LACINATO KALE SALAD WITH ROASTED SQUASH



Lacinato Kale Salad with Roasted Squash image

This salad is great for entertaining, because you dress it ahead of time.

Number Of Ingredients 10

1 pound peeled and seeded butternut squash, cut into 1/2-inch cubes (about 4 cups)
3 tablespoons extra-virgin olive oil
Sea salt
Freshly ground black pepper
4 large shallots, thinly sliced (1 1/2 cups)
1/4 cup fresh lemon juice
3 tablespoons flaxseed oil
1 1/2 bunches Lacinato kale, washed and patted dry
4 ounces aged goat cheese, shaved or crumbled
1/3 cup toasted hazelnuts (1 1/2 ounces), roughly chopped

Steps:

  • Preheat oven to 350 degrees. Place squash on a parchment-lined baking sheet. Drizzle with 1 1/2 tablespoons olive oil, and sprinkle with a pinch of sea salt and pepper; toss well. Roast until golden brown, tossing halfway through, about 45 minutes.
  • Meanwhile, place shallots on a parchment-lined baking sheet, and drizzle with remaining 1 1/2 tablespoons olive oil, and sprinkle with a pinch of salt and pepper. Roast until brown, tossing halfway through, about 30 minutes.
  • In a large salad bowl, combine lemon juice, flaxseed oil, 1/2 teaspoon salt, and a pinch of pepper. Cut 2 inches off bottom of kale, and slice leaves crosswise into 3/4-inch ribbons (you should have 12 cups loosely packed kale); add to salad bowl. Toss kale with dressing, squeezing until leaves are soft. Let stand for at least 30 minutes.
  • Add vegetables, cheese, and nuts to kale. Toss well to combine.

Kale Salad with Roasted Butternut Squash, Pomegranate, and Pumpkin Seeds

1 large butternut squash (about 3 pounds), peeled cut into 3/4" cubes
1/2 cup, plus 4 teaspoons extra-virgin olive oil, divided
Kosher salt
Freshly ground black pepper
1 whole head garlic
1/2 cup raw pumpkin seeds (pepitas)
1/4 cup fresh lemon juice (from 1 large lemon)
2 teaspoons pure maple syrup
2 tablespoons Dijon mustard
1 tablespoon finely chopped shallot
1 1/2 pounds Tuscan kale (about 2 large bunches), stemmed, leaves thinly sliced
1 cup finely grated Parmesan cheese (1 1/2 ounces)
1 cup pomegranate seeds (from 1 large pomegranate)

Steps:

  • Heat oven to 425°F. On a rimmed baking sheet, toss together squash, 2 tsp. olive oil, 1/2 tsp. salt, and 1/4 tsp. pepper. Place whole head of garlic on a sheet of aluminum foil, drizzle with 1 tsp. oil, wrap securely in foil and place on baking sheet with squash. Roast, stirring squash occasionally after the first 15 minutes, until squash is golden and tender and garlic is tender, 35-40 minutes. Remove garlic and squash from oven and set aside to cool.
  • Meanwhile, heat 1 tsp. oil in a small skillet over medium-high heat. Add pepitas and cook, stirring occasionally, until about half are golden brown, 2-3 minutes. Transfer to a paper towel-lined plate and season with 1/4 tsp. salt. Set aside.
  • Cut off the top of the garlic head and squeeze all of the softened garlic into a medium bowl. Whisk in the lemon juice, maple syrup, mustard, shallot, 1 tsp. salt and 1/8 tsp. pepper, then whisk in oil in a slow, steady stream.
  • In a large mixing bowl, combine kale with about 3/4 of the dressing, and use your hands to massage the dressing into the kale. Add more dressing as needed (you may not need all of it). Reserve any leftover dressing for another use.
  • Add roasted squash, Parmesan, and pomegranate seeds to bowl; toss together to combine, and season with salt and pepper to taste. Transfer to a serving bowl, and sprinkle with pumpkin seeds.
  • Do ahead
  • Dressing can be prepared 3 days ahead; cover and chill. Squash and garlic can be roasted, and kale can be sliced 1 day ahead; place separately in airtight containers and chill. Salad can be tossed together 30 minutes ahead; keep at room temperature.

