I am 10 and I enjoy helping my grandma in the kitchen. I love pancakes and peaches, so we came up with this recipe. -Mikayla Blackstar, Ponca City, Oklahoma

Yield 16 pancakes (2 cups sauce).

Number Of Ingredients 15

2 cups all-purpose flour
2 tablespoons sugar
4 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 cups 2% milk
2 eggs, lightly beaten
1/4 cup canola oil
1 can (15-1/4 ounces) peach halves, drained and finely chopped
SAUCE:
1 cup corn syrup
1/2 cup sugar
1/3 cup butter, cubed
1 egg
2 to 3 teaspoons vanilla extract

Steps:

  • In a large bowl, combine the flour, sugar, baking powder, cinnamon and salt. Combine the milk, eggs and oil; add to dry ingredients just until moistened. Fold in peaches., Pour batter by 1/4 cupfuls onto a greased hot griddle; turn when bubbles form on top. Cook until the second side is golden brown., Meanwhile, in a small saucepan, combine the corn syrup, sugar, butter and egg. Cook and stir over medium heat until mixture is thickened and coats the back of a spoon. Stir in vanilla. Serve with pancakes.

Whats not to like about fancy pancakes. These are very yummy. This recipe works well with fresh or canned peaches, and fresh or frozen raspberries.

1 pint raspberries, if frozen thawed
2 tablespoons honey, liquid
2 tablespoons Cointreau liqueur (optional) or 2 tablespoons Grand Marnier (optional)
6 scoops vanilla ice cream, frozen (optional)
1 egg
2 tablespoons melted butter
2/3 cup milk
1 cup flour
1/2 teaspoon salt
3 tablespoons sugar
2 teaspoons baking powder
4 peach halves in syrup, fresh-peeled and finely chopped (Canned, drained and finely chopped)

Steps:

  • Sauce Prepare sauce by placing all ingredients except for ice cream in blender.
  • Reserve raspberry sauce and ice cream for garnish.
  • Pancakes-6 Combine egg, butter and milk.
  • In a seperate bowl add flour, salt, sugar and baking powder together.
  • Quickly combine flour mixture to egg mixture.
  • Heat griddle and butter lightly.
  • Pour batter onto pan, when partially cooked add peaches to each pancake.
  • Cook for 1 minute then turn.
  • When pancakes are ready served garnished with ice cream scope and raspberry sauce.

1/2 cup butter or 1/2 cup margarine
8 eggs
2 cups milk
2 cups flour
2 (8 ounce) cans peaches
2 tablespoons cornstarch
1/4 cup water
2 tablespoons margarine or 2 tablespoons butter
3 tablespoons brown sugar (add sugar to taste)
1 teaspoon vanilla
1 dash cinnamon (to taste)
1 dash nutmeg (to taste)

Steps:

  • Pancakes:.
  • Melt butter in cake pan at 400 while making batter. In large bowl combine eggs, milk and flour together, mix well. When butter is melted, pour batter into pan and bake for 15 minutes or until puffy and knife comes out clean.
  • Peach Sauce:.
  • In small bowl mix corn starch and water together to make a paste. In medium sauce pan bring peaches to boil, add corn starch mixtue, stirring constantly to avoid lumps. Ass butter, brown sugar, vanilla, cinnamon and nutmeg. Let simmer 2 mintues. Serve over pancakes.
