, add the flour and stir to combine. Cook slowly over low heat, stirring constantly, until the roux gets dark brown, about 15 to 20 minutes. Don't rush it or the roux could burn and become bitter tasting.

CHICKEN STEW WITH OKRA

1 (3- to 3 1/2-lb) chicken, cut into 10 serving pieces
1 teaspoon salt
1 (14- to 15-oz) can whole tomatoes in juice
1/4 cup water
2 tablespoons tomato paste
1/4 cup peanut or palm oil
1 medium onion, chopped
4 garlic cloves, minced and mashed to a paste with 1 teaspoon salt
1 1/4 teaspoons cayenne
1/2 cup smooth peanut butter at room temperature
1 3/4 cups reduced-sodium chicken broth (14 fl oz)
1 lb sweet potato
1 (10-oz) box frozen small okra, thawed
Accompaniment: rice

Steps:

  • Arrange chicken in 1 layer on a tray, then sprinkle with salt and let stand at room temperature 30 minutes.
  • While chicken stands, pulse tomatoes with their juice in a food processor until finely chopped.
  • Stir water into tomato paste in a small bowl until smooth.
  • Pat chicken dry. Heat oil in a 10- to 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown chicken, without crowding, in 3 or 4 batches, turning over occasionally, until golden, about 6 minutes per batch. Transfer with tongs as browned to a 6- to 7-quart heavy pot. Pour off all but 2 tablespoons fat from skillet, then add onion and cook over moderate heat, stirring occasionally, until edges are golden, 2 to 3 minutes.
  • Add onion, chopped tomatoes, tomato paste mixture, garlic paste, and cayenne to chicken in pot.
  • Whisk together peanut butter and 1 cup broth in a bowl until smooth, then add to chicken along with remaining 3/4 cup broth, stirring to combine well (chicken will not be completely covered with liquid). Bring to a boil, uncovered, then reduce heat and simmer, covered, stirring occasionally (to prevent sticking), until chicken is very tender, 25 to 30 minutes.
  • Peel sweet potato and cut into 1-inch chunks. Stir into stew along with okra, then simmer, covered, until potato is tender but not falling apart, 10 to 12 minutes.

LOWCOUNTRY OKRA SOUP



Lowcountry Okra Soup image

Representing ingredients from at least four continents and five spiritual traditions, this okra soup is a true amalgamation of global culinary influences, from West Africa to Peru, all of which intersect in the Lowcountry kitchen. This version belongs to Amethyst Ganaway, a chef and writer of Gullah Geechee ancestry, a direct descendant of people once enslaved on the lower Atlantic Coast. Ms. Ganaway's okra soup is not your Louisiana-style gumbo, thick with roux and rich with sausage and shrimp. It's a simple, wholesome dish that, like the best Gullah Geechee cooking, emphasizes the freshness of its ingredients. As Ms. Ganaway advised, "The okra will naturally thicken the broth, and the fresher it is, the better it'll do the job.'' Since the vegetable is cooked for just 10 minutes, it grows tender but not slimy, while the pod's caviar-like seeds add a textural pop with every bite.

2 tablespoons neutral oil
2 pounds turkey necks
1 pound smoked turkey leg or thigh meat
1 medium white or yellow onion, quartered
Salt
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon ground cayenne
1/2 teaspoon freshly ground black pepper
15 ounces (fresh or canned) diced tomatoes (about 2 cups)
1 pound okra (fresh or frozen), trimmed and sliced into 1/2-inch pieces
3 ears sweet corn, sliced off the cob
2 cups cooked fresh or canned butter beans (about 15 ounces), drained
Freshly cooked long-grain white rice, cornbread and hot sauce, for serving

Steps:

  • Set an 8-quart Dutch oven or similar pot over medium-high heat. When it is hot, add oil. When oil shimmers, lay in turkey necks and sear until evenly golden brown, about 4 minutes per side.
  • Add 4 quarts water, smoked turkey, onion and a generous pinch of salt. Bring to a boil, then reduce to a heavy simmer, with the lid ajar to ensure the pot doesn't boil over. Check pot every 30 minutes to remove any scum that forms, and add water as needed to ensure that the meat is always submerged. Cook for about 3 hours or until all the meat is tender and broth is flavorful.
  • While it's traditional to leave onion and bones in the soup (and suck meat off turkey neck as you eat), you can strain broth, remove onion and pick meat off bones at this point if desired, returning meat to broth. Either way, reduce broth to about 3 quarts, then stir in onion powder, paprika, cayenne and pepper, and season to taste with salt.
  • Stir in tomatoes, then simmer uncovered for 20 minutes. Taste, and adjust seasoning for salt, then add okra, reduce heat to low and cook until okra is just tender, not mushy, and still has bite to it, no more than 10 minutes. The okra will naturally thicken the broth as it cooks.
  • Stir in corn and beans, cook for another minute or 2, then serve immediately with rice, cornbread and hot sauce. Refrigerate leftovers for up to 5 days, or freeze for up to 1 month. Return to a boil for 3 minutes before serving.