QUINOA, BUTTERNUT SQUASH, AND KALE SALAD



Quinoa, Butternut Squash, and Kale Salad image

This is a go-to type of recipe I use a lot. The seasonings are pretty great and can be used for sweet potato fries and a fish marinade too. You can vary this recipe by adding your favorite grain, or bean! You can also use whichever herb you enjoy.

2 tablespoons extra-virgin olive oil, divided
½ teaspoon ground cumin
½ teaspoon dried oregano
½ teaspoon chili powder
½ teaspoon sea salt
ground black pepper to taste
½ butternut squash - peeled, seeded, and cubed
1 zucchini, cubed
2 cups water
1 cup quinoa
2 cups chopped lacinato kale
2 cups chopped Italian parsley
½ cup raisins
½ cup chopped red onion
¼ cup apple cider vinegar
1 tablespoon honey

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine 1 tablespoon olive oil, cumin, oregano, chili powder, salt, and pepper together in a bowl. Add butternut squash and zucchini; toss until coated. Place butternut squash and zucchini onto a baking sheet.
  • Bake in the preheated oven, tossing once half way through, until soft, about 25 minutes. Remove from oven; cool.
  • Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes. Drain and cool.
  • Combine remaining 1 tablespoon olive oil, butternut squash, zucchini, quinoa, kale, parsley, raisins, red onion, apple cider vinegar, and honey in a bowl; toss until salad is combined.

Oven-roasted butternut squash pairs beautifully with pomegranate seeds and crumbled feta in this nutritious lunch or dinner

2 red onions , each cut into 4 thick rings
4 garlic cloves , unpeeled
8 small wedges of butternut squash (prepared weight 250g/9oz)
2 tsp rapeseed oil
½ tsp caraway seeds
0.5 x 60g bag baby kale
50g pomegranate seeds (about 1/4 of a large fruit)
50g feta , crumbled
1 orange
1 tbsp cider vinegar
1 tsp rapeseed oil
2 tbsp pumpkin seeds

Steps:

  • Heat oven to 200C/180C fan/gas 6. Toss the onions, garlic and squash in the oil, then arrange in a single layer on a baking tray and roast for 25 mins.
  • Remove the garlic and set aside, turn the veg over with a fish slice, sprinkle over the caraway and return to the oven for 10 mins more.
  • To make the dressing, pare the zest from half the orange and put in a bowl. Cut the peel and pith from the orange with a sharp knife. Working over the bowl to catch the juices, cut out the segments from between the membrane. Stir in the vinegar, oil and pumpkin seeds. Discard the skin of the roasted garlic, mash the soft cloves and add to the bowl. Stir well.
  • Pile the roasted veg onto a platter or plates, top with the kale, then spoon over the dressing and toss. Scatter over the pomegranate seeds and feta, and serve.

This hearty salad is iron-rich and full of autumn flavours - serve on its own or as a Sunday roast side dish

1 bay leaf
200g puy lentils
2 tbsp olive oil
1 ½ lemons , 1 juiced, 1/2 cut into wedges, to serve
20g butter
2 large sage leaves , torn
500g butternut squash or another autumn squash, peeled and cut into bite-sized pieces
100g kale , stems removed and leaves torn into bite-sized pieces
1 tbsp roughly chopped flat-leaf parsley
2 tbsp toasted hazelnuts , roughly chopped

Steps:

  • Bring a pan of salted water to the boil. Add the bay leaf and lentils, and cook for 12-15 mins until the lentils are tender but still have some bite. Drain, put in a bowl with 1 tbsp olive oil and the lemon juice, then combine.
  • Melt the butter in a heavy bottomed frying pan or skillet that has a lid, along with the sage and remaining oil. Add the squash and some seasoning, then stir to coat them in the butter. Put the lid on and cook over a medium heat for 8-10 mins or until just tender, adding a splash of water if you need to stop it catching.
  • Add another splash of water to the pan along with the kale. Put the lid on to steam for 3-4 mins until the kale is tender. Put the lentils on a serving platter and arrange the squash and kale on top. Garnish with the parsley and hazelnuts and squeeze over 1 tbsp lemon juice from the remaining lemon wedges, to serve.

