PASSOVER SPINACH FRITATTA

An easy Passover lunch. Serve with a salad on the side.

2 (10 ounce) packages frozen chopped spinach
3 matzo crackers
4 eggs, beaten
salt and pepper to taste
1 pinch ground nutmeg
3 tablespoons butter
2 tablespoons grated Parmesan cheese

Steps:

  • Heat the spinach in a saucepan with 1/2 cup of water, until completely thawed. Strain the spinach, reserving half the amount of liquid.
  • Crumble the matzo into a medium-size mixing bowl and pour the spinach and the remaining liquid over them. Mix thoroughly until the matzo are softened. Add the Parmesan, eggs, salt, nutmeg and pepper.
  • Heat the margarine in a 12 inch skillet and add the spinach mixture. Cook on medium heat, uncovered for 5 minutes on each side. Sprinkle with grated Parmesan and serve immediately.

2 tablespoons olive oil
½ cup red bell pepper, cut into thin matchsticks
½ cup chopped onion
3 eggs
½ cup milk
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 cup chopped cooked ham
½ cup shredded mozzarella cheese
½ cup crumbled feta cheese
½ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Heat olive oil in a skillet over medium heat. Cook and stir red pepper and onion in hot oil until tender, about 5 minutes.
  • Beat eggs and milk together in a bowl until smooth; add spinach, ham, mozzarella cheese, feta cheese, salt, and black pepper. Gently stir to mix evenly; pour into the skillet.
  • Place a cover on the skillet and cook until the egg mixture is completely set in the center, 7 to 10 minutes. Cut into wedges to serve.

1 lb spinach leaves, cleaned and chopped
1 tablespoon olive oil
1 medium onion, chopped (about 1 cup)
1 large garlic clove, minced
9 large eggs
2 tablespoons milk
1/3 cup grated parmesan cheese
2 tablespoons chopped sun-dried tomatoes (I use the ones packed in oil)
salt & freshly ground black pepper
3 ounces goat cheese

Steps:

  • Preheat oven to 400°F.
  • Cook spinach in 1/4 cup of water in a covered saucepan until just wilted, a couple minutes.
  • Drain water and set aside.
  • In a mixing bowl, whisk together eggs, milk, and Parmesan cheese.
  • Add in chopped sun-dried tomatoes, and sprinkle with salt and pepper. Set aside.
  • Sauté onions in olive oil in an oven-proof, stick-free skillet, until translucent, about 2 minutes on medium high heat.
  • Add garlic and sauté a minute further. Add cooked spinach and mix in with onions and garlic.
  • Spread out spinach mixture evenly on bottom of skillet.
  • Pour egg mixture over spinach mixture.
  • Use a spatula to lift up the spinach mixture along the sides of the pan to let egg mixture flow underneath.
  • Sprinkle bits of goat cheese over the top of the frittata mixture.
  • When the mixture is about half set, put the whole pan in the oven.
  • Bake for 13-15 minutes, until frittata is puffy and golden.
  • Remove from oven with oven mitts and let cool for several minutes.
  • Although the pan may be out of the oven for a few minutes, the handle is still very hot.
  • To keep from accidentally picking it up by the handle while hot, take a piece of ice and melt it against the pan's handle to cool it down.
  • Cut into quarters to serve.

Although I use 2% skim cheese, this could easily be adapted to the Weight Watchers Core program by switching to fat-free cheese. I like to make this on the weekend, then wrap slices individually. It will keep for a week in the fridge, and makes breakfast much easier on those crazy hurried mornings.

1/2 cup egg substitute
1 cup fresh spinach, chopped
4 ounces lean ham, cubed
1 cup 2% mozzarella cheese
1 ounce roasted red pepper
2 tablespoons parmesan cheese

Steps:

  • Preheat oven to 350. Spray an 8-inch pie dish with cooking spray.
  • In a large bowl, beat eggs and egg substitute. Stir in spinach, ham, cheese, and roasted pepper.
  • Pour into pie dish and bake for 20 minutes.
  • Sprinkle parmesan cheese on top and bake until eggs are set, 10-20 minutes. Eggs are done when knife inserted in middle comes out clean.
  • Allow to rest 10 minutes. Cut into 6 wedges.

