Finely ground pecans add nutty richness to the dough that doubles as the bottom crust and top crumble layer of these yummy bars. Cooking down fresh peaches for the filling concentrates their sweet floral flavor and adds more intensity than a jar of prepared jam.

2 sticks butter, cut-up and softened, plus more for the pan
4 peaches, peeled, pitted and chopped
1/4 cup water
1/4 cup golden syrup (such as Lyle's)
2 cups all-purpose flour
1 cup finely ground pecans
1 cup confectioners' sugar
1 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Preheat the oven to 350˚ F. Line a 9-by-13-inch baking pan with foil and butter the foil.
  • Cook the peaches with the water and golden syrup in a saucepan until thick and jammy, mashing if needed, about 12 minutes.
  • Combine the flour, pecans, confectioners' sugar, baking powder and salt in a bowl. Work in the cut-up butter until moist clumps form.
  • Press two-thirds of the dough into the pan pan. Spread the peach mixture on top and sprinkle with the remaining dough. Bake at 350˚ F until browned, 40 to 45 minutes. Let cool completely in the pan, then lift out of the pan using the foil. Cut into bars.

These Peach Crumble Bars use the same buttery crumb mixture for the crust and topping and are filled with an easy peach filling!

3 cups (375 grams) all-purpose flour
1/2 cup (100 grams) brown sugar
1/2 cup (100 grams) granulated sugar
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 cup (230 grams) cold butter (, cubed)
1 large egg (, lightly beaten)
5 cups (800 grams) chopped peaches
1/2 cup (100 grams) granulated sugar
3 tablespoons (27 grams) cornstarch
2 teaspoons fresh lemon juice
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350°F. Line a 9x13-inch pan with parchment paper or aluminum foil, leaving some overhang for easy removal, and set aside.
  • In a large mixing bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, cinnamon, nutmeg, and salt.
  • Add the cold cubed butter and cut it in with a pastry cutter until the mixture is crumbly and starts to come together.
  • Add the egg and stir it in until fully combined (you may also use the pastry cutter to help blend it in).
  • Press half of the mixture in the prepared baking pan and place the bowl with the other half in the refrigerator.
  • Bake the crust at 350°F for 15 minutes, then set aside to cool for 5 minutes before adding the peach filling.
  • Combine the chopped peaches, sugar, cornstarch, lemon juice, and cinnamon in a large bowl. Mix until the peaches are fully coated.
  • Spoon the peach filling on top of the baked crust, using a slotted spoon to leave as much excess juice as possible in the bowl. Spread it around into one even layer.
  • Remove the remaining crumb mixture from the refrigerator and sprinkle it on top of the peach filling.
  • Bake at 350°F for 40-50 minutes or until the top is set and lightly browned and the peach filling is bubbling around the edges.
  • Remove from the oven and transfer to a wire rack to cool completely. Once cooled, lift the bars out of the pan using the overhang from the parchment paper or foil, slice into bars, and enjoy!

¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Coat an 8x8-inch baking pan with cooking spray.
  • Whisk flour, sugar, baking powder, and salt together in a bowl. Next, cut in the cold butter using 2 forks or a pastry cutter then slowly mix in the egg yolk and cold water. Don't worry if the dough seems really crumbly; it should be!
  • Press 1/2 of the crumble mixture into the prepared pan to make the crust. Save the rest for the top of the bars.
  • Stir together peach slices, sugar, flour, lemon juice, vanilla extract, cinnamon, and nutmeg until combined. Evenly add peach filling to the top of the crust.
  • Sprinkle the remaining crumble over the peach filling.
  • Bake in the preheated oven until golden brown and set, 30 to 38 minutes. Cool bars to room temperature, then cut and serve.

1 teaspoon baking powder
1/2 teaspoon salt

1 cup shortening
1 large egg

Steps:

  • Preheat the oven to 350°F (177°C). Lightly grease an 8 or 9-inch baking dish (circle or square). Set aside.
  • Combine peaches with the flour, sugar, salt, and vanilla in a large bowl. Toss gently until combine. Spoon into prepared baking dish.
  • Whisk the brown sugar, flour, oats, cinnamon, salt, and pecans together. Make sure to get out all those brown sugar lumps. Add the butter and stir with a rubber spatula or a wooden spoon to break up the butter until the mixture is crumbly. (A fork works for this too!) Evenly sprinkle topping over peaches.
  • Bake for 40-45 minutes until the topping is golden brown and the peach juice is bubbling on the edges. Remove from the oven, place on a wire rack, and allow to cool slightly before serving. Serve warm, room temperature, or cold. Cover leftovers and store in the refrigerator for up to 5 days.
