1/3 cup sour cream
1 tablespoon chopped fresh chives
1 16-ounce package frozen potato-cheese pierogi
1 5-ounce package baby spinach
1 tablespoon unsalted butter
3 tablespoons whole-grain mustard
1 tablespoon extra-virgin olive oil
2 teaspoons Worcestershire sauce
1 1/4 to 1 1/2 pounds flank steak
Kosher salt and freshly ground pepper

Steps:

  • Preheat a grill to high. Whisk the mustard, olive oil and Worcestershire sauce in a small bowl. Season the steak with salt and pepper, then coat with half of the mustard mixture; let sit at room temperature 10 minutes. Combine the sour cream and chives in another small bowl and season with salt and pepper; refrigerate until ready to use.
  • Transfer the steak to the grill and cook 5 minutes; flip, brush with half of the remaining mustard mixture and cook 5 more minutes. Flip again and brush with the rest of the mustard mixture; cook 5 to 8 more minutes for medium rare. Transfer to a cutting board and let rest.
  • Meanwhile, bring a large pot of water to a boil. Add the pierogi and cook as the label directs. Put the spinach in a colander. Drain the pierogi in the colander with the spinach so the spinach wilts. Return the pierogi and spinach to the pot and stir in the butter; season with salt and pepper.
  • Slice the steak against the grain; divide among plates along with the pierogi and spinach. Top the pierogi with the chive sour cream.

1 2 1/4-pound boneless sirloin steak (1 1/4 inches thick)
1/2 cup extra-virgin olive oil
Juice of 1 lemon
Kosher salt and freshly ground pepper
1/4 cup pine nuts
1 bunch parsley (leaves only)
1 clove garlic
1/2 teaspoon red pepper flakes
1/4 cup finely grated parmesan or grana padano cheese
1/4 cup chopped pitted green olives (such as Sicilian or Cerignola)

Steps:

  • Pound the steak on both sides with a meat tenderizer or pierce with a fork. Transfer to a large resealable plastic bag; add 2 tablespoons olive oil, the lemon juice, 1/2 teaspoon salt and a few grinds of pepper. Seal the bag and shake to coat; marinate in the refrigerator, 2 to 8 hours.
  • Meanwhile, make the pesto: Toast the pine nuts in a small skillet over medium-high heat, tossing occasionally, until slightly golden, about 3 minutes; let cool. Pulse the parsley, garlic and red pepper flakes in a food processor until almost smooth. Add the toasted pine nuts, cheese and 5 tablespoons olive oil and pulse until combined. Transfer to a bowl and stir in 3 tablespoons water and the olives; season with salt.
  • Remove the steak from the marinade and pat dry. Bring to room temperature, about 30 minutes.
  • Heat a large cast-iron or other heavy skillet over medium-high heat; add the remaining 1 tablespoon olive oil, then add the steak and cook until a dark crust forms, about 7 minutes. Turn and cook until a thermometer inserted into the center of the steak (from the side) registers 130 degrees F for medium rare, about 8 more minutes. Transfer to a cutting board and let rest 10 minutes.
  • Brush the steak with some of the pesto. Thinly slice against the grain and serve with the remaining pesto.

Instead of crisping up the pierogis in this recipe, boiling them leaves them soft, like little pillows, and make them a great canvas for a nut-free kale and basil pesto.

1 1- to 1 1/4-pound flank steak
2 teaspoons Worcestershire sauce
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
2 cups chopped fresh kale
1/2 cup packed fresh basil, plus torn leaves for topping
1 clove garlic
1 teaspoon finely grated lemon zest, plus 1 teaspoon fresh lemon juice
1/4 cup grated Parmesan cheese
1 16-ounce box frozen pierogi (preferably potato and onion)
1/2 cup frozen peas

Steps:

  • Preheat the broiler. Bring a large pot of water to a boil. Meanwhile, put the steak on a foil-lined baking sheet. Rub both sides with the Worcestershire sauce and 1 teaspoon olive oil; season generously with salt and pepper. Broil, turning once, until a thermometer inserted into the center registers 125˚ F to 130˚ F for medium rare, 4 to 6 minutes per side, depending on the thickness. Transfer to a cutting board to rest, about 10 minutes.
  • Meanwhile, combine the kale, basil, garlic, lemon zest, a pinch each of salt and pepper and the remaining 3 tablespoons plus 2 teaspoons olive oil in a food processor. Mix, scraping down the food processor occasionally, until mostly smooth, adding 1 to 2 teaspoons water to thin the pesto as needed. Transfer the pesto to a large bowl and stir in 3 tablespoons Parmesan and the lemon juice; season with salt and pepper.
  • Season the boiling water generously with salt. Add the pierogi and cook as the label directs, adding the peas during the last 2 minutes of cooking. Reserve 1/2 cup cooking water, then drain. Add the peas and pierogi to the pesto and stir well to combine, adding a few splashes of cooking water as needed to coat the pierogi evenly; season with salt and pepper.
  • Thinly slice the steak against the grain and season with salt. Divide the steak and pierogi among plates. Sprinkle with the remaining 1 tablespoon Parmesan and torn basil.