2 (10 ounce) packages frozen chopped spinach
3 matzoh crackers
8 ounces button mushrooms, sliced thin
4 eggs, beaten
4 tablespoons grated onions
1/3 cup hot water
salt, to taste
fresh coarse ground black pepper, to taste
1 pinch ground nutmeg
4 tablespoons unsalted margarine
3 tablespoons fresh parmesan cheese, grated
1 -2 tablespoon parmesan cheese, grated garnish

Steps:

  • Heat the spinach in a saucepan with 1/2 cup water, until completely thawed.
  • Then drain and wring spinach dry using a clean kitchen towel.
  • Sauté the onions & mushrooms in 2 Tablespoons of margarine until softened, about 5-8 minutes, stirring occasionally.
  • Crumble matzoh crackers into a medium size bowl, pour the mushroom mixture, spinach and half the amount of water.
  • Mix thoroughly until the matzoh crackers are softened, if needed add a little more of the remaining hot water.
  • Add the Parmesan, eggs, salt nutmeg and pepper.
  • Heat 2 Tablespoons of the margarine in a 12 inch skillet and add the spinach mixture.
  • Cook on medium heat, uncovered 4 minutes on each side.
  • Sprinkle with grated Parmesan.
  • Serve immediately.
  • Enjoy!

2 onions, chopped
1 stalk celery, chopped
1 red pepper, chopped
3 carrots, grated
1 cup mushroom, chopped
3 egg whites
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/2 teaspoon dried basil
1/4 cup matzo meal

Steps:

  • Preheat oven to 350 degrees F.
  • Cook spinach in microwave on HIGH for 4 minutes -Don't add any water.
  • Cool and squeeze dry.
  • Sauté in sprayed pan, onion, celery, red pepper, and carrots for 5 minutes until golden.
  • Add mushrooms and cook 5 minutes longer (or cook vegetables uncovered in the microwave for 6 to 8 minutes on HIGH).
  • Chop spinach coarsely. Combine with remaining ingredients and mix well.
  • Pour into a sprayed 7" x 11" Pyrex casserole.
  • Bake uncovered at 350F for 45 to 50 minutes, until firm. Cut into squares to serve.

Made this for breakfast today and it was SO filling and wonderful. The eggs are very creamy and flavorful when cooked in this way. This is a phase one South Beach Diet recipe, but you would never guess it! You can also make your own salsa.

1 tablespoon extra virgin olive oil
1 small onion, sliced (I diced mine)
2 -4 garlic cloves
1 (10 ounce) package frozen spinach, thawed and well-drained
2 large eggs
3 egg whites
1/3 cup fat-free evaporated milk (sold in a can)
1/2 cup shredded light cheese (I used light Jarlsberg, can use any reduced-fat cheese)
salsa (for serving)

Steps:

  • Preheat oven to 350 degrees F.
  • Heat oil in a 10" nonstick skillet over med heat.
  • Add onion and garlic and cook until tender, about 3 minutes.
  • Stir in spinach.
  • Reduce heat to low.
  • Beat eggs and milk until frothy, and pour egg mixture over spinach in skillet.
  • Cook for 5-7 minutes, till egg mixture is cooked on bottom and eggs on top are almost set.
  • Sprinkle with cheese.
  • Bake in oven till eggs are set and cheese has melted, 5-10 minutes.
  • Serve with salsa of your choice.

Steps:

  • Pre-heat oven to 400 F.
  • Chop Garlic and 1 Tomato.
  • Spray skillet with Pam
  • Cook Garlic and Tomato.
  • Add Spinach, cook until wilted.
  • In another Bowl, combine Eggs + Whites + Milk + Seasonings.
  • Add to Spinach Tomato Mixture.
  • Stir so everything looks distributed.
  • Slice Second Tomato into 4 circles and place on top.
  • Bake at 400 F for 15 minutes, then Broil for about 3-5.
  • Let cool and enjoy!
