Number Of Ingredients 10

1 cup orecchiette (substitute for any pasta you like)
1/4 cup red wine vinegar
5 scallions, diced
1/2 cup olive oil
2 red peppers
1/4 cup basil
1 tbsp oil or butter
1/2 tsp salt
1 onion, diced
Salt, for pasta

Steps:

  • Preheat oven to high broil. Place a large pot of salted water on the stove to boil. Remove seeds and core from red peppers. Lay flat with skin side facing up on a tin foil lined baking sheet. Broil for 5-10 minutes or until the skin is completely black. Remove and seal foil around peppers. Set aside.
  • Cook pasta in boiling salted water until al dente. Rinse with cold water to cool and set aside in fridge.
  • Heat oil or butter over medium heat. Sauté diced onion for 5 minutes until translucent. Turn down heat and add garlic. Cook for another 5 minutes or until fragrant. Set in fridge to cool.
  • Chop scallions using both the white and green parts. Set aside. Remove skin from the peppers once they have cooled for at least 10 minutes in the tin foil -- the skin should peel off easily. Dice roasted peppers and set aside. Try to keep all the juices that run from the pepper while cutting/transferring it.
  • Blend together all ingredients for dressing. If you do not have a blender then chop basil finely and whisk all ingredients. Set aside.
  • In a large bowl combine the cold pasta, cold onion/garlic mixture, diced red peppers and scallion. Slowly add the dressing about 1 tablespoon at a time while tasting in between. You will likely have dressing left over -- keep this in the fridge for a fresh salad dressing or another pasta salad.

1 red bell pepper, halved
1 yellow bell pepper, halved
1 green bell pepper, halved
12 ounces whole wheat ziti
3 tablespoons olive oil
3 tablespoons white balsamic vinegar
1 tomatoes
2 tablespoons fresh basil, chopped
1 tablespoon fresh thyme, chopped
12 ounces sliced mushrooms
14 ounces black beans
2/3 cup raisins
2 bunches scallions, finely chopped
1 teaspoon salt
1/4 teaspoon ground pepper

Steps:

  • Place peppers cut side down under broiler 10-15 minutes, until charred on top. Set aside to cool. (optional step).
  • Boil pasta as directed.
  • Mix together 2 Tb, oil (save 1 Tb. oil aside), vinegar, tomato, basil and thyme. Add warm pasta and mix to coat.
  • If broiling peppers, remove skins and seeds, dice, and add to pasta mix.
  • Add all remaining ingredients to pasta and stir well. Serve chilled or at room temperature.

1 large sweet red pepper
1 large green pepper
2 cups whole fresh mushrooms
1 small red onion, sliced
1/2 cup pitted ripe olives
1/3 cup Italian salad dressing
1 garlic clove, minced
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon pepper
Lettuce leaves

Steps:

  • Broil peppers 4 in. from the heat until skins blister, about 10 minutes. With tongs, rotate peppers a quarter turn. Broil and rotate until all sides are blistered and blackened. Immediately place peppers in a bowl; cover and let stand for 15-20 minutes. , Peel off and discard charred skin. Remove stems and seeds. Cut peppers into thin slices. In a large bowl, combine the peppers, mushrooms, onion and olives. , In a small bowl, combine the salad dressing, garlic, basil, salt, oregano and pepper. Pour over vegetables; toss to coat. Cover and refrigerate overnight. Serve on lettuce leaves.

1/2 red bell pepper, sliced into 3/8 inch strips and strips halved
6 green onions, sliced (include some tender green tops)
1/4 lb mushroom, sliced
1 zucchini, sliced lengthwise, then sliced into 3/8 inch pieces
2 garlic cloves, minced
1 (14 1/2 ounce) can diced tomatoes
salt
fresh ground black pepper
4 -5 basil leaves, chopped
8 ounces mostaccioli pasta, cooked and drained

  • In a large nonstick skillet, warm oil over medium heat; add in bell pepper, onion, mushrooms, zucchini, and garlic.

fresh pasta, enough for 4
2 medium portabella mushrooms, in 1/4 inch thick slices
2 cups cremini mushrooms, capped and quartered (button mushroom works too, go wild with your choice :-)
1/2 cup of packed fresh basil leaf
2 cloves garlic, peeled
extra virgin olive oil (use the good quality one you've been saving)
1/2 cup sherry wine or 1/2 cup dry white wine
1 -2 teaspoon soy sauce
shredded parmesan cheese
salt & freshly ground black pepper, to taste

Steps:

  • For sauce, heat heavy skillet.
  • Saute garlic cloves in 1-2 tablespoons of olive oil until coated and beginning to brown (about 1 minute).
  • Add mushrooms and sautee until juices begin to emerge.
  • Add wine or sherry (more or less depending on how juicy you want it to be) and soy sauce.
  • Coat mushrooms and cook for another minute or so.
  • Add basil and cook until leaves are slightly wilted.
  • Remove garlic cloves.
  • Add salt and pepper to taste.
  • Toss cooked noodles with a little bit of olive oil (the amount depends on how juicy your mushroom mix is).
  • Transfer to plates and top with mushrooms and grated parmesan.

2 tablespoons olive oil
8 garlic cloves, minced
2 tablespoons basil
1 tablespoon oregano
8 ounces sliced mushrooms
1 yellow pepper, sliced into matchsticks
1 pint grape tomatoes, sliced in halves or 1 pint cherry tomatoes, cut into quarters
1 (14 ounce) can Italian tomatoes (optional)
5 ounces parmesan cheese, freshly grated

Steps:

  • Cook pasta to al dente.
  • Warm olive oil slowly.
  • Add garlic, basil, oregano; heat gently for 10 minutes to allow flavours to mingle.
  • Saute mushrooms, pepper, and tomatoes in the oil/herb mixture.
  • Combine pasta and vegetable mix.
  • Stir in freshly grated Parmesan.

Quick, easy, tasty, perfect after a long day of work (whatever you do). Cooking pasta in this way is someone elses idea and I can't remember who's...Please tell me...someone! :( Test the pasta occasionally and drain it when it's at your preferd "hardness" or "softness", I refuse to eat anything that is not al-dente, but in spain they serve it all mushy (ick!).

pasta (Penne Rigate or pasta bows for 2 people)
1 large onion, chopped thinly
2 green peppers, chopped thinly
1 small red pepper, chopped thinly
2 tablespoons olive oil (Not virgin!)
20 g butter
fresh basil, chopped (just a bit)
grated parmesan cheese (, to serve)
1 tablespoon pine nuts

Steps:

  • Boil water in a large pan, add pasta, return to boil and turn off the heat, leave for 15 minutes (it really does work!).
  • While you are awaiting for the pasta heat a wok or a frying pan and add the oil and.
  • Fry onions'till the're"limp", add the butter.
  • Stir-fry until the onions have gone golden.
  • Add green peppers and stir-fry for 2 minutes.
  • Add red peppers and fry for another 2 minutes (I like crispy peppers, if you like yours limp the use more time and add the peppers earlier in the cooking).
  • Add basil and pine nuts.
  • Remove from heat.
  • Test the pasta to see if its done, if its not then boil the water up again and it will be.
  • Strain pasta and add to the vegetables, mix and serve.
  • Sprinkle with parmesan cheese.
  • Use parmesano Reggiano for top quality taste.
