With their chocolate-dipped bottoms, peanut butter thumbprint filling and pretty chocolate drizzle on top, these cookies are fancy and fun! "The recipe is one of my mother's," writes Jennifer Moran of Elizabethtown, Kentucky.

1/2 cup shortening
1/2 cup butter, softened
1/2 cup creamy peanut butter
1-1/2 cups sugar, divided
1 cup packed brown sugar
2 eggs
3 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
FILLING:
1/2 cup creamy peanut butter
4 ounces cream cheese, softened
1/4 cup sugar
1 egg yolk
1/2 teaspoon vanilla extract
2-1/2 cups milk chocolate chips
TOPPING:
1 tablespoon butter
1-1/2 cups confectioners' sugar
6 tablespoons baking cocoa
3 tablespoons water
1/4 teaspoon vanilla extract

Steps:

  • In a large bowl, cream the shortening, butter, peanut butter, 1 cup sugar and brown sugar until light and fluffy, about 4 minutes. Add eggs, one at a time, beating well after each addition. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. , Roll into 1-1/2-in. balls; roll in remaining sugar. Place 2 in. apart on ungreased baking sheets. Using the end of a wooden spoon handle, make an indentation in the center of each ball. , In a small bowl, beat peanut butter and cream cheese until smooth. Beat in the sugar, egg yolk and vanilla. Spoon about 3/4 teaspoon of filling into each indentation., Bake at 350° for 12-15 minutes or until firm to the touch. Remove to wire racks to cool., In a microwave, melt the chocolate chips; stir until smooth. Dip bottoms of cookies in chocolate; allowing excess to drip off. Place chocolate side up on waxed paper-lined baking sheets. Refrigerate until set., For topping, in a large saucepan, melt butter. Whisk in confectioners' sugar and cocoa. Gradually add water, whisking until smooth. Stir in vanilla. Drizzle over tops of cookies. Chill until chocolate is set. Store in an airtight container in the refrigerator.

Okay, today marks the 1 year birthday of my youngest Pei Pei, Blue. So to celebrate we made him a puppy dog birthday cake.....We split the cake (it's quite large) in 3, and the Pei went to TOWN on this!!! lol it was too cute to watch!!! Because there are 3 dogs here, we tripled the recipe...The "batter" comes out more like a peanut butter cookie dough, don't worry.......Press it into your pan and bake it, it is healthy for pups, and apparently tastes pretty good as well!

1 - egg
1/3 cup(s) honey
1/4 cup(s) peanut butter
1/4 cup(s) vegetable oil
1 cup(s) flour
1 teaspoon(s) each of vanilla and baking soda

Steps:

  • Mix all ingredients together, mixing well. Preheat oven to 350 degrees. Press "Batter" into well greased pan ( I tripled this recipe, so I used a bunt pan). Bake for 30-35 minutes. Let cool completely before frosting.
  • TO MAKE FROSTING: Mix 12oz. fat free cream cheese, 1 tsp cinnamon, 1 tbsp honey, 1 tsp vanilla together thoroughly. When cool, spread on "cake". Add shredded carrots to the top and serve!

2 cups all-purpose flour
2 cups white sugar
1 teaspoon baking soda
½ cup milk
2 eggs
1 teaspoon vanilla extract
1 cup water
½ cup butter
½ cup vegetable oil
½ cup peanut butter
½ cup butter
½ cup peanut butter
⅓ cup milk
1 teaspoon vanilla extract
4 ¾ cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  • Whisk flour, white sugar, and baking soda together in a bowl. Beat 1/2 cup milk, eggs, and 1 teaspoon vanilla extract into flour mixture using an electric mixer on low until smooth.
  • Cook and stir water, 1/2 cup butter, vegetable oil, and 1/2 cup peanut butter together in a saucepan over medium heat until smooth, about 5 minutes. Stir peanut butter mixture into flour mixture until batter is well mixed; pour onto the prepared baking sheet.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 20 minutes.
  • Melt 1/2 cup butter and 1/2 cup peanut butter together in a saucepan over medium heat until smooth; add 1/3 cup milk and 1 teaspoon vanilla extract. Whisk confectioners' sugar into mixture until icing is smooth, 3 to 5 minutes. Pour icing over warm cake.

1 (16 ounce) box mochiko sweet rice flour
2 cups sugar
1 teaspoon baking powder
1 1/2 cups milk
1 teaspoon vanilla
1 cup creamy peanut butter
potato starch, for dusting

Steps:

  • Preheat oven: 350 degrees.
  • Grease a 9×13 inch pyrex with butter. Get a large mixing bowl and stir together the dry ingredients.
  • In a blender, add the milk and vanilla. Stir in the peanut butter and blend until you get peanut butter milk.
  • Add the peanut butter milk to the dry mixture and mix thoroughly. Pour into the pan. Cover tightly with foil. Place the pan in the center of the over and bake for 45 minutes. Uncover and cool for several hours.
  • When cool, use a plastic knife to cut the peanut butter mochi. Roll each piece around in some potato starch to keep from sticking to each other.

1 1/2 cups flour
3/4 cup butter
1 cup peanuts, chopped
8 ounces cream cheese
1/3 cup peanut butter
1 cup powdered sugar
2 cups Cool Whip
2 (15 1/2 ounce) cans prepared chocolate pudding
4 cups Cool Whip
1/4 cup peanuts, chopped
20 -24 maraschino cherries

Steps:

  • Bake crust as directed and cool before adding each layer in order.
  • Crust: Melt butter. Add flour and chopped nuts. Mix well and press into cake pan. Bake crust for 10-15 mintues @ 350 degrees.
  • 1st layer: Blend together cream cheese and peanut butter. Add in powdered sugar. Fold in cool whip.
  • 2nd layer: Chocolate pudding.
  • 3rd layer: Cool whip, cherried and chopped nuts.
  • Enjoy!

1 cup granulated sugar
3/4 cup butter flavor shortening
3/4 cup creamy peanut butter
1/3 cup firmly packed light brown sugar
1 1/2 teaspoons vanilla extract
3 eggs
2 3/4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
3/4 cup chocolate syrup
1 cup powdered sugar
1/4 cup chocolate syrup
1 teaspoon vanilla extract
water
2 -4 tablespoons chopped dry roasted peanuts

Steps:

  • Preheat oven to 350. Spray 10-inch (12 cup) Bundt pan with cooking spray.
  • For cake, combine granulated sugar, shortening, peanut butter and brown sugar in large bowl. Beat with electric mixer at low speed until creamy. Add vanilla and then eggs, one at a time, beating well after each addition.
  • Combine flour, baking powder, baking soda and salt in medium bowl. Add to peanut butter mixture alternately with buttermilk, beating after each addition until well blended.
  • Spoon 2 cups batter into medium bowl. Stir in 3/4 cup sundae syrup.
  • Spoon plain batter into prepared Bundt pan. Spoon chocolate batter over plain batter. Do not mix.
  • Bake 1 hour 10 minutes to 1 hour 20 minutes or until toothpick inserted in center comes out clean. (Cake will rise, then fall during baking.) Do not overbake.
  • Cool 45 minutes on wire rack before removing from pan. Place cake, fluted side up, on serving plate. Cool completely.
  • For glaze, combine powdered sugar, 1/4 cup chocolate sundae syrup and vanilla in small bowl. Stir to blend. Add water, 1 drop at a time, until glaze is of desired consistency.
  • Spoon over top of cake. Sprinkle with nuts.