Butternut Squash, Kale and Farro Salad image

4 cups pre-cut peeled and cut (1/2-inch chunks) fresh butternut squash
1 medium red onion, sliced
4 tablespoons (60 milliliters) extra-virgin olive oil, divided, plus more for drizzling
Kosher salt and freshly ground black pepper
1/2 cup golden raisins
2 tablespoons white wine vinegar
1 teaspoon grainy mustard
Pinch ground cayenne
2 1/2 cups cooked farro, cooled (from 1 cup uncooked farro, cooked according to package instructions)
1 shredded rotisserie chicken breast
3 ounces smoked Gouda, very finely diced
1/2 cup walnut halves, toasted and coarsely chopped
3 cups baby kale

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
  • Put the squash and red onion on the prepared baking sheet. Drizzle with 1 tablespoon of the oil and salt and pepper to taste. Toss with your hands to coat well and spread out on the baking sheet so they don't steam. Roast, tossing halfway through, until the squash is fork-tender, 30 to 40 minutes. Let cool to room temperature.
  • Put the raisins in a shallow bowl and pour the vinegar over them. Soak, tossing them every now and then, for at least 15 minutes. Drain the vinegar into another small bowl, pressing down on the raisins to squeeze as much vinegar out as possible. Add mustard, cayenne, and salt and pepper to taste to the vinegar. Drizzle in the remaining 3 tablespoons oil. Whisk until thick and emulsified. Set aside.
  • To assemble the salad, in a large bowl, add the farro, chicken, cheese, walnuts, raisins, squash and red onions, kale, dressing, and salt and pepper to taste. Toss together until evenly coated with dressing. This is one of those salads that gets better as it sits.

KALE SQUASH SALAD



Kale Squash Salad image

Yield Makes 1 8x8 inch pan. Serves 4-6 as a main course, 6-8 as a side.

Number Of Ingredients 15

1 1/2 pounds butternut squash, peeled and chopped into 2-inch pieces
1/8 teaspoon nutmeg
1 cup heavy cream
3/4 teaspoon sea salt
A generous pinch black pepper
2 tablespoons olive oil
1 large onion, small diced, about 1 1/2 cups
2 large cloves garlic, minced
1 1/2 inches fresh ginger, finely minced, about 1/4 cup
1 pound kale, approximately one large bunch, (I prefer curly kale but lacinato kale will also work), washed, and chopped into 2 inch slices
1/2 teaspoon crushed red pepper flakes
1-1 1/2 cups water
14 ounces crushed tomatoes
1 tablespoon red wine vinegar
3/4 teaspoon salt

Steps:

  • 1. Preheat oven to 350°F.
  • 2. In a large saucepan, put the squash and just enough water to cover. Cover the pan. Heat to boiling, reduce heat to medium, cook 20-30 minutes until squash is soft but not falling apart. You should be able to easily stick a butter knife through a piece of squash. Drain excess water.
  • 3. Add cream, nutmeg and salt to the squash. Blend with an immersion blender until smooth. (Or put everything in a blender. You will need to add a little bit of water to get it to blend well.) Set aside.
  • 4. In a 4 quart saucepan, cook onion, garlic, and ginger in olive oil till soft.
  • 5. Add kale, red pepper, water, crushed tomatoes. Cook till kale is soft and turns a duller green.
  • 6. Add salt and vinegar. Stir and remove from heat.
  • 7. Fill the bottom of an 8x8 inch pan with the kale tomato mixture. Top with the creamed squash, smoothing out the top.
  • 8. Bake 45 minutes. Cool 10 minutes before serving.
