Peach nectar, mint, and lemon give strong-brewed tea a special zing.

- Steep tea bags in the boiling water to make a strong tea; discard tea bags. Refrigerate tea until well chilled. Stir together tea and peach nectar in a pitcher. Add mint and lemon slices; refrigerate 1 hour. Add ice, and serve.

A beverage recipe found (& then tweaked) in the Southern Living Summer Grilling 2009 cookbook. Very nice for those of us who enjoy sweet fruity iced tea.

- Pour the boiling water over the 2 tea bags, then cover & let steep for 5 minutes.

NEELY'S PEACH ICED TEA

- Bring the water to a boil in a large pot. Turn off heat. Add tea bags and steep for 5 to 10 minutes. Allow to cool.
- Add 12-ounces of the peaches to a blender and puree until it reaches a smooth consistency.
- Combine the cool tea, peach puree, peach nectar, peach liquor and remaining slices of peaches to a glass pitcher. Serve over tall glasses of ice with a sprig of mint to garnish.

- In a large teapot or pot, combine water and sugar and bring to a boil.
- Add teabags and let steep for 4-5 minutes or until desired.
- Take out tea bags.
- Pour tea into a heat proof pitcher.
- Add peach nectar, stir.
- Let cool.
- Put a peach wedge into each glass.
- Enjoy!

PEACH BASIL ICED TEA

- Put tea bags and basil in a quart-size glass measure or heatproof bowl.
- In a saucepan bring water just to a boil and pour over tea bags. Steep tea 5 minutes and strain through a sieve into a heatproof pitcher. Cool tea and chill, covered, until cold, about 1 hour.
- Stir in nectar and syrup. Serve tea over ice in tall glasses and garnish with peach slices and basil sprigs.
- To make simple syrup:
- In a saucepan bring sugar and water to a boil, stirring, and boil until sugar is completely dissolved. Let syrup cool and chill, covered. Syrup may be made 2 weeks ahead and chilled, covered. Makes about 2 cups.
ICED PEACH MINT TEA
Cool and refreshing beverage I developed to make use of the fresh mint I planted this summer. In memory of summer afternoons with Aunt Pat in Waco, TX.

- Crush mint leaves with sugar and lemon juice; pour boiling water over mint leaves and tea bags.
- Let steep to desired taste; drain tea bags.
- Mix in peach nectar.
- Pour over ice in tall glasses and garnish with fresh mint.
PEACH AND BLACKBERRY ICED TEA
Peaches and blackberries sweeten iced tea.

- Put tea bags and the boiling water in a medium saucepan or heatproof bowl. Let stand 5 minutes. Discard tea bags. Transfer tea to a large pitcher.
- Cut 2 of the peaches into 8 wedges each. Add sliced peaches and the sugar to the tea. Stir tea until sugar has dissolved. Let cool completely.
- Stir in peach nectar. Refrigerate tea until cold (or up to 1 week in an airtight container). Just before serving, remove peaches; discard. Cut remaining peaches into 8 wedges each. Add peaches and blackberries to the tea. Serve over ice.
