CREAMED SPINACH WITH BACON
Love spinach? So do we! This easy side dish is made with BACON and a creamy béchamel sauce. This makes a great side with roast chicken, seared fish, or a holiday dinner.

Steps:
- Blanch and chop the spinach: Blanch the spinach in a pot of boiling water until the spinach is wilted, about 30 seconds to 2 minutes. Drain and rinse in cold water to stop the spinach from cooking further. Squeeze the spinach to remove all the moisture possible. Chop the spinach and set aside.
- Sauté the bacon, onions, garlic: Heat a large skillet on medium high. Add the chopped bacon and sauté until the bacon begins to render some of its fat. Add the chopped onion and garlic. Sauté until onions are translucent.
- Make the béchamel sauce: Melt the butter in a small saucepan on medium/low heat until it just starts to bubble. Add the flour and cook, stirring until smooth, about 2 minutes. Slowly add the milk, whisking continuously, cooking until thick.
- Finish the dish and serve: Combine spinach, bacon and onion mixture, and béchamel sauce into one pan. Add nutmeg, salt, and pepper to taste. Bring to a simmer, remove from heat and serve.

CREAMED SPINACH WITH PEARL ONIONS AND BACON

Steps:
- Heat a large pot over high heat until hot. Cook spinach (with water still clinging to leaves) in pot, covered, until beginning to wilt, about 1 minute. Stir, and cook, covered, 1 minute more. Uncover; stir spinach until completely wilted.
- Transfer to a colander; rinse under cold water. Squeeze spinach dry in a clean kitchen towel. Finely chop; set aside.
- Bring a medium saucepan of water to a boil. Add onions; cook until skins soften, about 3 minutes. Remove onions with a slotted spoon (reserve water in pot); rinse under cold water. Trim root ends, and remove skins. Halve onions if large.
- Return onions to cooking water. Cook until tender, about 10 minutes. Drain, and rinse under cold water.
- Melt 4 tablespoons butter in a medium saucepan over medium heat. Add flour, and whisk until smooth. Whisking constantly, pour in milk in a slow, steady stream. Boil, whisking constantly, 1 minute. Remove from heat.
- Melt remaining tablespoon butter in a large saucepan over medium heat. Add bacon; cook, stirring occasionally, until well browned, about 6 minutes. Stir in onions and spinach. Stir in cream and reserved milk mixture. Add 1 teaspoon salt, 1/4 teaspoon pepper, and nutmeg. Cook, stirring occasionally, until heated through and thickened, about 10 minutes (adjust heat if necessary; do not let boil). Stir in lemon juice. Season with salt and pepper, if desired.
SAUTEED SPINACH WITH BACON AND ONIONS

- In a large saute pan, melt the bacon grease over medium heat. Add the onion and garlic and stir to cook until the onions are very soft, about 5 minutes. Add the vinegar, crushed red pepper flakes, salt and pepper and stir; add the spinach and toss it around, cooking until it's just wilted, 1 to 2 minutes. Serve immediately so the spinach is wilted but not soggy.
CREAMED SPINACH WITH BACON

- Cook 3 slices chopped bacon in a saucepan until crisp. Remove; discard all but 2 tablespoons drippings. Add 1 chopped small onion and 1 minced garlic clove,; cook 3 minutes. Sprinkle in 1 tablespoon flour; cook, stirring, 1 minute. Whisk in 1 1/2 cups milk,; season with salt and nutmeg,. Cook until thickened, 4 minutes. Stir in 1/2 cup shredded gruyere,, 1 pound thawed frozen chopped spinach, (squeezed dry) and the bacon. Cook 2 minutes.

- Heat butter in a large skillet over medium heat. Cook and stir onion, bacon, and garlic until bacon is crisp, 5 to 7 minutes.
- Whisk flour, salt, and black pepper into onion mixture until blended and the flour and drippings form a paste, 1 to 2 minutes.
- Slowly whisk milk into onion mixture. Bring to a boil, continuously whisking, until sauce is thick and creamy, 3 to 5 minutes.
- Stir spinach and half-and-half into sauce; cook until spinach is heated through, 4 to 6 minutes.

CREAMED SPINACH AND BACON BAKE
This recipe is guaranteed to put a smile on any spinach-lover's face and will compliment any meal, since this is a creamed spinach recipe it is not a dish that bakes out totally firm. To remove the bitterness from the frozen spinach I like to microwave it in a little water for 10 minutes or until boiling, rinse until cold water then squeeze dry, if you don't mind the strong taste then you can omit this step. Prep time does not include cooking the bacon.

- Set oven to 350 degrees.
- Butter an 9-inch baking dish (or use an 8 x 8-inch baking dish).
- In a medium saucepan melt 5 tablespoons butter over medium heat; add in onions and saute for about 4 minutes (or until soft).
- Add in garlic, mushrooms, cooked bacon, cayenne pepper and seasoned salt, saute for 1 minute.
- Add in flour and stir with a wooden spoon and stir constantly for 2 minutes.
- Slowly add in the cream; bring to a boil over medium heat stirring constantly until thickened and smooth (this should take about 3-4 minutes).
- Reduce the heat to low and add in the spinach and stir until combined and mixed into the cream sauce.
- Mix in the cheddar cheese and 1/3 cup grated Parmesan cheese; stir until the cheese has melted.
- Season with black pepper to taste.
- Transfer to prepared baking dish.
- Sprinkle with 1/3 (or to taste) Parmesan cheese.
- Bake for about 25 minutes or until browned on top and bubbly.
- Let sit for 20 minutes before spooning out of the baking dish, this only gets better the longer you leave it sit, but you won't be able to keep your spoon out of the dish lol!.

- Render the bacon in a Dutch oven over moderately low heat until crisp. Add the onion and saute until softened. Add the spinach and cook, turning and stirring, until just wilted.
