GRILLED PINEAPPLE SKEWERS

Grilled Pineapple Skewers image

A pretty and tasty side to grilled fish or meats. This can also be made on an indoor grill or stovetop grill pan.

Number Of Ingredients 4

Ingredients

1 pineapple, peeled
3 Tbsp honey
2 Tbsp freshly squeezed lime juice
1 Tbsp fresh mint, minced (optional)

Steps:

1. Preheat grill on high. Slice off the top and bottom of the pineapple. Stand pineapple upright on cutting board; cut into quarters from top to bottom. Cut each quarter into 1/2-inch-thick slices. Thread three pineapple slices onto each skewer.
2. In a small bowl, whisk together the honey and lime juice, and the mint, if using. Brush over the pineapple, reserving about half of the glaze.
3. Coat pineapple with cooking spray. Grill the skewers for 2-3 minutes per side, or until it begins to brown. Brush with remaining glaze and serve.
