This recipe for versatile and delicious British fresh mint pea purée is so easy to make and is a great side dish for meat, fish, and plain on toast.

2 cups water
10 1/4 ounces/300 grams garden peas (fresh or frozen)
1/4 cup fresh mint leaves
Salt (to taste)
Black pepper (to taste)
Optional: 1 tablespoon butter
Optional: fresh mint leaves (chopped)

Steps:

  • Gather the ingredients.
  • Add the water to a medium pot and bring to a boil. Add the peas, fresh mint, and a pinch of salt and bring to a boil. Reduce the heat and simmer until the peas are tender, about 5 minutes.
  • Drain the peas and mint in a colander.
  • Using an immersion blender , quickly purée the peas and mint to create a smooth paste. If you don't have an immersion blender, use a food processor instead or mash the peas well with a potato masher or fork. Taste for seasoning and add salt and pepper to taste.
  • You can use the peas in rough purée form, but if you want a very fine, smooth purée, push the mixture through a fine sieve.
  • Stir in the butter and chopped mint leaves (if using) until all the butter has melted and is incorporated into the purée.
  • Serve minted pea purée warm alongside your favorite meat or fish dish.

2 cloves garlic, peeled and roughly chopped
1 teaspoon kosher salt
1 teaspoon unseasoned rice vinegar

  • Throw all the ingredients into a food processor and whizz until smooth. Done!

three 10-ounce packages frozen peas, thawed
1/3 cup fresh mint leaves plus fresh mint sprigs for garnish if desired
3 tablespoons half-and-half, or to taste
3 tablespoons unsalted butter, cut into bits

Steps:

  • In a large saucepan combine the peas with 1/4 cup water and the mint leaves and boil the mixture, covered, for 4 minutes, or until the peas are tender. Drain the mixture well and in a food processor purée it with the half-and-half, the butter, and salt and pepper to taste. The purée may be made 1 day in advance, kept covered and chilled, and reheated. Transfer the purée to a serving dish and garnish it with the mint sprigs.

  • Warm a small nonstick pan over medium heat. Add 1 tablespoon each of oil and butter to the pan. Add onions and season with salt. Cook for a total of about 25-30 minutes or until sweet and caramelized without taking on much color. Adjust heat to low when needed to avoid browning. Add ¾ cup of peas, season with salt and spoon in 1 tablespoon of water. Increase heat back to medium and simmer peas for 3-5 minutes or until just cooked through.
  • Add onion/pea mixture and mint to a food processor or blender. Plus until coarsely blended. Add 1 tablespoon of water, or as needed, and continue to blend until smooth. Push through a sieve into to a bowl to remove any lumps. Stir in yogurt and lemon juice. Taste and adjust seasoning, if needed. Allow to cool to room temperature.
  • Heat a medium sized nonstick pan over medium to medium-high heat. Pat salmon dry and season with salt and pepper. Add 1 tablespoon of oil to the pan. Place salmon fillets in pan. Cook until browned on first side, about 4-5 minutes. Flip and add 1 tablespoon of butter to pan. Continue to cook to desired doneness, basting with butter, for about 2-3 minutes for medium. Remove from pan.
  • Toss remaining ¼ cup of raw peas with just enough oil to coat, and season with salt. If using frozen defrosted peas, add to sauté pan with oil and salt and cook until just warmed through.
