- Spread butter over both sides of cake slices. In a skillet, toast pound cake over medium-high heat 15-30 seconds on each side or until golden brown. Transfer to dessert plates., Spoon yogurt over cake to resemble fried egg whites. Top with apricots to resemble yolks.

PEACH SURPRISE
Peaches and yogurt that look like eggs sunny-side up! My 10 yr old saw this idea on a children's TV show and used to surprise her younger sisters; it was a big hit. It would be a great afterschool snack or quick breakfast for slumber parties.

- Place peach half, flat side down, in the center of the yogurt.

- Melt the butter in a medium frying pan over high heat.
- Crack the egg into the pan and let it cook until the egg whites begin coagulating, about 1 minute. Sprinkle with salt and pepper. Cover with a lid on for 1 minute to finish cooking the egg. Then, uncover and remove the egg from the pan.

- Mix yogurt and sugar together in a small bowl.
- Place half a graham cracker on the center of the plate. Spoon the yogurt mixture on top of the cracker and the plate so it covers the cracker completely.
- Put a peach halve, rounded part facing up, in the middle of the yogurt. Sprinkle a little cinnamon over it. It should look like a sunny side up egg!
