1/2 cup water
3 tablespoons sugar
2 tablespoons lemon juice
4 medium ripe peaches, peeled and sliced

Steps:

  • In a saucepan, combine the water, sugar and lemon juice. Cook and stir over medium heat until sugar is dissolved. Cool slightly; transfer to a blender. , Add the peaches; cover and process until smooth. Fill cylinder of ice cream freezer; freeze according to manufacturer's directions. Transfer sorbet to a freezer container; cover and freeze for 4 hours or until firm.

6 large, ripe peaches
3/4 cup sugar
1 teaspoon lemon juice
Pinch of salt

Steps:

  • Peel and slice peaches, then freeze until firm.
  • Stir sugar into 3/4 cup water and blend with frozen peaches, along with lemon juice and salt, until creamy and smooth. Eat immediately soft-serve-style, or freeze in a loaf pan up to 3 days.

1 pound ripe peaches - peeled, pitted, and chopped
2 tablespoons lemon juice
½ cup water
½ cup white sugar

Steps:

  • Add peaches to a blender; blend until smooth. Measure out 1 1/2 cups peach puree into a bowl. Immediately stir in lemon juice and refrigerate.
  • Combine water and sugar in a small saucepan and bring to a boil. Stir until sugar is dissolved, about 1 minute. Remove from stove and cool to room temperature. Refrigerate simple syrup until chilled, about 1 hour.
  • Pour chilled peach puree and simple syrup into an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Transfer to an airtight container and freeze until firm, about 4 hours.

  • Place frozen peaches, separating any that have stuck together, into a food processor with sugar and lemon juice. Blend to the consistency of applesauce, adding orange juice as needed. Taste and adjust flavor with sugar and lemon juice. Serve immediately, garnished with mint sprigs.

2 pounds fresh peaches
1 1/2 cups simple syrup (recipe follows)
Juice of 1 lemon
4 cups water
4 cups sugar

Steps:

  • Score bottom of peaches with an X and boil for about 10 seconds in boiling water and peel off skin. Remove peach pits. Puree peaches in a food processor or blender. Pour puree into a bowl and stir in simple syrup and lemon juice. Taste and adjust syrup or lemon juice to taste. Freeze in an ice cream maker using manufacturers instructions.
  • Stir water and sugar into a saucepan. Place pan over high heat and bring to a full boil. Let syrup cool before using. Store leftover syrup in a glass jar.

1 (15 1/4 ounce) can peaches in heavy syrup
1 teaspoon vanilla

Steps:

  • Place the unopend can of peaches in the freezer.
  • Freeze until solid, about 24 hrs.
  • (Don't be alarmed if the can bulges).
  • When ready to make, submerge the can in very hot tap water for 1-2 minutes.
  • Open the can and pour any thawed liquid into the food processor bowl.
  • Remove the fruit from the can and cut into 8 chunks.
  • Place chunks in the processor bowl with the vanilla.
  • Process until smooth and serve immediately or spoon into a freezer container and freeze until desired firmness.

2 cups white sugar
1 cup orange juice
2 tablespoons lemon juice

Steps:

  • Puree peaches in a blender until smooth.
  • Combine sugar, orange juice, and lemon juice in a 4-quart pan over medium heat. Cook, stirring constantly, until sugar dissolves, about 5 minutes. Remove from heat and stir in pureed peaches.
  • Pour mixture into a 9x13-inch pan and allow to cool to room temperature, about 30 minutes. Place in the freezer until firm but not hard, about 1 1/2 hours.
  • Transfer peach mixture in small batches to a food processor. Process until light and fluffy, about 1 minute. Fill into 1/2-pint freezer containers leaving 1/2 inch head space. Freeze until firm, at least 4 hours.

4 cups peeled and diced fresh peaches, and their juice
3/4 cup fresh lemon juice
1 cup sugar
5 tablespoons amaretto liqueur or 5 tablespoons orange juice concentrate

  • In a blender, whip peaches and their juice until smooth.
  • Heat remaining ingredients in a saucepan over low heat until sugar is dissolved. Remove from heat and stir in peach puree.
  • Pour into an 8-inch square pan and set in freezer. Using a rubber spatula, stir every 15 minutes until creamy, about 2 hours. Cover and allow to freeze.
  • To serve, scoop into small dishes and garnish with fresh fruit.
